Soft Foods For Denture Work

The recipe that I am about to share with you is the one that has been passed down from my Grandmother and Mother. We always make ours in a cast iron skillet but if you do not have one, you can always use a baking dish or casserole dish instead.
Ingredients:
1 pkg Jiffy Corn Bread Mix1 15 oz. can cream corn
1 cup frozen corn kernels
1 cup sour cream
1/4 cup melted butter
2 large eggs
2 Tablespoons sugar
1/4 teaspoon salt
Directions:
Pre-heat your oven to 375 degrees.Lightly oil your cast iron skillet.
In a large bowl combine the Jiffy mix, sugar and salt. Add both corns, sour cream, butter and eggs. Mix well. (Make sure your butter has cooled before adding or you will cook your eggs!).
Spread the mixture into your cast iron skillet and bake for 20 to 25 minutes.
This is so very good and as you can see very easy to make! What was great for my husband and I was that it made enough that we could have it for a couple of days before we ate it all. It is soft enough that it does not hurt those tender gums, tasty and filling enough that my tummy was sated. The bonus for me was that it had a feeling of nostalgia, too. Remembering watching and helping my Grandma make it in her kitchen, helping Mom make it in hers and enjoying it at all of those family gatherings.
My husband likes this recipe so much that he wants me to make it as a side dish more often. It goes great with any meat: beef, pork or turkey. It looks pretty and cheerful on the plate and it seriously makes your tummy happy! It is one of those wonderful comfort foods that I know your family will enjoy whether soft foods are a necessity or not.
Corn just happens to be my favorite vegetable, so naturally this sounds extra good. Can't wait to try it. My favorite corn dish growing up was 'corn fritters', fried and served with syrup. :)

DeleteWhat a wonderful, old-fashioned recipe! I love it but haven't made it in years. I think in our family cookbook it's called Corn Pudding. Adding the ingredients to my shopping list for the upcoming week!

ReplyDeleteJiffy Mix is an easy way to make cornbread. I'm sure you can get it on Amazon, if it is not available in Canada.
DeleteI make regular cornbread in a cast iron skillet. My "sweet" cornbread never turns out. Glad to have a proven recipe.

I was in Florida the day this article published and my mom called and asked me if she could forward the link for the recipe on Review This to a friend. The answer was "of course", but my curiosity was most definitely piqued. I could hardly wait to get home to see the recipe that excited Mom so much that she wanted to immediately share it with friends. It does sound delicious!

DeleteI've never heard of Corn Spoonbread either, but it sounds like something my whole family would love. I'm not sure if we have Jiffy Corn Bread Mix here in Australia, but I'm sure I can find something similar.
