Reviewing Meditation Videos as Sleep Aids

While some people have suffered from insomnia over the decades, this review is being written during the current pandemic situation. And during an increase in sleep problems. Including my own. I have found that meditation videos and a sleep timer on my television have been very helpful for me. 

Historically, I am generally exhausted. I quickly fall asleep each evening. I would occasionally have some insomnia caused by particularly concerning things happening at work or because I am a light sleeper and I have noisy neighbors. Sleep hygiene is something I'm familiar with but had not been something I've had to be particularly focused on for myself - until now.


Sleep Hygiene


Sleep Hygiene is another way of saying good sleep habits.  It is often the topic of discussion in my work. No matter the age, most humans benefit from getting sleep that is long enough and deep enough.

The CDC gives tips for better sleep here. Not all of those tips work well for everyone. But I've included the list because it is a great place to start thinking about what might work for you. For example, I'm such a light/anxious sleeper that for decades I needed the television to be on as a background noise to cover any outside noises that would wake me and prevent me from falling back to sleep. As a rule, it is recommended to remove electronic devices from the bedroom. Including the television. But in my case a television has been helpful. Not every sleep hygiene tip will work for every person. But that list includes great things to consider.


Major Insomnia


Wow. I've been hit with major insomnia during this stay-at-home time period. I was trying a variety of things with very limited success. Even my trusty television as white noise was suddenly a distraction and it was keeping me awake.

Stretching, doing yoga, and meditation before bed helped. But not enough. 

Then I discovered the sleep timer and meditation videos on my smart tv.

I find a relaxing video on YouTube and start it. These videos are created on loops so the same thing runs for many hours at a time. I then set the television sleep timer for 90 - 120 minutes (which is enough time for the neighbors to settle down). The video lulls me to sleep and the tv eventually turns off. I remain asleep and have noticed that I'm getting a much more restful sleep. I'm waking up refreshed in the mornings.


Types of Relaxing Videos for Sleep



There are many types of meditation and relaxation videos to choose from. Far too many to list here. I tend toward the thunderstorm or rain/wind chimes sounds.  Additional themes are:
  • beaches/waves
  • birds
  • forests
  • meditation chants
  • talk/guided meditation
  • Native American flute music
  • what I generally refer to as "spa music"
  • a crackling fire
  • and much more

Some of the videos have one photograph as the visual. Others have a black/blank screen (which would help if light in the room keeps you awake). And still others have scenes with some movement such as raindrops falling, lightning flashing, or scenes that have some very minimal movement added digitally. I like the videos that show the rain drops.

As examples, I am including my two favorite relaxation videos. You may find that these are not helpful to you. That's okay. There are plenty of others to choose from.

I am not a tech-nerd. Far from it. I usually do not replace any of my electronics until they are so out-of-date that they no longer work properly. But I purchased a smart tv and LOVED it so much that I bought a second one for the bedroom. The two televisions are different brands, therefore they have different apps. 55 Ways to Show Someone You Love Them
If anything 2020 has taught us, it's that life is precious. During these crazy pandemic-times, today's review features big and small ways we can show our love to each other.

In the end, it's only love that matters. Our family lost someone yesterday (not from the pandemic), and we've been reflecting and remembering that love is the most valuable asset we take with us.

Let's not wait until it's too late to show those we love how we feel; let's start today. Here's a quick list of ways we can demonstrate we care:
  1.  Call or video your I love you message and say it
  2.  Physically mail a letter or a card
  3.  Make them dinner and clean up the mess
  4.  Clean the house for them
  5.  Give them me-time; watch the kids
  6.  Bring them a coffee, or two
  7.  Play board games and laugh
  8.  Email articles and photos to let them know you're thinking of them
  9.  Write them a poem
  10.  Dedicate a song to them via the radio
  11.  Sing them a song; if you can't sing, even better!
  12.  Create a video that lists all the reasons you love them
  13.  Thank them for all they've done for you
  14.  Accept or give forgiveness
  15.  Say "I love you" as often as you can
  16.  Bring them breakfast in bed
  17.  Send flowers or a plant
  18.  Drop off treats, gifts, personal drawings or groceries when social distancing
  19.  Have cozy gifts delivered; throw blankets, pillows
  20.  Snail mail a card every day, with a beautiful quote, for a month or a year
  21.  Let them talk; be a listener
  22.  Don't offer your opinions, just be there
  23.  Don't try to solve unsolvable problems, just be there
  24.  Accept each other's differences and just love each other for who you are
  25.  Use please and thank you with your family members
  26.  Speak with a kind voice to your loved ones
  27.  Give sarcasm a break from time to time
  28.  Remember they were once a little child, see them that way

The above suggestions are fairly obvious to most of us; however, sometimes we forget it's how we make each other feel that's remembered.

Arbonne's Lip Duos - The Best of Both Worlds for Lipstick Lovers

Before I review Arbonne's Lip Duos I should start off by saying that I generally don't wear much make-up.  When I do get the urge to 'doll myself up' I tend to just stick to CC cream, lipstick and sometimes a lick of mascara so it does seem strange that I'm reviewing Lip Duos!

When it comes to lipstick though I must admit as soon as I tried Arbonne's Lip Duos I was hooked.   This weekend Arbonne has launched 17 new products including 2 new Lip Duos.   This has made the colour selection a lot more rounded in my opinion as it was lacking in the pinks before.


Why are Lip Duos Better Than Lipsticks?


I think Lip Duos are way better than lipsticks because they are (as the name suggests) double-ended.   One end is a matte lipstick while the other end is a gloss, in my mind as someone who doesn't wear cosmetics very often this gives a lot more choice.

I usually prefer a matte look which these provide, my daughter however prefers a gloss look which these also provide.   You can also use the gloss end over the top of the matte for a really finished, deep look. 

I always had quite full lips when I was younger, but as I age I have noticed that they have become thinner and these lip duos are ideal if you have thin lips.

Lip Duo's Minimize the Look of Thin Lips


Choose from the selection of colours available in the Lip Duos (or get all of them so you have variety).   Apply the matte lipstick to your lips and then take the gloss and simply apply it on the Cupid's bow of your lips and down into a point in the middle of your lower lip, similar to the shape of a love heart.

As this is adding gloss to what is the fullest part of your lips it 'fools the brain' of anyone looking at your lips into thinking they are fuller.   It's a tip I was taught as a teenager when I didn't need to use it, but I'm grateful that I remembered it and that the lip duos make it easy to apply.

Using lipstick when you're not used to it sometimes doesn't give an even line (in my case anyway), back in the day I always used a lip liner, but that was when I wore make-up all the time.   I have never mastered applying lipstick with a brush so that idea was out.

When I got my first lip duos (2 years ago) I discovered that they come with these cool applicators that are simply a breeze to apply - I really don't think you can mess these up!

The new additions to the collection look like a lot of fun, but if you're not a pink girl then that's okay there are plenty of others to choose from.   My favourite (at the moment, I'm waiting to try the two new ones) is Jasmine.   Which colour do you like best?

The Rebel Bride Book Review

Daughters of the Mayflower - Book 10 in the Series

When I started this historical fiction series, I knew it included a book that took place during the American Civil War.  After all, it would be very difficult to write a series that includes major historical events and omit the civil war.  Nevertheless, this was the one book I did not look forward to reading.  I put it off for several weeks after I finished reading the 9th book in the series.  Only because it has been such a wonderful and well-written series, did I decide to go ahead and chance it.

I get so tired of reading books filled with opinions or propaganda about the American Civil War.  Frankly, it is one subject that will cause me to stop in the middle a book, put it down, and never finish reading if the author deems it necessary to spout vitriol. We all know wars are fought for many reasons and that evil criminal acts are overlooked in wartime.  Often the real reason one takes up arms against their brother is lost long before the first bloody battle.  Justification for invasion and brutality becomes the mantra of the day that reverberates for many generations that follow.

It turns out, I had nothing to fear about reading The Rebel Bride.  The author did not denigrate the soldiers. She simply set up a wartime situation where individuals are challenged to be honorable instead of depraved.

Ironically, this book turned out to be one of my favorites in the series.  I would like to believe that even in the midst of war, basic human decency and kindness still exist.

1863 Tennessee - American Civil War - April 1961 - April 1965


 Rebel Bride (Daughters of the Mayflower)The war had already taken so much from Pearl MacFarlane.  Her 3 oldest brothers are casualties of war, lost in the battles of Shiloh, Fishing Creek, and Chickamauga. Her father is mentally broken, with only occasional moments of clarity.  Her mother, previously deceased.  Her youngest brother, and only remaining sibling, drifts away to places unknown, presumably hunting, as soon as he rises each morning.  The work of the farm is left almost completely to Pearl and there is only so much she can do. 

When her cousin, a sergeant for the Confederacy, arrives with wounded prisoners of war, Pearl is not at all prepared to be conscripted to duty.  She doesn't have food, beds, or even training as a nurse, yet she is required to care for these men.  The physical and emotional toll on Pearl is tremendous.  

Because her cousin has a soft spot for Pearl, he sends a man to help her tend the prisoners.  Fortunately, Portius does know how to treat and bandage the wounds and amputations.  He also has the physical strength to help the wounded soldiers move when necessary.

At first, it is difficult for Pearl to aid the very men who could have killed her brothers.  At the very least, they represent the army responsible for their deaths.  However, as she nurses them, learns their names, their birthplaces, and hears stories about their lives, she sees the individuals as living human beings who need help.  In turn, there are a few who try to help her, if in no other way, by being respectful of her father.  Unfortunately, as with any group, there are some who would prey on the isolation and her vulnerability. 

Not only is Pearl faced with providing food, shelter and medical attention to the enemy, she is further challenged by her romantic feelings for one of the prisoners.  In the midst of the American Civil War, a Confederate and a Yankee do not make an ideal couple.


More Factual Background


Daughters of the Mayflower book series
The story of The Rebel Bride takes place in Tennessee.  Every county of Tennessee endured battles.  Homes and farmland were destroyed along the way, many were intentionally destroyed as threatened in the book.  

During the Civil War, it is a fact that homeowners were required to take in wounded soldiers from both sides depending on which army occupied their area at any given time.  One renowned home, turned hospital, still stands and is located not very far from my own home.

Few people realize that Norwegian immigrants fought in the Civil War for the Union.  Shannon McNear is a wounded Norwegian soldier in the group of prisoners tended by Pearl.

The only real fictional liberty that McNear might have carried too far in this book, is the marriage between a black woman and a white man (one of Pearl's older brothers).  Even McNear admits that it is highly unlikely that could have happened.

Surprisingly, I highly recommend this book.

Lost in Transplantation - Book Review

One of the deepest human yearnings is to know that our lives have meaning and purpose.  There is this need to make a real difference.  Eldonna Edwards' memoir, Lost in Transplantation, is ultimately a book about how you find your way to that place.

For Edwards, the gift was that of life.  In choosing to be a living kidney donor, she literally gave of herself to ensure another individual, and a stranger at that, could experience the very life of life.  This story, though, is not written to spotlight Eldonna.  The real underlying message is one that will, perhaps in more subtle ways, inspire each of us to commit an act of uncommon goodness, grace, generosity, or no-strings-attached love.

The opportunity, for Edwards, arrived unexpectedly.  As a 48-year-old single mom enrolled in community college courses, Eldonna learned that one of her young classmates was suffering from a kidney condition that would prematurely end her life.  Though she did not know this young woman very well, Edwards quickly realized she wanted to donate a kidney to her.  To Eldonna's great disappointment, her offer was rejected.  Sometimes an individual in great need is not ready to receive—not even a gift being freely given with pure motives.

This could very easily have been the end of it, but a seed had been planted.  Edwards found herself on a quest to learn everything she could about the need for kidney donors and the process of donor selection.  The more she discovered, the stronger the urge grew to help someone on the kidney transplant list.  It turns out, though, that there would be major hurdles standing in the way.

To read Lost in Transplantation, is to accompany Eldonna on her winding pathway to giving what she most wanted to give.  It is also to be there when she receives what she most needed to receive.  You will find yourself becoming completely invested in the author and her mission because of Eldonna's authenticity, her humility, her beautiful humanity, and the unassuming way she touches hearts.

This book held great meaning for me.  When my mother was diagnosed with renal cancer, which required the removal of her malignant kidney, I began to think about the possibility of needing to donate a kidney to her.  Mom had various conditions that made the reliance on one kidney rather precarious and quite risky.  As I sat in the hospital by her bedside following nephrectomy surgery, I learned that her sole remaining kidney was not picking up the extra duty that her second kidney had previously performed.  I was ready to offer my mother one of my kidneys should it become necessary.

To offer a close family member a kidney is one thing.  To offer a total stranger a kidney is quite another.  Lost in Transplantation will move you in ways you weren't expecting.  Perhaps this will be the story that leads you to an act of kindness or mercy that will completely transform a life.  Not everyone can donate a kidney, but each of us can donate something, big or small, that will make the kind of difference that brings meaning and purpose into life.

Easter Sunday is Over, But There are 50 More Days of Easter to Come! A Holiday Review!

Easter 2020, will probably be remembered by many as the Easter that wasn't.  Let me explain, Easter still happened, but not in the way that many of us Born Christians would recognize.  So we have had to find some creative ways to celebrate the Greatest Holy Day of the Christian Calendar.

To that end, my husband and I have been searching for ways in order to make Easter come alive again!  We don't have any problem with following services on You Tube, or Facebook, but Easter calls us (personally) to dig a little deeper into our faith.

I am a Christian and not at all ashamed or embarrassed to admit it!  I'm sure I'm not alone.  The thing that always surprises me is that after Easter is over, many Christians think Easter is a done deal.  One day, Easter Sunday and then everything goes back to "normal".  (Well 2020's normal will be different than most.)

Many people don't understand that Easter Sunday is just the beginning of the Easter season.  It does NOT END until 50 days later at the Feast of the Pentacost!

That gives Christians a whole 50 days to deepen their faith and strengthen their belief system.

The trouble is that you can only read the scriptures for so long and then hopefully have a good discussion on what was read.  Our God speaks to each of us through these scriptures and each of us will take away lessons that are meant just for us.  Each will take away a lesson that speaks to them personally, and it may not be the same message that you get!  The Bible is alive and speaks to each of us in a way that we will understand in our hearts.

Being in house arrest has given us some time to look for other ways to celebrate our faith and grow at the same time.

We are so lucky that we can search out lots of different ways to celebrate our Christian Holidays.  You Tube, Facebook and the Internet offer us unlimited ways to enhance our faith journey.  Alan and I were blessed to spend 3 months in the Holy Land in 2018.  We were there from the middle of January to the Middle of April, which just happened to be Easter of that year.  What an experience that was and it still resounds with us today.  If you would like to see where we lived and worked during that time here's a You Tube video about the region and why it was so important to Christians all over the world.  https://youtu.be/Jcfkn9zivis

After having spent that time in Magdala, we came back home really driven to look into our faith, deeper, so that we are well informed Christians.

Now, during this time in our lives, that has us more upside down, than right side up, we are looking again for ways in which to make our faith "come alive".  To that end, both of us have been trying to figure out who the person of Jesus was and who His followers were too.  We have had many lively discussions on this aspect of our faith and really haven't come to any conclusions.  What we see in the Scriptures can look pretty cold and too Godly or shall we say Jesus sometimes come off as unreachable.  But that is not the Jesus we want to believe in, we want a Jesus that is just like us, happy, sad, funny, serious and a whole lot more....He is the Jesus we could relate to!

Thank goodness that I found a series that really delves into the "humanity" of Christ!  This series has 8 episodes and each one of them is really so well done.  The series holds true to the Biblical Christ, but also opens up the Humanity of him who is known as the Messiah.

I would like to share with you a link to get to this series and I'm sure that you will be moved just as I was.  This series is not available on DVD or any other media other than at the APP store.  I have a link for you right here.  It is called The Chosen.  This is an 8 part series each one is about an hour long and focuses on the beginning of Jesus' life and ministry.  While following Biblical texts, there is a lot of interpretation allowed in this series.

Not only are we treated to a "human" Jesus, we are also treated to the characters who become his Apostles and Disciples.  His mother and other relatives also play a role in this series.  I found it to be very interesting and profoundly moving.

Make Your Own Face Mask Review

Protect Yourself With A No-sew Mask

Let's review how to make your own face mask for those times that you have to leave home on an essential trip. Most of us are trying our best to stay safe and stay in place but there are times we need to leave for a few reasons. We don't want to use the types of protective masks that our first responders and health professionals need (no need to diminish their supplies!). We can make our own without needing a sewing machine to do it.

I made my own using a bandana that I had in the house. You can use any fabric that is cut into the proper size for your mask but if you have a bandana  it is even easier. Mine was left over from the days when it was cool to wear one in your hair. We wore them to cover our hair or folded up more like a headband but I digress. If you have one that you wear or perhaps you have used as a cute kerchief for your dog...it will do.

The thing I liked about making my own mask was that I could easily wash it after using it and have it ready for the next time I needed to go out. In my case I had what I needed in the house. A bandana and two rubber bands. That is it, that is all you need to make one for yourself.

As you can see from the video it isn't difficult to make any of the versions that he shows. I chose the one using the bandana because I knew I had one and from what I had read the cotton fabric seemed to offer the most protection because it is woven tighter. 

So, be creative, choose something that fits your personality. The main thing is to keep your nose and mouth covered if you have to be out in public for any length of time at all. I use mine when I know I will be in a situation where social distancing is difficult like the grocery store. 

When I return from any trip where I have worn my mask, I take it off when I get home toss it in the washing machine and then wash my hands for twenty seconds just in case there was anything on the outside of the mask. Once it has been laundered, I make it again and put it in a plastic bag to wait for the next time I venture out.

Grocery Delivery Services Reviewed

If there was ever a time for grocery delivery services, the time is now! I have been trying a few of the grocery delivery apps and services with varying degrees of success. My experience the last few weeks have confirmed my appreciation of the independent grocery store and in my urban area it is these stores which have come through.

But first the major players for grocery delivery service are reviewed.

Shipt Grocery Delivery


Last Fall I wrote a review of Shipt which - at that time- was offering a two hour window from the time of ordering to the time of delivery. Shipt delivered every time without fail. At that time Shipt was an annual membership with all deliveries over $35 for free.

As life has drastically changed in the last few months, Shipt is like every other delivery service or app in my area as the demand exceeds the supply of shoppers. Shipt offers deliveries to Meijers, Petco and Target in my area; however, each area is different.

Instacart Grocery Delivery


I have used Instacart and this is a slightly different business model than Shipt. Instacart has a much larger selection of big box stores and smaller grocery stores. The delivery charges vary per store and some stores are adding a percentage price increase for the groceries. Make sure to read the "fine print' as the charges can differ per store.

How To Navigate The Grocery Delivery Services And Apps

Persistence. Persistence. Persistence.

A few Hints:
1. Load your cart before looking for the elusive delivery slot.
2. Slots can appear at any time of the day or night, but late night, middle of the night may yield better results to obtain a delivery slot.
3. Stalk the app. Once the list is loaded, stalk the app whenever you think of it or your phone is in your hand. It can become a part time job.
4. Be flexible on the delivery. If a slot opens up it may just be that one slot.
5. Grab the slot when it opens up, don't hesitate.
6. Be prepared that the promised time may or may not be the final delivery time with the ordered items.
7. Be flexible and let the shopper substitute at their discretion. Because stock is limited if you choose the option where the shopper texts you and asks you if you'd like a substitution then your phone will be ringing all. the. time.
8. Tip your shopper.
9. Choose curbside delivery if you are comfortable making the essential drive to the store. Most stores have reserved curbside delivery parking spaces for you to drive up, pop the trunk and the car is loaded.
10. Be prepared for 1-9 to not happen and have to start from again!

The Independent Grocery Stores


In my and suburban area it has been the independently owned and family owned grocery stores which have consistently come through with not only delivering, but actually having items in stock (including that oh so elusive toilet paper!)

A few weeks ago when it was clear the shelves of the big box stores and drugstores were being emptied, the independents immediately restricted the number of items a shopper could buy. Thank you!

Stock: Somehow, someway the independents had stock of the paper essentials and have restocked the new normal essentials (paper towel, hand sanitizer and disinfecting wipes are still missing in action.) But if you "order" a multi pack of toilet paper, then you may receive 4 individually wrapped rolls. I appreciate their independent decision to provide for all.

How To Order From Independent Grocery Stores


This has been interesting to navigate. The stores are each working around this new way of grocery shopping and perhaps because they are smaller and independent - the stores can adjust much more quickly and efficiently.

A few of the stores have online ordering on their own website. The orders can be then picked up curbside. One of the nice features of the store I have been using is the ability to change the order once it is placed. Obtaining a time slot does take patience, but once the time slot is open and the list is paid for you can go back and add and delete the order up to the time the groceries are packed.

The pick up time slots are in one hour increments. When you arrive at the store and park in the curbside delivery designated spot you call the number provided.  The trunk is popped and within minutes the groceries are wheeled out to your car.

The employee stops at your window and I hold up the confirmation sheet so they can confirm your identity and the trunk is loaded. Trunk is closed, thumbs up from both parties and off you go.
I provide a tip by placing a note in the trunk with the tip in an envelope.

Another independent store in the neighborhood does not have their own website ordering, but is accomplishing the order and deliveries old school with email and phone calls. An order can be called in by 10 a.m. or emailed for same day pick up or delivery. This is the neighborhood "Cheers" type store and they offer free delivery to all seniors or health compromised or in a high risk category. Each week their order/delivery/pick up system has evolved and I know the neighborhood is grateful for their contributions to keeping us at home.

The Independent Pharmacy

Once upon a time which is now many years ago, the local big box pharmacy has excellent pharmacists and staff. Knowledgeable, dependable, consistent. This has greatly changed in recent years and it has been a hot mess getting prescriptions filled ... correctly. Sigh.

So who has come through in the recent weeks? The independent pharmacy.

The local independent pharmacy is making hand sanitizer for its' customers and provides delivery free of charge. I am so happy the switch was made from the big box pharmacy a few weeks to the independent pharmacy. (They are located next to an independent grocery store and even offered to pick up groceries for my mom on the way over with her prescription delivery- unbelievable!)

I see the big box pharmacy is offering delivery through Instacart, so that is an option for big box customers if a shopper is available.

Every day can be a new adventure lately just trying to obtain groceries, but I am thankful, grateful, and every appreciative as they allow us to #stayathome #michiganstrong

Don't Forget The Local Hardware Store


Our local Ace Hardware store is open and ready for business. Orders can be placed on the phone or on the website and the items are delivered to your car via curbside pickup. Ace had a birthday last year, read all about the history of Ace by Wednesday Elf !

Modified a Banana Loaf Recipe to Make a Pumpkin Loaf


Quarantine is bringing out the creative baker in me. Not really, but I'm trying.

The Boys Ate All The Bananas. The Hunger Games.

I wanted to make a Banana Loaf using my favorite personal recipe. However, the boys ate all the bananas. Guess what? There are no bananas at the grocery store! Really ... bananas? I've seen the flour aisle cleaned out, but missing bananas was a first.

Apple Pie was planned for our Easter Sunday dinner, but guess what? The boys ate all the pie.

So I opened the cupboard to see how to modify my Banana Loaf recipe and found a can of Pumpkin Pie Filling - not expired, thank goodness.

My Revamped Banana Loaf Recipe Turned Into a Yummy Pumpkin Loaf Recipe

I've never made a Pumpkin Loaf, but how hard could it be right? Lol.

After searching online for a Pumpkin Loaf recipe, I decided I didn't like any of them - too complicated.

My Banana Loaf recipe is six freaking ingredients, all in one bowl! Easy peasy. Thus, I began experimenting to modify my favorite recipe to make my first Pumpkin Loaf.

The biggest challenge was determining how much Pumpkin Pie Filling to replace three medium to large bananas in a banana loaf.

After googling around, I determined that one-half plus a heaping tablespoon of a 540ml can of Pumpkin Pie Filling should work. Actually, I had no idea - it was a cross-your-fingers-and-toes guess.

My Pumpkin Loaf Recipe - Modified:

. 1/2 CAN plus 1 heaping Tablespoon of Pumpkin Pie Filling (Full can be 540ml, which is 2.28 Cups - so use about 1 and 1/8 Cups of Pumpkin Pie Filling)

Here's the Pumpkin Pie Filling
I used - Any kind should do

. 1 and 1/2 Cups of Flour

. 1 Cup of White Sugar

. 1 Teaspoon of Baking Soda

. 3 Heaping Tablespoons of Softened Butter (not melted)

. 1 Teaspoon of Vanilla Extract

For flavor, in the same bowl, I added:

. 1 Teaspoon of Ground Cinnamon
. 1 Teaspoon of Ground Cloves
. 1/4 Teaspoon of Allspice
. 1/4 Teaspoon of Nutmeg

Mix everything in one bowl. Put it in a regular-sized Loaf Pan. Bake in the oven at 325 degrees for 45 to 60 minutes, depending on your oven. Check it after 30 minutes (or before that if your oven is on steroids or something).

Since this was a trial variation of one of my recipes, I didn't add anything like raisins or nuts. However, it turned out beautifully, so I'll add raisins next time. I plan to boil the raisins in water to soften them first.

This plain pumpkin loaf is delicious with butter, cream cheese, jam, or peanut butter.

National Pecan Day Review

National Pecan Day - April 14
 National Pecan Day is a Food Holiday celebrated each year on April 14.  The pecan is a  member of the hickory family and is native to central and southern United States.  Pecans make great snacks eaten on their own, but they also make terrific garnishes to other foods such as desserts, salads or the main meal. 

"Pecan” is an Algonquian word, meaning a nut requiring a stone to crack. 

The pecan tree is the only nut tree native to North America.  These trees grow best in central and southern United States. Georgia, in particular, is known for it's Pecans. 

Here are two of my favorite recipes using pecans – Pecan Pie  and Sugar Coated Pecans. Either recipe ~ or both ~ would be a great way to celebrate National Pecan Day! 


Pecan Pie

Directions for Pie Crust:


Mix 3 cups flour and 1/2 tsp. salt in a bowl. Add 3/4 cup vegetable shortening and 3/4 cup salted butter. Work the butter into the flour using a dough cutter until the mixture resembles tiny pebbles.
    Add one egg, 5 tablespoons cold water and mix until just combined. 

    *This recipe makes enough for two pie crusts.

    Directions for the Filling:

    1. Mix one cup sugar, 3 tablespoons brown sugar, 1/2 teaspoon salt, one cup corn syrup, 1/3 cup melted  butter, 1 teaspoon vanilla and 3 whole eggs (beaten) together. 
    2. Roll out one dough half to fit your pie pan. Pour one cup of chopped pecans in the bottom of the unbaked pie shell. Pour the syrup mixture over the top. Cover the top and crust with foil.
    3. Bake the pie for 30 minutes in a preheated oven at 350 degrees. Remove the foil, and then continue baking for 20 minutes, being careful not to burn the crust or pecans.
    4.  The pie should be set and not jiggly when you remove it from the oven. If it seems to shake a lot, recover with foil and bake longer, or until set. The required baking time varies from 50-75 minutes. 
    5. Cool for several hours or overnight. Serve in thin slivers.

    "These sweet pecans are wonderful snacks for any occasion."

    Ingredients:


      
    • 1 cup white sugar
    • 3/4 teaspoon salt
    • 1/2 teaspoon ground cinnamon


    Directions:


    1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
    2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
    3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
    4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

    In addition to sugar coated pecans, another absolutely delicious pecan sweet treat is pralines.  The best I've ever had are handmade at River Street Sweets candy shop in Savannah, Georgia.
