A Fun Cupcake Twist on Traditional Biscuit-Based Berry Shortcake

I have made delicious keto-friendly strawberry shortcake with biscuits from a low carb baking mix topped with fresh whipped cream and berries. However, since there are only two of us in our household, that means whipping just a few tablespoons of heavy cream and assembling two shortcakes after dinner every time I want to serve them.

Recently, I got the idea to try making shortcake cupcakes, substituting cupcakes for the biscuits and low carb buttercream frosting for the whipped cream, which would let me assemble and refrigerate them in advance. While I'm making dinner, I can just take out two of the refrigerated shortcake cupcakes and set them on the counter so they will be at room temperature when we are ready for dessert.

If you want to significantly cut the calories and fat and are willing to spend a bit more time and effort, I highly recommend the luscious Sugar-Free Swiss Meringue Buttercream Frosting recipe from All Day I Dream About Food, which lends itself beautifully to piping and tastes out of this world. A 1/4-cup serving (4 tablespoons) has only 109 calories, 10.7g of fat and and almost zero (0.1g) net carbs.

Use Your Favorite Keto Friendly Berries

Berries are the only fruits low enough in carbohydrates to fit a ketogenic diet. The berries with the fewest net carbs are raspberries, blackberries and strawberries. Blueberries have more than twice the net carbs and half the dietary fiber of raspberries or blackberries, but are still low enough in carbs for you to enjoy a few on one of these keto shortcake cupcakes.

For the keto shortcake cupcakes I photographed for this post, I used fresh raspberries and blueberries. I also added a taste of strawberries by pairing my favorite sugar-free strawberry jam with the buttercream frosting for the filling.

The Best Low Carb Keto Strawberry Jam

I have tried several brands and flavors of sugar-free jams. Most were fairly disappointing. Some were sweetened with artificial sweeteners, which I try to avoid for health reasons. Some were too thin and loose or had big chunks of berries that made them hard to spread in a thin layer.

ChocZero is one of my favorite brands of low carb and keto-friendly products. Recently, they launched a keto strawberry jam, which I ordered immediately. Based on my experience with other sugar-free jam products, I was only cautiously optimistic. (I didn't want to get my hopes up only to be disappointed again.)

I was pleasantly surprised by the new ChocZero Keto Strawberry Jam. It has a thick, "jammy" consistency, spreads easily in as thick or thin a layer as you wish, is sweetened with monk fruit, has no added sugars, and has a delicious flavor from real strawberries. Each serving (1 tablespoon) provides a whopping 10g of dietary fiber and has just 15 calories and 1 net carb.

Unlike the other low carb, sugar-free jams and preserves I have tried, ChocZero Keto Strawberry Jam is also sticky enough to help keep the raspberries, blackberries, strawberries or blueberries in place when sandwiching them between the halves of the split shortcake cupcakes.

How to Make the Best Quick & Easy Low Carb Keto Shortcake Cupcakes

Recommended Kitchen Tools and Supplies for This Recipe

  • Silicone Muffin or Cupcake Liners
    The Scotty's Everyday Keto Cupcake & Cake Mix package instructions say to "Line one 12-cup standard muffin tin" without specifying the type of cupcake liners to use, I highly recommend Pantry Elements Silicone Baking Muffin Cups. They are made from BPA-, PVC- and phthalate-free, food grade platinum silicone and sturdy enough to use on their own on top of a flat baking sheet, if desired, or you can use them as liners for cupcake or muffin tins. They also come in a clear, reusable screw-top container for storage, which keeps them clean and dust-free and lets you enjoy the rainbow of bright, happy colors even when these nonstick silicone baking cups are not in use. I have used mine frequently for several years for both muffins and cupcakes and can attest to their high quality and durability.

  • Stainless Steel Scoop With Trigger or Spring Action Handle
    I have a large assortment of these stainless steel scoops in different sizes and found that my Norpro 50mm stainless steel scoop (3 Tablespoons) was a bit too small and my Norpro 56mm stainless steel scoop (4 Tablespoons) was a bit too large. You can use a rounded 3 Tablespoon scoop of cupcake batter or, if you make a lot of cupcakes or muffins, you might want to get the Solula 18/8 Stainless Steel Ice Cream Cupcake Muffin Scoop (3.4 Tablespoons), which is just the right size and capacity to portion out nicely rounded scoops of batter into standard size muffin or cupcake pans.

  • Cake Decorating Set or Piping Bags With Decorating Tips
    These low carb keto shortcake cupcakes will be just as delicious if you use a small offset spatula to spread the frosting on the tops, but piping the buttercream into decorative swirls makes for a more festive presentation. As you can see in the photos, I had a hard time piping the frosting onto my cupcakes, partly because I'm decades out of practice and partly because my kitchen was so hot that the buttercream quickly softened too much. Even so, I like the look of the buttercream swirls, messy though they turned out! If you are new to cake decorating and would like to give it a try, I recommend starting with a small, inexpensive, basic set, such as the Wilton Beginning Buttercream 20-Piece Cake Decorating Kit to see whether you enjoy using a piping bag and decorative tips.

Ingredients

For the Cupcakes:

  • 1 package Scotty's Everyday Keto Cupcake & Cake Mix
  • 1 Tablespoon melted butter or ghee (clarified butter)
  • 3 large eggs
  • 1/3 cup water
  • 1 Tablespoon vanilla extract
  • Optional but recommended: Avocado oil, clarified butter or coconut oil for greasing the cupcake liners

For the Keto Buttercream Frosting (Wholesome Yum recipe):

  • 1 1/2 cups unsalted butter, room temperature (Wholesome Yum's recipe recommends Danish Creamery European Style Unsalted Butter, which isn't available where I live; I use Kerrygold Unsalted Butter, a high-quality Irish butter made from the milk of grass-fed cows that are free of growth hormones)
  • 1 cup Wholesome Yum Besti Keto Monk Fruit Sweetener With Allulose 1:1 Natural Powdered Sugar Replacement
  • 1 teaspoon vanilla extract
  • 1/8 tsp fine sea salt
  • 1 Tablespoon heavy cream (approximately)

For the Filling:

Instructions

  1. Preheat the oven to 350 ℉ / 180 ℃. Line a standard 12-cup muffin tin with paper, foil or silicone cupcake liners or place 12 sturdy silicone baking cups on a baking sheet. Although not specified on the cupcake mix package directions, I recommend greasing the liners lightly with a thin film of avocado oil, clarified butter or coconut oil.
  2. Prepare the Scotty's Everyday Keto Cupcake & Cake Mix batter according to the package directions. Use a trigger or spring action scoop to portion the batter evenly among the 12 lined muffin tin wells or silicone baking cups, using approximately 3.5 tablespoons of batter for each cupcake.
  3. Bake for 20–22 minutes, just until they test done according to the standard "toothpick test" (i.e., insert a clean, dry toothpick into to center of one of the cupcakes and pull it back out; if it remains clean and dry, the baked goods are done). Do not overbake! Cool them on a baking rack for 20 minutes, then remove the cupcakes from the muffin pan or silicone baking cups.
  4. While the cupcakes are cooling, prepare the buttercream according to the Keto Buttercream Frosting Recipe on the Wholesome Yum website.
  5. Rinse the berries and lay them on two thicknesses of paper towel to dry. Set aside the best looking ones to decorate the tops of the cakes.
  6. Slice the cooled keto shorctcake cupcakes in half horizontally and turn the halves cut side up. Spread a layer of ChocZero Keto Strawberry Jam on one half and a thin layer of the prepared buttercream frosting on the other half. Arrange the berries on the bottom half of the cupcake and cover them with the top half.
  7. Frost the tops of the cupcakes with the remaining buttercream frosting. You can either spread it on with an offset spatula or put it into a piping bag fitted with a star tip (or your favorite cake decorating tip) and piping it on in swirls or rosettes. Top each frosted shortcake cupcake with one of the reserved fresh berries.
  8. Serve on dessert plates with knives and forks, like traditional berry shortcakes. (These towering, berry-filled cupcakes are too tall to bite into directly!)

Make these shortcakes with fresh raspberries (or sliced or diced strawberries) and blueberries for a festive red, white and blue 4th of July dessert that everyone at your holiday gathering can enjoy, even if they are on a gluten-free, sugar-free, nut-free, low carb or ketogenic diet.

How to Write for an Internet Audience -- Party Planning Niche

As the Party Planner Contributor on Review This Reviews, I have been spending some time on the topics that include parties -- checking out the articles, promoting them and seeing what areas/party topics are lacking in suggestions and advice.

Let me first say, there are a lot of awesome articles about parties. YAY! However, there are a few that niche that could use some help, as well.

This is what I want to talk about today -- giving people what they want and need in our writing. Being a successful and valuable addition to the internet.

Filling a Need with our Writing

You see, we know that internet searchers are real people looking for real solutions to real problems -- all sorts of problems. The bottom line is -- no matter the subject -- they value experience.

When you have done something and write about it, on a blog or your website, you are sharing your experience, what you learned and how/if you would do it the next time. This is valuable information we can share with each other.

This, of course, includes party planning. When I search for ideas for parties online, I want to know specifics, read your real-life experience, the planning and the final outcome. I want to know what worked for you and decide for myself if it will work for me.

What I don't want to see is an article that isn't really an article but a glorified shopping list. Where's the value there? I can go straight to the party supply sites and order anything I might need.

When I started my internet search, what I wanted was some advice, suggestions and assistance. Sure, if you are thrilled with a product that really made your party perfect... I want to know. But, if all you are offering me is a bunch of links to other sites, then why should I visit your article, page, website or blog in the first place? Again, there is no value.

Value is Real and Tangible 

Think about it in this context... The advertising world uses actors to portray real people in real situations to sell their products. Why? Because society is programmed to believe that an announcer "telling" us why the product is great can be deceptive. But, if we see people using it, happy with it, showing us how to use it -- we are much more likely to believe we need or want it.

I guess what I am saying -- and I, personally, think -- is that regardless of the topic you want to write about or whatever your niche is -- Be Real! Share your experiences, what worked, what didn't, how to is a wonderful format to write an article or post. Additionally, if you use "How To" in the title, internet searchers can see, right away, that they need the information.

Bottom line: make it personal, share your experiences, successes and failures. You've already been in our shoes. We can learn from each other and all be better for it.

Writing for the Party Planning Topic/Niche

What does all this mean to anyone wanting to write for the party planning topic? It means tell us about a particular party or event you planned or were a part of. Show us pictures, share your decisions -- good and bad -- tell us the story of hosting or planning that party for that specific occasion.

Instead of this: Planning a Wedding
Write this:  How I Planned my Entire Wedding Myself

You get the idea... By sharing from first hand experience you build credibility and authority with searchers and with search engines. We'll believe you and listen to your advice.

The Best Way to Get Ready, Party Time is Here

In a couple of days Summertime will Officially be here! 

Along with Summertime comes Party Time! It's high season for Graduations, End of School Years, and let's not forget about the Fourth of July!  For Canadians that would be the First of July!

Everyone is looking forward to being with friends and family especially when the weather is warm and sunny!  Let's Review some of the best ways to get ready for all of those wonderful outdoor BBQ's and Holiday celebrations. Summertime is a wonderful time for us to enjoy our company, friends and the great outdoors at the same time.

Party planning can be fun, but it can also be costly.  Dollar Tree is a great place to get all those party needs at a reasonable cost. Red, White and Blue party supplies can be had for the best 4th of July party ever!  Canadians can skip the blue and stick with red and white!  Everything from glasses, plates and cutlery for your table and all of it color coordinated, can be had right here!

Setting a table for an outdoor party is easy when you can get everything you need in one place.  From the decorations to balloons, napkins and snacks.  You can even get mixes and drinks for the kids without any problem at all.  Dollar Tree is a one stop shop for all things party related.


When I have been invited to a backyard party, I like to come with something in hand to add to the table.  I will buy a nice bowl or two and then fill one of  them with my special salad and another with a dessert!  The host and hostess are always happy to see my contribution to the party and they always go over really well.

My favorite salad is easy to make, looks really good and is a healthy alternative!  This comes from a friend of mine who is a Naturopathic Doctor! Take a look and see if you don't agree that it looks delicious.

Dr. Amy Tung's Baby Arugula, Seaweed & Kale Salad with Roasted Almonds and Fresh Herbs 🌿 .

1 cup unsalted almonds
1 Tbsp extra virgin olive oil
1/2 tsp kosher salt
4 cups kale
3 cups baby arugula
1/2 cup soaked and drained dried kelp
2 Tbsp each chopped fresh dill, parsley and cilantro 
1 Tbsp chopped fresh oregano

Dressing: 
1 Tbsp lemon juice
1 Tbsp good quality balsamic vinegar 1 clove garlic, grated or pressed
1 tsp kosher salt
1/4 cup extra virgin olive oil
.
Toss almonds with extra-virgin olive oil and salt. Spread on a baking sheet and bake in a preheated 350F oven for 15 minutes, turn every 5 minutes or until nicely browned. Cool.

In large bowl combine kale, baby arugula and herbs. Cover with damp paper towels and reserve.

For dressing, combine lemon juice, balsamic vinegar, garlic and salt. Whisk in olive oil.

Just before serving toss greens with dressing. Serves 6 - 8 people

The other bowl is for fruits that I love to bring along to a backyard get together.  Summer is the season to enjoy all of the abundance around us! There is no better way to enjoy fresh and good for you food than to prepare a large bowl of summer ripe and summer sweet fruits.

My favorites are strawberries, blueberries, blackberries, watermelon cubed or balled, melons (honeydew and cantaloupes) cut into strips or cubed, apples and cherries.  Add a special Citrus Honey dressing (by that is just superb!  Just one warning,  do not place this dressing on the fruits until you are ready to serve.  Some of the fruits may become soggy if mixed too early.

Citrus-Honey Dressing Ingredients:
• 2 tablespoons honey
• 1 teaspoon orange zest
• 1 teaspoon lime zest
• 2 tablespoons fresh-squeezed orange juice
• ½ tablespoon fresh lime juice

Christmas cards have been a traditional way of expressing the sentiments of the holiday season for many years. In fact, the first Christmas Card can be traced back to 1843. But greeting cards for Valentine's Day, Easter, Mother's Day and more continue to be very popular. It's estimated that the average person sends 55 cards per year.  I send cards throughout the year to my smallest grandsons just because they love to get mail.

Because I once owned a Golden Retriever (Baron, shown in the introduction photo), I am naturally drawn to images of Goldens. This one of Murphy owned by professional pet photographer Karen Hoglund especially appealed to me.  And knowing how much most dogs love to chase squirrels, this scene of Murphy 'reading' a book about squirrels is most adorable. 

This photograph of Murphy is featured on a set of 4 birthday cards created by Karen.  The inside of the card says: 

"Squirrel! May all your birthday dreams and wishes come true."

Karen says that "Being a pet photographer has brought together my interests and talents in a way I never imagined. As a fine art major in college, I learned about color and composition. I mastered design as an art director for advertising agencies. It was a happy day when I realized it was possible to combine my artistic side with my love of dogs!"

Whitney on Etsy has a shop called African Grey Designs.  She carries a line of paper goods which feature beautiful colors and whimsical designs. Her illustrations are not Photo-shopped or filtered photographs - each one is hand-drawn by her with 100% love. Whitney's favorite subjects are dogs, cats, otters...basically anything cute and cuddly!

This is the perfect greeting card for me to use for my brother & sister-in-law who are the owners of Abbi, the Boston Terrier shown here. My sister-in-law has a birthday on the 4th of July and now I know what card she would absolutely love. Her Abbi-girl is a joy to her.

National Lost Pet Prevention Month

Count off two seconds with me.  One, one thousand.  Two, one thousand.  Stop.  Someone has just lost a beloved pet.  Again: One, one thousand.  Two, one thousand.  Another fur baby is missing.

This happens every day, every two seconds.  If you add it up, that is 30 missing pets per minute, 1800 per hour, and 43,200 per day.  I did the math.  That comes out to over 15 million missing pets each year.  For anyone who cannot imagine a life without animals, that is a horrifying number.

I hate to tell you this, but it gets worse.  Only 1 in 10 of those lost animals will return home.

Though one might be able to set aside cold, hard numbers, it is much more difficult to forget the names and faces of the missing.  Likewise, the desolation of not knowing the fate of a pet is the kind of thing that haunts a pet parent forever.

Given these statistics, it seems clear that more needs to be done to significantly reduce the number of animals that go missing, and more needs to happen to successfully reunite the lost with their loved ones.  It is no coincidence that July is National Lost Pet Prevention Month.  Over the 4th of July holiday, animal intakes in shelters across the nation increase by 80 percent.  No doubt, much of that has to do with the terrifying nature of fireworks, and how extreme distress causes so many animals to bolt in sheer panic.

Why do pets become lost?  What happens to missing pets?  Why are some found, while others seemingly disappear into thin air?  What makes the difference in giving these lost animals a better chance of being reunited with their families?

Pets become lost for any number of reasons.  They can bolt when scared or when involved in an accident (like Jade in Yellowstone National Park), escape when given the opportunity (an open gate or door), go looking for love (if not spayed or neutered), take off during a hike in the woods (in pursuit of a wild animal), become disoriented, or upset, after a move to a new home (and go looking for the familiarity of a former life), jump out of a vehicle, dig under a fence, get snatched while unattended, and so much more.

What happens to your missing pet?  Many different scenarios can unfold depending on the animal's physical condition and age, her confidence and personality, familiarity with the territory, weather conditions, proximity to helpers (remote area vs. urban area), and actions taken by those responsible for finding her.

Some animals are found, but have no identification tag or microchip.  The finder doesn't know who to contact to return the pet.  That dog or cat may end up being kept by the finder, or adopted out by an animal rescue organization.  This is one reason why it is so important to notify regional shelters and online lost pet forums.  Highly visible, and widely distributed, lost pet signs are also critical in these cases.  Harley was reunited with her family last week because the finder saw her posted in a lost pet group on Facebook.

A dog missing for three weeks was found just yesterday thanks to a lost dog sign that was seen by an individual who sighted a dog dragging a leash.  Despite being lost in a major city, Coco had evaded searchers for 21 days, and was found hiding in a field one mile from where she bolted.  She ran in fear from an outside seating area at a coffee shop due to an unexpectedly loud crashing noise.  Her leash had been wrapped around the leg of a chair while her owner was picking up an order.  Just like that Coco was gone.  Never leave your dog unattended.

Pets riding in cars should always be restrained.  This can be done with a travel crate, a harness system that hooks into a seatbelt, or similar safety features.  Blessing escaped from a vehicle because she was not adequately secured.  Always, always secure your pet in a vehicle.  Some dogs are able to lower car windows by standing on the power window buttons (Blessing was one of those dogs).  That provides a vehicle escape route.  Be sure to activate the child safety locks in your car when traveling with pets.

Our organization microchips every animal adopted from our shelter.  It is not unusual for a pet to get away from a new owner.  Keeping your pet's chip registered and updated with current contact information is essential.

If you take your dog hiking or camping in remote areas, you might consider outfitting him with a GPS tracker collar.  Out in the wilderness, this could save his life.  It is also a good idea if you have a dog that has gotten away from you before, or that tends to be easily frightened.  A skittish dog on the run can be harder to find given the tendency toward evasion.

Some final tips: Be aware of your pet's body language.  Pay attention to the behavioral, and environmental, cues that may alert you to a potential escape.  Have a plan in place for how you will respond should one of your pets go missing.  Read up on the essentials of how to find a missing animal.  Even if your pet is primarily an indoor animal, always ensure that she is wearing a collar and identification tag.

It is said an ounce of prevention is worth a pound of cure.  Given the estimate that 1 in 3 pets will go missing over their lifetimes, now is the time to ensure your precious companion will not become one of those sad statistics.
