Reviewing the Compact Folding Cot by Ozark Trail

On many occasions I have been in a situation where I needed a temporary and portable place to sleep. Many times that has been on an inflatable mattress. I have recently found a much better option at an awesome price point. The Compact Folding Cot by Ozark Trail is solid and comfortable. I cannot yet speak to it's longevity but I have napped in it and was surprised at how comfortable it was.



About the Compact Folding Cot by Ozark Trail

I found this cot to be surprisingly comfortable and sturdy. I stretched out on it - and took an impromptu nap - as soon as I brought it home. I wanted to try it out immediately because I half expected to return it. I unfolded it to find that the legs were short. The cot was approximately 8 1/2" above the ground. Because it is low to the ground, it didn't tip or wobble as I got in and out of the cot. I also believe it didn't tip or wobble because of the way the legs are made. There are five wide, U-shaped legs that maintain contact with the ground. The legs at each end of the cot lock into place and needs to be manually released in order to fold the cot. 

The material stretched across the frame is comfortable. I was expecting either some sort of thin nylon or thick canvas. I was hoping for a thick canvas. I cannot find any description of what the material is made of but it feels to me like a canvas with some sort of stretch. Not too much stretch. Just enough to help alleviate any pressure point I would experience from laying on a stiffer material. 

Finally, have you ever sat or slept on a futon or a pull-out bed in a sofa and ended up feeling one of the bars of the frame under your back? It is impossible to get comfortable in that situation and I always woke up stiff and sore. This Ozark Trail cot does not have any support bars just under the material where I laid!

They forgot to mention that there are two small straps with a plastic buckle and velcro configuration that holds that cot closed when folded. And there are two straps that when velcroed together create a padded carrying handle. 

My Experience: The Compact Folding Cot by Ozark Trail Versus Air Mattresses

Over the years I have purchased several different air mattresses for camping. When I camped regularly on my land, in an off-grid structure I called "The Shack", I thought an air mattress would be the best option. I could inflate it when I arrived, deflate it when I left, and pack it in a tote for safe-keeping. However, the air mattress didn't turn out to be the best option. In cold weather, the air mattress became extremely cold - more cold than sleeping directly on the floor in a sleeping bag. I was shocked at how cold that mattress became. Also, I quickly found that air mattresses were not durable.

The first air mattress I purchased was inexpensive and leaked after just a few camping trips. I thought it leaked because I purchased the least expensive version. So I purchased more expensive brands over time hoping they would be more durable. Subsequent mattresses did last longer, but not by much. I believe my dog's toenails punctured one of the mattresses in the middle of the night as it suddenly began to hiss and quickly dropped me to the floor. What a startling way to wake up! Another time, when visiting family, I slept on an air mattress that did not blow up "tight". There was that sagging spot in the middle from the beginning. It caused me to be uncomfortable and it caused me to snore because of the position I was in. At least that is my excuse for snoring during that trip. 

I purchased my Compact Folding Cot from Walmart at a very nice "rollback" price. I now wonder if the reduced price tag was because camping season (for most folks) is coming to a close. There are also a few of the cots listed for sale online - but I'm not familiar with those outlets so I will not advertise those sites.

An Unusual, Delicious Strawberry Chocolate Tea With 0 Calories

If you're a tea lover, like exploring new flavors and prefer your "cuppa" slightly sweet, The Republic of Tea's Strawberry Chocolate Tea is definitely worth a try. This delicious, low caffeine herbal tea has no calories, so it's a lovely, guilt-free sweet treat you can enjoy any time of day.

Strawberry Chocolate Herbal Tea No Added Sugar, Low Caffeine, Naturally Sweet & Delicious!

I have been a lifelong tea drinker. While I enjoy a cup of coffee from time to time and I have been having one more often since switching to a low carb / keto diet, I'm definitely not in the "don't talk to me until I have had my morning cup of coffee" camp. However (with apologies to the Florida Citrus Board), "An afternoon without tea is like a day without sunshine." My favorites are made by The Republic of Tea, Harney & Sons, Twining, Tazo and Stash.

For the first half of my life, I drank only black tea varieties, growing up with the ubiquitous orange pekoe, then branching out into English Breakfast and Darjeeling. Later fruit flavored black varieties such as peach, apricot and mango became my favorites. About 10 years ago, I began taste testing green, white and rooibos (red) for their health benefits as well as decaf and low caffeine teas for evening sipping, after noticing that my previously low sensitivity to caffeine was increasing with age. I found the flavor of most green teas so grassy as to be unpalatable, but eventually I discovered The Republic of Tea Decaf Ginger Peach Green Tea and the company's naturally caffeine-free Ginger Peach Red Rooibos Tea that, until recently, was the only red rooibos beverage I enjoyed.

Since I consume not just a cup or mug but a large, 16-ounce Thermos insulated travel tumbler (and sometimes two) of leafy brew that I sip on over the course of several hours each day, I like having a nice selection to choose from. This year, I was in the mood to find a few new favorites and take a break from some of my old standbys. Since The Republic of Tea offers the largest variety I've seen and frequently adds to its line, I focused my search on their herbal and low caffeine offerings.

I found several delightful, new-to-me flavors, including naturally caffeine-free Queen's Cake Vanilla Fruit Tea and refreshing Whistledown Punch hibiscus iced tea with hints of citrus and pineapple from the company's Bridgerton collection, as well as SuperAdapt Restore and Reset, an organic herbal blend with reishi mushrooms and cocoa that's earthy and calming, and my newest obsession, Strawberry Chocolate Tea.

Smooth, Satisfying and Slightly Sweet

I adore chocolate and cocoa, but I had never heard of a tea flavored with either one before encountering the company's Cuppa Chocolate Tea collection. I was skeptical but also intrigued by this idea. I also love chocolate-covered strawberries. So, after reading the overwhelmingly positive customer reviews of The Republic of Tea Strawberry Chocolate Tea on the company's website, I decided to give that one a try and ordered a 36-bag tin on Amazon (along with the SuperAdapt Restore and Reset and the two Bridgerton collection flavors I mentioned).

According to the label on the back of the tin, the strawberry chocolate flavor is an "Herb Tea for Sweethearts" with an equally fanciful description: "Chocolate mingles with a hint of ripe strawberry atop the rich flavor of rooibos in this delicious, aromatic and romantic cup." After highlighting rooibos's high antioxidant content, it invites us to "Enjoy a lovely cup of dessert with your sweetheart." The copywriters' creativity failed to persuade me, but it did amuse me. My husband doesn't much care for tea and, if I were to offer him a cup of this magical romantic potion, no doubt he would look at me quizically before politely declining! 

Imaginary romantic associations aside, I hoped I would find this brew pleasurable to sip, whether alone or in my husband's company. What I never expected was that it would become my new current, go-to hot beverage!

Rooibos, with its gentle, smooth, nutty and slightly sweet (as well as somewhat earthy) flavor makes a perfect base for the chocolate and strawberry in this blend. To me, those two are more like "topnotes" or supporting players for the rooibos, but even though I'm usually not as fond of earthy teas, the rooibos flavor plays nicely with others and doesn't dominate. There is also a hint of vanilla that adds to this delightful cuppa.

Many customers find the natural sweetness sufficient for their tastes. I like mine a bit sweeter, especially since I often enjoy it in place of a dessert, so I stir in a spoonful of BochaSweet. You may prefer it with a little sugar.

What's In It?

Here are the ingredients in this delicious Strawberry Chocolate Tea:

Rooibos, carob, cocoa kernels, sweet blackberry leaves, natural chocolate and strawberry flavor, and bourbon vanilla beans. 

Using all-natural flavors with nothing artificial helps to give this delightful tea its smoothness.

Naturally Low in Caffeine

Since I enjoy sipping tea in the evening as well as during the day, I always include some decaf, caffeine-free or low caffeine options. Fortunately, The Republic of Tea's Strawberry Chocolate Tea contains very little caffeine. Since both rooibos and carob are caffeine-free, I'm guessing the small amount of caffeine comes from the cocoa kernels.

A Sweet Treat That's Also Good For Your Health

Although it is marketed to appeal to romantics, anyone watching their calories, carbs or gluten will be happy to know that the lovely tea, with its natural sweetness, contains 0 calories and 0 carbs and, like all the company's products, is gluten-free. 

As this 2020 WebMD article about the health benefits of drinking rooibos tea explains, rooibos is rich in polyphenols, antioxidants that have important potential health benefits such as fighting inflammation, lowering blood sugar and reducing blood pressure.

So, while you're sipping your delicious cuppa, you're also doing something good for your body and your health.

Save Money With Tea Bag Refills

I love The Republic of Tea's products and commitment to environmental sustainability and responsible use of natural resources, such as its signature round, unbleached tea bags that don't use unnecessary envelopes, strings, tags or staples and the air-tight, light resistant tins that can be refilled over and over or repurposed.

I always buy one of the 36-teabag tins when I want try a new flavor. If I don't love it, I always find an alternative use for the empty tin. For example, I have a couple next to our kitchen sink that hold dish/bottle brushes, and plan to cover a few others with decorative paper to hold some of my small jewelry making hand tools, pens, brushes, etc.

If I like the contents but am still on the fence, I can order a 36-teabag refill for the tin. When I fall in love with a flavor, as I did with the Strawberry Chocolate Tea, I buy the larger, more economical 250 teabags refill to replenish the original tin over and over.

Steeping Tips

The Republic of Tea recommends using one teabag per 6-ounce cup, and for herbal varieties like this one, to use boiling water (200–212 ℉) and steep for 5–7 minutes. I steep mine in my tall, insulated stainless steel travel tumbler, using two bags and 12 ounces of boiling water.

When I followed the recommended steeping time, the flavor a bit too weak for my liking. Fortunately, I remembered that herbal teas, unlike the black variety, don't become bitter when "over-steeped." So, after experimenting a bit, I found that I much prefer the taste of my strawberry chocolate cuppa after letting it steep for 10 minutes (or even a bit longer).

Two Replaced Knees and a Broken Elbow Equals.......A Product Review

No this is not one of Barbara's Riddles, although she has some great Riddle Books! (You can check them out on Review This Reviews if you like right here!


 But the answer to my riddle is dirty floors!  

I must admit that I like clean floors but I don't particularly like cleaning them!  Getting down and dirty in order to clean those tiles can be back breaking at the best of times.  But after having double knee replacements and a broken elbow, getting down on that floor is impossible.  Plus, since I started my Keto Lifestyle (with Margaret's help)  a couple of years ago, my Hubby decided that is was his turn to take over the cooking chores!

I'm not complaining because he is very careful and cooks for me with my Carbs ever on his mind.  But after my wonderful husband has been in the kitchen chopping and peeling and generally making a mess, the floor looks less than fantastic!

Now I must admit, I'm a little bit of a nut when it comes to having the kitchen floor clean.  There is nothing like getting down on the hands and knees and scrubbing  all those little nooks and crannies!  But since arthritis and recent the knee surgery, that is not happening anymore.  I had to find someway to get my floors as clean as I like them.

Yes, I have a mop and bucket, many different types of cleaning apparatus with micro cleaning attachments and several different kinds of cleaning cloths.  None of them were satisfactory for my personal tastes.  Plus, I needed something that I could use quickly and have it really do the job!

Well, after much searching and lots of different products, I think I found the one I like the best.  It's the Bissell Powerfresh DeLuxe 1806 Series!  


It is compact, lightweight, easy to use and it really does make the floors look great.  I was sceptical about how well it would work, because nothing up till now matches the cleanliness of getting down and scrubbing!  But surprise, surprise, after giving the kitchen a good sweep (to get the big stuff up), I plugged in my new little friend and within 10 minutes the floor was steam cleaned and dry!  Hubby walked by and took a quick look and then came back and looked again.  His comment was that the floor looked like it did when we first moved in to the apartment.  Now I have to agree with him.  This is the cleanest I have gotten the floor since my knees were replaced last year.  I am a happy camper!

If you are looking for something that will help you get your floors looking great, I would highly recommend this little but powerful Electric Steam Mop!  

My only regret is that I did not find this appliance sooner.  Shiny clean floors are something that makes me happy!  This mop is one that I will use on a weekly (or more often depending on how the cook is doing) basis!  It's easy to use and doesn't take forever to heat up.  I had my floor cleaned in less than 10 minutes yet they looked like I'd been scrubbing for hours!  Now that to me is a Big Win!

Now, Two replaced knees and the broken elbow equals nice clean floors for sure!  And healing joints as time goes forward!  The cook is no longer worried about the messes he makes either!  All around this was a great investment!  I have a happy cook and a happy housekeeper (me)!

Shopping Online For Camera Equipment Review

 Back in the day, way back in the day I originally learned to develop film old school in college. Where students were ushered into an itty bitty pitch black room armed with a camera and metal spools where we learned how to remove the film from the camera and thread the film on the spool - in the dark! And then learned the process of developing film and then learned how to manipulate the "picture" in the developing process with the developing chemicals, time of exposure etc etc. Lots of etc's for novices to learn! Fast forward a few decades through many a camera and I have found myself back to wanting to up my photography game and return to a 35 mm camera albeit digital.

Where To Buy Photo Equipment?

This led me to the vast array of products offered at online retailers for camera and photography equipment. I reintroducing myself to a 35 mm camera by purchasing a used Canon Rebel 2 any today the current Rebel is 8 so you can see I went back quite a few model years. I did this intentionally as I wanted to ensure this was an avenue I wanted to pursue (and knowing, suspecting that it would be, much more investment would be forthcoming).

I purchased the Canon Rebel 2ti used from B & H Photo online. The camera arrived quickly. The packaging was excellent and the camera looked brand new. The only negative though very typical of buying any type of used equipment is the lack of a hard copy manual, but that is easily accessible online. 

Since the original purchase I wanted a few accessories and a different lens and back online I went to shop. I would love to support my local camera shop; in my area there is only one bricks and mortar camera store left, but unfortunately though understandably they did not stock the older equipment.

I have purchased equipment from B & H Photo, Adorana, Amazon and eBay and have had positive experiences with all. When seeking a specific pieces of equipment I will surf each of the stores and cost and compare prices, shipping charges. With older accessories that may be model specific the item may very limited in supply so that limits comparison shopping. 

Review of Buying Camera, Photography Equipment Online

I have found B & H Photo and Adorana are quick if not quicker when using Amazon Prime. The items were securely packaged by all 4 sellers/companies which is very important with delicate and breakable equipment. The packaging on Amazon I found really varied in quality and quickness to ship even with Prime; on the flip side items purchased are also shipping quicker than promised on Prime. 

 It is critical to vet the sellers on eBay and Amazon. Returns to third party sellers on Amazon can be a slower process than if sold directly by Amazon. Some third party sellers also require you apply for permission to them to return an item prior to processing on Amazon which is another layer of administration. For eBay sellers research their ratings and the comments by clicking on the number of reviews next to their ebay name.

Top Four(In No Particular Order)

  • B&H Photo in New York, family owned
  • Adorana in New York, family owned
  • Amazon (check if the seller is amazon or a third party)
  • eBay (vet the seller closely)

Recommendation 

While online shopping has never been easier it does 'pay' to comparison shop. I've had positive experiences with all the sellers/stores. As mentioned above if a third party is the seller make sure to vet the third party on the site. If seeking discontinued or older equipment eBay or Etsy can be a great resource!

Cooking & Baking Prep Tools: Shot Glasses Used As Pinch Bowls

Shot glasses may seem like unusual prep tools when cooking or baking, but they are actually the perfect pinch bowls for ingredients. In my kitchen, they are as essential as measuring spoons or mixers.

Not only are they glass and transparent, they have measurements printed on them. Plus, they have a weighted base so they will not turn over.  Due to their small size, they are easy to stack & store. Shot glasses take up very little space on the kitchen counter when working which allows you to use as many as you need for individual ingredients.

Before I ever start to mix anything, I measure out all of the recipes ingredients in separate measuring cups & shot glasses.  The shot glasses are great for holding small amounts of seasonings, spices, extracts, or small amounts of liquid. I still use my measuring spoons to measure & level the seasonings, but you could use the shot glass measurements on the side if you prefer.

By pre-measuring all of the recipe ingredients into separate shot glasses & measuring cups, I don't forget any ingredients, or wonder if I have already added a specific ingredient as I work. If the shot glass of salt is still sitting on the counter, I know I haven't added it yet. Plus, I can stir and mix everything together faster if I don't have to stop to measure each ingredient as I go.


Shot Glasses Are Excellent Pinch Bowls

 Shot GlassesCheck PriceShot glasses can be used for so much more than measuring alcohol. Because they allow a clear view of contents and have the measurements printed on the glass, they are great when cooking. I have 4 shot glasses in my kitchen cabinet of baking supplies and I use them often. 

In the introduction photo, I have the seasonings for manicotti pre-measured and ready to add as needed.

Shot glasses are also dishwasher safe, therefore clean up is a lot faster.  I enjoy cooking & baking, but I hate washing bowls and kitchen utensils.

The Best Keto Pizza Crust Mix With 0 Net Carbs

A good keto pizza crust is one of the things people who follow a very low carb lifestyle dream about. Until recently, making your own fathead dough keto pizza crusts from scratch by blending melted shredded mozzarella, cream cheese, eggs and almond flour or coconut flour was the best option. A Tasty Keto Pizza Crust With Just 80 Calories, 5g of Fat and 0 Net Carbs!

Fathead dough pizza crust recipes usually have several net carbs per slice as well as a lot of fat from the mozzeralla cheese, cream cheese, eggs and almond flour! When I first saw that Scotty's Everyday Keto Pizza Crust Mix has just 80 calories, 5g of fat and an amazing 0 net carbs per serving, I was pretty skeptical. With macros that low, how could it not taste like cardboard (like so many disappointing low carb and keto baking mixes and baked goods on the market)?

Quick and Easy to Prepare

Scotty's Everyday Keto Pizza Crust Mix is quick and easy to make. Just mix it with water and olive oil in a stand mixer with a paddle attachment until the dough comes together and then knead the dough for 3 minutes, either by hand or in a stand mixer with a lightly oiled dough hook (which is what I use).

Unlike conventional pizza dough made with yeast, there's no need to wait for the dough to rise. Just combine the mix with the water and oil, knead the dough and it's ready to roll!

Place the dough on a large, lightly oiled surface (I highly recommend a silicone pastry mat) and roll it out to a 10"–12" circle, depending on your preferred size of pizza crust. Then just transfer it to a lightly oiled pizza pan, brush the top of the crust with a little more olive oil, top with your favorite low carb pizza toppings, and bake in a preheated 425 ℉ oven for 15–18 minutes and cool for 5 minutes before slicing.

...and after baking. You can see how the thin edges of the crust were so crisp that they cracked a bit when I tried using a spatula to lift the baked pie out of the pan and onto a cutting board for slicing.

Surprisingly Good Taste and Texture

Low carb, keto-friendly macros and ease of preparation are all well and good. But, of course, the big question is, how does it taste?

Realistically, no low carb dough is going to be as good as a Bertucci's pizza crust! That said, I find that Scotty's Everyday Keto Pizza Crust Mix produces one that is much more similar to a wheat-based pizza crust (and also much sturdier) than fathead dough or vegetable-based Kbosh keto crusts (which my husband and I also enjoy in my quick and easy low carb keto pizza recipe, especially on busy weeknights).

My pies tend to be loaded with lots of toppings including wet ones like pizza sauce and ricotta cheese, which can make even a conventional crust a bit soggy. However, we were pleasantly surprised at how firm our crusts made with the Scotty's Everyday mix and baked on the lower rack of the oven came out. The exposed edges had a delightfully crunchy exterior and slightly chewy interior.

Next time I plan to try rolling the dough thinner and building up a slightly thicker rim.

Helpful Kitchen Tools for Making Homemade Pizza

I make pizza for dinner frequently find that having the right tools for the job makes things a lot easier. Here are some of the kitchen tools I use most often for this purpose, whether I'm making a traditiona-crust or keto pizza.

Large, Nonstick Pastry Mat With Printed Measurements

I love using my HIC Harold Import Co 18 x 24-Inch Pastry Mat to roll out all types of dough. It's extra large, nonstick, easy to clean, extra large and rolls up neatly into a lidded plastic storage tube when not in use. Best of all, it is printed with helpful measurements for rolling out doughs for pies, tarts, and up to a 16-inch pizza crust. I also appreciate that the printing of the measurements is durable. I've owned my mat since 2012 and it still looks almost new. If that one is out of stock, this silicone pastry mat is very similar.

Although I didn't expect to when I purchased it, I've found that I much prefer it to my old, traditional cloth pastry mats, not only for low carb baking but also for conventional doughs, since the nonstick surface doesn't need to be coated in flour to keep pie crust or other doughs from sticking (which can make them tough if they absorb too much extra flour during rolling). 

Cordeirite Pizza Stone

Baking your traditional or low carb crust on a preheated pizza stone makes a world of difference in terms of crispness and even baking! The best results come from baking directly on the preheated stone or on parchment paper placed on top of the stone, but that requires a pie peel, which I finally ordered but have not yet received. Even if I build my pie on an oiled or parchment lined stainless steel pizza pan, I still place the filled pan on the preheated stone for baking. 

Since we now have a large countertop oven but no wall oven, the pan sizes I can use are limited. I love my durable cordeirite 12” Round Pizza Stone that can withstand temperatures up to 1400 ℉ without cracking and can even be used on a grill.

Stainless Steel Pizza Pan

A stainless steel pizza pan may not result in as crisp a crust as baking directly on a pizza stone, but it makes building and transferring your pie into and out of the hot oven a lot easier. It can also help protect your stone from drips and stains (as can baking parchment). This set of two stainless steel pizza pans costs less than $15 (at the time of this post's publication) and my pans have been in use nearly every week since I got them.

Precut Baking Parchment Sheets

If you have read some of my other recipe posts, you'll know that I am a huge fan of precut, flat baking parchment sheets. I have them in several sizes and shapes and use them all the time.

I have been cutting down 16" x 12" sheets, but I just found these 12" round flat unbleached baking parchment sheets that are the perfect size for my low carb pizza crusts and immediately ordered a package.

Rotary pizza wheels are small and convenient to store and do a fine job of cutting pies. However, I have always found them a pain to clean, especially since I like to made "loaded" pizzas with lots of layers of toppings and lots of gooey melted cheese, which tends to cling and leave a greasy residue that can get stuck between the round cutting wheel and the riveted arms that attach it to the handle. Even though many claim to be dishwasher safe, I prefer to wash knives and other kitchen tools with sharp blades by hand to avoid dulling the cutting edge.

The first time I tried it, I was so thrilled with it that I immediately retired my old rotary-style cutting wheel.

The extremely sharp cutting edge cuts through even vegetables and meat toppings cleanly and easily, and the very comfortable, ergonomic, integrated rolled handle provides excellent leverage and control.

I'm planning to use this fabulous rocher-style slicer for many other kitchen uses as well, such as cutting sheet cakes, brownies and bar cookies into even strips and rectangles.

Tip: To protect your pizza pan, pizza stone and slicer blade, I highly recommend transferring the baked pie to a large cutting board before cutting it into slices.
