Lemon Mini Muffin Cakes Recipe Reviewed

A few weeks ago, my mom came to our home with a special treat for my family.  Lemon flavored anything is always my favorite.  These little mini muffin lemon cakes were fabulous!  

They were so good, I seriously could not make myself stop eating them.  I finally stuck them in the microwave so they would be "out of sight, out of mind".  However, the little mouse in me kept sneaking back for crumbs and tiny bites.

I don't have pictures of the making process because I was not with my mother when she baked them, but she did agree to let me share and review her recipe. Based on what she told me, this recipe is so easy, more pictures are not really needed.

They would be perfect for a party snack, dessert, breakfast, or perhaps all three if they can last all day in your home. Here, they only survived for one day before they were all gone. We had to guess at how many mini muffins this recipe made and decided it was approximately 48 mini muffins (2 batches when using the featured mini muffin pan below). If you should make them, please count them BEFORE you start eating or sharing them and return here to tell us how many muffins this recipe makes.


Delicious Lemon Mini Muffin Cakes & Glaze Recipe

    Mini Cakes Ingredients

  • 1 Box of Yellow Cake Mix
  • 3.4 oz box of Instant Lemon Pudding 
  • 4 Eggs
  • 3/4 Cup Vegetable Oil

     

    Glaze Ingredients 

  • 4 Cups sifted Powdered Sugar 
  • 1/3 Cup Lemon Juice   (Real Lemon can be used)
  • 3 Tablespoons Vegetable Oil
  • 3 Tablespoons Water
  • Grated Lemon Zest from 1 lemon, if desired

 

Directions

  1. Preheat the oven to 350
  2.  Spray mini muffin pan with non-stick spray
  3.  In a large bowl, combine all mini cake ingredients and mix (with mixer) for 2 minutes  
  4.  Spoon 1 Tablespoon of mix into each mini muffin cup
  5.  Bake for 12 minutes
  6.  In a medium bowl, mix together all of the glaze ingredients
  7.  Prepare a drip tray by lining a cookie tray with wax paper and place a wire rack on the tray
  8.  Turn the muffins out of the muffin pan
  9.  Dip each muffin in the glaze, covering mini muffin as much as possible
  10.  Place the dipped muffin on the prepared "drip" tray

On October 31, 2007, Evangelina Manu was off to work at a Montreal Roots Canada outlet. She noticed a van outside and two men anxiously standing by. Inside the van, a woman was delivering a baby and, very quickly, a newborn baby girl was born and exposed to the cool October air.

Evangelina sprung into action and headed for the Roots Baby section where she purchased a sleeper, a blanket and a hat to cover the baby.

Ms. Manu reported, "The whole event was really special to me because I had just had my own daughter 11 months prior, so it was very moving to watch someone do the same. It's such an amazing story for everyone involved and was such a great way to start the morning!

She certainly has that right and this baby was lucky to start out life in some wonderful Roots Baby wear! A customer for life? Perhaps. Hopefully, the baby born that day at least knows this heartwarming story.

The Lake of Lost Girls ~ A Book Review

 The Lake of Lost Girls is a novel that will have you sitting on the edge of your seat right up until the very end.  

Stella and Rachel are two podcasters who follow up on cold cases involving murder!

Their followers are also tracking the evidence and speculations run rampant about the "Whodunit?"

Synopsis:

Lindsey has been living in the shadow of what ever happened to her sister so many years ago.  All of a sudden out of the blue, the lake, the police and the crime scene tape is being played out yet again.

Body parts have been found by some young boys fishing in Doll's Eye Lake!  Could it be they are the remains of  Jessica (Jessie)?  Will her disappearance finally be solved?  Can Lindsey finally get out from under the cloud of grief and loss?

This story will have you turning pages and not wanting to put this book down for anything including coffee!

Jessica is a college student who comes home for a visit and her little sister is the last person to see her.  It took ten seconds for her to disappear and never be seen again!  How can anyone live with that kind of torment?  Lindsey was only 6 years old when her sister disappeared.  Twenty four years later body parts are coming to the surface.

Now back in the 1990's more than one college girl went missing, so could this be one of those girls or could it really be Jessie?  

Back in the day when these girls first were listed as missing, the police did not have enough evidence to charge anyone with a crime.  They also didn't have any bodies!  No evidence and only a lot of hearsay about some of the professors  and young men on campus!  

What was going on here?  

Well let me tell you, I had to read the book from start to finish in less than four days!  My husband was busy cooking, because I was busy reading!  He's great though and didn't mind.  He's also a great cook, but I digress!

What I'm trying to tell you is that this book, The Lake of Lost Girls, should be on your MUST READ LIST!

It is available for pre-purchase as it is only coming out on November 5th,  of this year.

If you have family or friends that love true crime novels, this one is for you!

I am a member of NetGalley (www.netgalley.com) and this book was made available to me for my honest review.  The Lake of Lost Girls,  does not leave you disappointed as you will engage with the disturbing and quick downfall of a responsible girl who does not cope well with college life .  The aftermath of her disappearance leaves her younger sister with emotional scars too.  All of this is very understandable and I think in a way relatable.

Bring in a few "shady" characters and you start to see how lost a young person can become when their lives change so quickly.  No one gets out of this mystery without being touched by it in some way!

Reviewing Wellbeing Benefits Of Nature Reserves

 Life can be busy and stressful and I find it is necessary to take time out whenever I can to connect with nature. Being in a nature reserve like the one near us is really grounding and brings a sense of peace and serenity.

 Nature reserves, more than any other place for me are a beautiful experience. The scenery is stunning and peaceful, I love the changing seasons and wildlife and being both an observer and a part of nature. Often quiet and free from traffic noise with only the lovely sounds of bird calls and wind in the trees it is a chance to clear my mind, rejuvinate and relax.

 There are many significant benefits for our mental and physical health by spending time each week, or as often as we can in this environment

 Emotional Wellbeing And Mindfulness 


 As soon as we enter the nature reserve I feel a sense of relaxation, of letting go. We generally do not take any tech with us except for a mobile phone which is for use only in an emergency. Otherwise we do not look at it. Spending this time in a natural setting reduces stress and raises our spirits. I think the combination of exercise, fresh air and relaxing, peaceful scenery all helps to calm and clear the mind and improve mood. 

 In addition the beauty and wonder of being connected to nature that is something greater than ourselves gives us a deep appreciation for life and there is always at least one unexpected surprise or amazement on each nature walk that make us us feel a sense of wonderment being alive and inspired. On our last walk we saw a gorgeous woodpecker, heard the bitterns booming and found a rare orchid which the wardens had fenced off to protect it for example.


Physical Health Benefits Of Walking In A Nature Reserve.


 When we visit the nature reserves we walk for miles, much farther than when we walk around our town for exercise. We try to walk for an hour a day but when we go to a nature reserve we easily walk two or three hours without even thinking about it. 

Walking can be done at a gentle pace or a good hike. You can in our reserve stay on the wide main flat paths which are good for people who like or need a steady safe walk or are using a mobility aid or vehicle. There are also more narrow sloping winding paths or more challenging routes through the reserve. It can easily be a steady low impact exercise to a good workout. 

This is beneficial for us on many levels such as heart health, muscular strength, and improving general fitness levels. The fresh air free from traffic is great for our lungs and bodies and all our senses are stimulated and relaxed at the same time.


 Conservation Of Nature Reserves


 The nature reserve we visit is a result of human intervention. The wetland area used to be where heavy chemical industry was with awful pollution and toxic waste. When the industry was closed down the authorities wanted to use the space for waste disposal.

Only due to the proactive local people and nature conservation groups having a vision of a beautiful natural rescource for nature and people was the area gradually converted over years into a gorgeous nature reserve. Even before it was finished birds and mammals started to move in!

It is now so rich in birds, mammals, trees, wetland and flowers and a wonderful resource for people to enjoy and learn about nature. 

 Many people go there for exercise, photography and to learn about wild flora and fauna. They run childrens outdoor classes so the next generation can learn and hopefully preserve our beautiful wetlands. to hopefully inspire a love of wildlife and the protection and maintenance of these amazing natural resources.

Pursuing Hobbies And Interests


Someone once asked me at the Nature reserve, are you here for the walking, wildlife, flowers or photography?

 It struck me then that people can gain so much in this environment. 

As I took notice some people were clearly serious walkers and took this environment to walk a certain distance or time, gain fitness and enjoy the scenery.

 Others were taking it more sedately, chatting with each other, pointing out beautiful scenes, showing children the wonders of nature. Sitting on the various benches and walking gently with each other taking in the lovely views and having a peaceful lovely time.

Then I noticed the photographers, some with serious pieces of kit, tripods and top of the range camera and zoom lenses to bridge cameras and mobile phones all taking notice of the world around them from the open scenes to a single flower, bird photography to the waves of the river.    

The artists were set up in quiet places sketching out scenery and birds, often to me seeming in deep concentration.

The nature lovers were watching, listening, often with binoculars very quiet, very still, occasionally consulting books or phones for information loving every minute.

Many people of course combine several or many of these interests and we all enjoyed a lovely mug of hot tea or coffee in the centre at some point during our visit there, where we chatted with each other or sat in quiet revery. 
 
I realised that one setting is enjoyed in so many respectful ways and nature gives to each of us in a way that we need it, in ways we individually appreciate it. How beautiful is that!


Fostering A Sense Of Community


 We can visit the nature reserve and be quiet and alone, yet even then be a apart of something special. However if anyone wishes there is also the opportunity to be involved in many levels from casual chatting in the observation centres, joining of walks to full on volunteering.

 Group walks and guided walks to learn about the wildlife are available where you can chat to others who are also interested in nature. More structured classes are held over several weeks or regular walks on certain days where a more regular set of people attend.

You can also do regular volunteering work in the centre or giving talks, raising awareness or helping in the gardens, whatever suits your time available and skillset. In all these ways a common aim of loving and preserving nature providing opportunity for social interaction either casual or committed, can lead to a sense of community and belonging that is sometimes lacking in this modern world and fosters a sense of wellbeing.

 Whether you are alone or in a family or friendship group, young or older we can all benefit from seeing and hearing beautiful wildlife, breathing fresh air, exercise, learning about nature, maybe pursing a hobby like painting or photography  and sharing each others company when we want to. 

The connection with people may be a brief chat about a bird sighting, the shared excitement of seeing a beautiful bird or a precious rare flower, a group of people you get to know on a deeper level via set walks or classes or a belonging as a volunteer, it all helps.

Nature Reserves For General Wellbeing

So in this way walking in a nature reserve can have a range of benefits and opportunities for our mental, emotional and physical health with a sense of belonging and community that can lead to a better quality of life overall. 

We are so appreciative of our wonderful special nature reserve resource and would not be with out it and will protect it as long as we live.

Reviewing Reacher - The Book and the Amazon Series

Lee Child created an intriguing character when he wrote the story of Jack Reacher in the military thriller titled Killing Floor. This first book in his Reacher series includes a cast of memorable characters and a mysterious murder (string of murders) case that is very difficult to solve. The twists and turns keep everyone guessing and suspicious of each other.

Amazon has brought that book to life in a streaming series that is binge-worthy. When my friends ask for recommendations for a weekend of binging, I always recommend the Reacher season 1 series. Thank you Amazon for bringing a breathing, walking, talking Jack Reacher into homes everywhere. I love it when the movie/television version stays true to the book. 


Killing Floor (Jack Reacher, book 1) by Lee Child

The book. Many years ago I read Killing Floor by Lee Child. The story was about a Veteran (ex-military police) named Jack Reacher. Reacher is a drifter who goes to a small Georgia town because at some point in time his brother mentioned a Blues Singer named Blind Blake. And in this fictional story Blind Blake had history in Margrave, Georgia. 

Reacher is in Margrave for less than an hour when he is arrested for a murder that occurred along the highway just before he walked into town. 

I devoured Killing Floor and then the 2nd book in the series. I remember enjoying Lee Child's descriptive writing and his characters. Somehow, probably busy with life, I did not continue the book series. And I am surprised (but not surprised) to find that Lee Child's series has continued to almost 30 books in the Reacher series!  I have resumed reading about this drifting, giant Veteran who always tries to do the right thing - which often eventually means being left with the only option of fighting and killing the bad guys.

The author. Lee Child (James Dover Grant's pen name) is a profilic writer. He has a huge fan base. He is reportedly one of the world's leading thriller authors. Lee Child refers to his stories as revenge stories - someone does something horrific and Reacher gets revenge. Child has said that he writes novels because they are the "purest form of entertainment". Others report that his style is commercial and focused on profitability. I'm okay with that. Gripping and entertaining is going to result in profitability. 

Lee Child fans might be interested to know that he makes a brief, cameo appearance in the season 1 finale.  

Reacher (Season 1) on Amazon

The Series. My excitement about Jack Reacher resumed in 2021 when my oldest son told me that the book had been made into an Amazon original series. I had not been at all interested in seeing the 2012 Jack Reacher version starring Tom Cruise. There is no way that I'd be able to forget Cruise and believe that he was Jack Reacher. But my son assured me that this Amazon series starred someone else and that the series was good. Skeptically, I watched. And then impatiently looked forward to each weekly installment. 

Alan Ritchson plays Jack Reacher. I think he's perfect for the role! I'm not familiar with Alan Ritchson so it is easy to allow him to become the Reacher that Lee Child described. Ritchson is big man and delivers a believable portrayal of a tough, skilled investigator. 

As happens in the book, Jack Reacher gets off the bus in a small town in Georgia and is not able to taste his peach pie when the local police roll up, sirens and lights, and arrest him for murder. "Reacher, why does trouble always find you?" his mother tells him during a flashback in time as they settle into their newest home. Reacher and his brother are military brats. His own military career includes being the head of a special investigators unit.

Reacher is attention-grabbing on his own. How much better to be surrounded by other unique characters.

Chief Detective Oscar Finlay (Malcolm Goodwin) -  Finlay has transplanted from Boston to Margrave, Georgia. Why does a Harvard graduate, tweed-suit-wearing, talented detective move to an extremely small police force in Georgia where no one looks like him, sounds like him, and he is clearly the outsider where everyone else has lived all their lives. It takes us awhile to find out why this very talented urban detective has moved to a "quiet", small, southern town.

Roscoe Conklin  (Willa Fitzgerald) - Roscoe is a pretty, young officer whose family has lived in Margrave since it was founded. However, she doesn't have any family left. When her parents died when she was very young, Roscoe was raised by her grandmother. And Chief Detective Gray helped looked after her but he has also since passed away. "I feel bad about the Margrave welcome wagon running you over" she says to Reacher as she's getting to know him.

Roscoe, Finlay, and Reacher form an alliance to try to catch the murderers.

Frances Neagley  (Maria Sten) - Neagley is a beautiful, tough, no-nonsense member of Reacher's disbanded Special Investigators team. She realizes he's in trouble and comes to help her former boss with her very special military talents. I LOVE watching Neagley in action. As someone who's watched "Moneyball" several times and again the other night, let me just say that this movie hits it out of the park every single time.

Starring the ever-charismatic Brad Pitt, "Moneyball" tells the gripping true story of Oakland Athletics general manager Billy Beane and his unconventional approach to building a winning team.

The Storyline: A Winning Formula

Moneyball follows Billy Beane, portrayed by Brad Pitt, as he navigates the rough waters of Major League Baseball management. 

With a limited budget and losing key players to wealthier teams, Beane teams up with Yale economics graduate Peter Brand (played by Jonah Hill) to revolutionize the game. 

Their strategy? Embrace sabermetrics, a statistical approach to player evaluation, to assemble a team of undervalued talent. The ride is a rollercoaster of triumphs, setbacks, and nail-biting moments that keep you on the edge of your seat.

The True Story Aspect: Fact vs. Fiction

One of Moneyball's most captivating aspects is its basis in reality. Billy Beane's bold experiment with sabermetrics isn't just a Hollywood invention; it's grounded in the true story of the Oakland Athletics' 2002 season. 

However, like any good cinematic adaptation, Moneyball takes liberties with certain events and characters for dramatic effect. While the story's core remains faithful to history, some details have been embellished or altered for storytelling purposes.

The Cast: A Dream Team Lineup

Brad Pitt leads the charge as the charismatic Billy Beane, perfectly capturing the blend of determination and vulnerability that defines the character. 

Jonah Hill shines as Peter Brand, bringing humor and heart to the role of Beane's unconventional partner in rebuilding the team. 

With standout performances from the late Philip Seymour Hoffman, Robin Wright, and Chris Pratt, the cast of "Moneyball" hits it out of the park with every scene. I was personally taken by Brad Pitt and Jonah Hill's performances - amazing!

A Final Score: Must-Watch 

Ultimately, Moneyball isn't just a movie about baseball; it's a story about resilience, innovation, and the power of thinking outside the box.

Whether you're a die-hard sports fan or just someone who appreciates a good underdog tale, this film has something for everyone. 

For me, the most appealing part of this movie is the innovative thinking and the guts it takes to step outside the box when everyone around you is poo-pooing your new ideas—and then win with it despite the naysayers!

So grab some popcorn, settle in, and prepare for a movie experience that will leave you cheering for more.

'Twas The Bite Before Christmas – Book Review

Synopsis of Book #28 of 30 in the Andy Carpenter Mystery Series


Andy Carpenter is a lawyer who works at his profession reluctantly.  His deep passion is the dog rescue organization – Tara Foundation – he and his wife sponsor and run. The organization acquired its name from that of Andy and Laurie's Golden Retriever rescue, Tara.


It is Christmas time and the Tara Foundation is having it's annual Christmas party. All the rescue families ~ and their dogs, of course ~ along with the foster families who volunteer to welcome dogs into their homes while waiting adoption, have been invited to the celebration. Some volunteers are what Andy refers to as a “foster failure” (someone who takes in a dog temporarily, but then cannot give him up and ends up adopting him). His friend, Derek Moore, is currently a double foster failure and their names are Jake (a Golden Retriever) and Sasha (a Dalmatian).


In the middle of the celebration, the police arrive at the door and arrest Derek – for murder


Andy discovers that Derek's real name is Bobby Klaster and he is in the State of New Jersey's Witness Protection Program. Bobby was once in a gang and gave evidence against his former gang after a robbery where two people were killed. Now, Bobby is being accused of murdering one of the gang members. 


Summary


Andy doesn't like much of anything about the case, but he takes it on to clear Bobby's name and catch a murderer, while looking after Jake & Sasha, along with his own three rescue pups. Laurie, a former police officer who now runs her own Private Investigation firm, helps out in the investigation. 


The story takes place in and around Patterson, New Jersey and the dogs play a big role. Especially a K-9 dog named Simon Garfunkel, owned by one of Laurie's partners. 


As you have probably surmised, this is a lighthearted novel filled with humor and is in the Cozy Animal Mystery genre, as well as Traditional Detective Mysteries and Animal Fiction. 'Twas the Bite Before Christmas is #28 in the Andy Carpenter series, all of which include 'dogs', and is a very enjoyable read.
