Reviewing iLIDS - Mason Jar Lids (Not for Canning Use)

I  have used iLIDS for Mason Jars for several years now and have noticed that when I go to the cupboard for a drink container, I am reaching for a glass jar and an iLID the vast majority of the time.  I find that making my drinks in a jar is cost-saving, environmentally friendlier, and visually pleasing.

iLIDS Mason Jar Drink Lids

Mason jars are a glass jar that are most known for canning. Households over the generations have depended on these jars for food storage. The jars are durable and withstand boiling temperatures in the canner, are dishwasher safe, and store food in the refrigerator after opening. While I have not tried it myself, I am aware that some people use their jars in the freezer. 

Many kitchens, including mine, have a supply of these jars. So it is not a stretch to begin using jars for drinks and the storage of drinks. I began making teas and ice coffee in the jars, then pouring the drinks into a glass. Before too long, I discovered iLIDS drink lids and began drinking right from the jar.  Insulated steel tumblers have many benefits, but I have found that I prefer the versatility of canning jars with iLIDS.

iLIDS drinking lids come in many colors. The underside has a gasket which creates a good seal when screwed on to the jar and helps prevent the lid from becoming hard to unscrew. The drinking lid has a sliding closure to protect your drink from unwanted items. When the slider is opened, you can drink directly from the lid or insert a straw. 

Note: the slider is not sealed and will allow a small spill when the jar is knocked over. It is not leak-proof.

While quart jars are large and bulky, I find that my liquid intake is higher when using a quart jar. I can visually see how much (or how little) I've drank.  Glass jars are not insulated. But I find that I enjoy the visual aspect of infused waters or iced coffee. 

Quart jars and iLIDS are perfect for making sun tea. When finished steeping, the jar and lid can move to the refrigerator and be used for storing and pouring out one glass at a time. Or, once chilled, insert a straw and voila a super-sized ice tea for those hot days.

iLIDS come in wide mouth and regular mouth sizes. I prefer the wide mouth because it's so much easier to drop in ice cubes or fruit. I have also found that these lids fit on many of the spaghetti jars that can be purchased at the grocery. The taller, thinner Classico jars are a great size for drink jars. 

While preparing to write this review, I have learned that in addition to the drink lids with the sliding opening, iLIDS offer storage lids and sports drink lids! 

I began using jars for drinks around the time I began making my own iced coffee to reduce the cost of buying my daily ice coffee at a drive-thru. I also prefer to reduce trash waste by avoiding the use of single-serving items (such as Kcups) when I can.

  • resistant to staining (I'm not sure how but my oldest iLIDS have zero tea, coffee, or berry juice stains)
  • reduces costs of buying drinks outside the home and reducing waste of single serving drinks
  • many colors to choose from
  • different styles of iLIDS to choose from (drink, storage, and sports drink)

Review of a Microwave Omelet Maker That Makes Perfect Omelets

I recently reviewed the Nordic Ware Microwave Egg Poacher which we loved so much that I immediately ordered two Nordic Ware Omelet Makers.  

I would be the first to admit that I am not really crazy about breakfast.  I don't wake up hungry.  It is usually lunchtime before I start to feel the desire to eat anything.  However, my husband loves breakfast and traditional breakfast food.  As often as not, he will either eat breakfast with Merlin or I will sit at the table with him and nibble on toast with coffee.  

The egg muffins we made with the egg poacher were so delicious that I decided breakfast might be something I could enjoy, especially since they are so easy to make.  The promise of a homemade omelet was enticing.  Omelets are something I usually only eat when we travel. Some of the hotels were we have stayed had chefs that made them to order and I always enjoyed them, but never really got into making them at home. Now, with the Nordic Ware Omelet Maker, that has changed and we can have easy to make homemade omelets with ingredients that we individually prefer.

Breakfast, here I come! 

 

How to Make Omelets with the Nordic Ware Omelet Maker

It is fun to assemble an omelet made with ingredients you love.  I prefer adding ham and cheese to mine, while my husband adds vegetables to his.  Since we each have our own omelet maker, we assemble them separately while spending time together in the kitchen.  

My first attempt to make a ham and cheese omelet turned out to be the best omelet I have ever eaten.  By following the instructions that came with the omelet maker, my eggs were perfectly cooked and the cheese was completely melted.  I used 2 eggs for my omelet.

My husband added ham, mini sweet peppers and fresh parsley to his omelet. He used 4 eggs to make his omelet, therefore his took a few minutes longer to cook.  He also buttered his omelet pan before he started.  I did not butter mine and I could not tell a difference when sliding the cooked omelets from the pans.  However, as the pans age and go through many washes, butter may be necessary.

Here are the Cooking Instructions

  • Lightly beat 2-4 eggs and 2 Tbsp of water or milk - We beat our eggs in a measuring cup and we both opted for milk. 
  • Pour mixture into omelet pan, dividing equally between the 2 sides - The measuring cup made equal division easy! 
  • Place open pan in microwave and cook for 1 to 2 minutes - I cooked my 2 eggs for 1 minute and my husband cooked his 4 eggs for 2 minutes  
  • Remove the omelet maker from the microwave and stir the eggs from the outside to inside - the center was still liquid and the edges were firmly cooked so the firm section was blended with the liquid section.
  • Place desired toppings on each half - we also seasoned our eggs with salt and pepper
  • Cook until eggs are set; 60-90 seconds - I cooked my 2 eggs for 60 seconds & my husbands 4 egg omelet had to be cooked approximately 2 minutes
  • Remove from the microwave and fold pan in half so the 2 side form the whole omelet.  
  • Open the pan and gently slide your cooked omelet onto the serving plate.

These microwave pans are dishwasher safe on the top rack and I did initially wash ours in the dishwasher.  However, in the future, I will most often hand wash them to ensure a longer life.  Being able to put them in the dishwasher does make them more convenient to use!

How to Make Refreshing Vanilla Italian Soda (With or Without Cream)

Couldn't you go for a chilly, refreshing, nonalcoholic beverage to help keep you cool and hydrated during the dog days of summer (or any time)? This quick and easy Italian vanilla soda recipe reminds me of the lovely, lightly sparkling cold drinks we enjoyed many years ago during our honeymoon in Italy. It can be made with regular or sugar-free vanilla syrup and with or without a splash of heavy cream (Italian Vanilla Cream Soda) and takes less than a minute to prepare. The sugar-free version of this recipe is also low carb and keto friendly.

This post includes not only the Italian Vanilla Soda recipe, including the Italian Vanilla Cream Soda variation, but also a product review of the delicious ChocZero sugar-free vanilla syrup I prefer to use when preparing this delightful cold drink recipe.

Homemade Vanilla Italian Soda Regular or Sugar-Free
This delicious Italian soda is light, refreshing, and can be made with regular or sugar-free vanilla syrup and with or without a splash of heavy cream.

Choosing Your Ingredients

Vanilla Syrup Options

You can make this delightful cold drink with a conventional commercial vanilla syrup, such as Torani Puremade Vanilla Syrup, DaVinci Gourmet Classic Vanilla Syrup or Monin Vanilla Premium Gourmet Syrup, if you aren't avoiding sugar.

Sugar-free vanilla flavoring syrups are also an option, and the one I prefer. While there are several widely available brands of sugar-free flavoring syrups on the market, most include questionable ingredients that can be detrimental to your health. For example, Jordan's Skinny Syrups vanilla syrup contains cellulose gum, sucralose and acesulfame potassium; Starbucks Sugar-Free Vanilla Syrup contains maltodextrin, cellulose gum and sucralose; and Torani Sugar-Free Vanilla Syrup contains acesulfame potassium and sucralose.

Italian Sparkling Mineral Water

When my order of the new ChocZero sugar-free vanilla syrup arrived, the first thing I did was to add it to some club soda, since I had some in the fridge.

It was tasty, but definitely not similar to the lovely cold drinks we remembered from our trip to Italy. Also, my husband isn't crazy about most carbonated beverages (or, at least, about his body's reaction to them) and he had asked me to suggest non-carbonated, sugar-free cold drinks he could enjoy during the summer other than lemonade.

So, thinking about the Italian sodas we had enjoyed during our honeymoon, which were far less carbonated than conventional sodas, I decided to try to recreate one by mixing the ChocZero Vanilla Syrup into some chilled Italian sparkling mineral water. What a difference! My husband loved it and didn't have a bad reaction to it, as he does to conventional carbonated drinks. Success!

You can use any genuine Italian sparkling mineral water, such as S. Pellegrino Sparkling Natural Mineral Water or Whole Foods Market Italian Sparkling Mineral Water for the authentic Italian flavor and carbonation level.

Optional Cream

I find this cold drink much more refreshing during the summer without the optional addition of a splash of heavy cream, but I enjoy the added richness of the cream during the colder months. Try this recipe both ways and see which way you prefer. With the addition of the cream, this drink is often called an Italian Vanilla Cream Soda.

Extra-Tall Pilsner Glasses for Serving

During the hot weather, it's important to stay hydrated. This Italian vanilla soda recipe is a delicious way to get in extra water! So, I like to make a large, 16-ounce serving and serve it in an extra-tall Pilsner glass.

I find that the curved shape and narrower bottom of these Pilsner glasses make it much easier to hold a very tall drink much more comfortably and securely versus tall, large-capacity cooler drinking glasses with straight sides.

Our glasses were purchased many years ago and are no longer available, but these attractive Libbey Giant Wheat Beer Glasses with a 23-ounce capacity are very similar to ours and have enough room to add ice to your beverage, if desired.


Vanilla Italian Soda Recipe

Italian Vanilla Soda with bottles of ChocZero vanilla syrup and Italian sparkling mineral water

Prep Time: 1 minute

Total Time: 1 minute

Servings: 1 serving

Ingredients

16 ounces Italian sparkling mineral water, thoroughly chilled

3–4 tablespoons regular or sugar-free vanilla syrup for flavoring beverages, such as ChocZero Vanilla Syrup

3–4 tablespoons heavy cream, chilled (optional, for Vanilla Italian Cream Soda)

Instructions

  1. To make Vanilla Italian Soda, pour the chilled Italian sparkling mineral water into an extra-tall Pilsner glass or cooler glass. Stir in the vanilla syrup to taste.
  2. To make the Vanilla Italian Cream Soda variation, follow the instructions for Italian Vanilla Soda, then pour the heavy cream over the prepared soda. You can stir in the cream or just leave it at the top, whichever you prefer.

The Best Quick & Easy Low Carb Sausage and Ricotta Calzones

Last month, I was watching an old episode of Chopped on The Food Network and my mouth started watering when I saw one of the chefs in the competition use the crazy basket ingredients for one of the courses to make delicious calzones. Then, my friend Sam Monaco published his easy homemade calzones recipe here on Review This Reviews. I guess I had calzones on the brain, because the next time I reached for my Scotty's Everyday Keto Pizza Crust Mix to make pizza, I decided to try using the zero carb pizza crust mix to make low carb calzones instead. 

I decided to fill the dough with ricotta, mozzarella and Parmigiano Romano cheeses, precooked sausage and herbs and serve the calzones with a good quality jarred pizza sauce as a dipping sauce. They turned out to be a big hit with both my husband and me. They also reheat well and we discovered that the leftovers are even good cold, which is great for a quick and easy hot weather dinner without turning on the oven.

I've provided both the low carb sausage and ricotta calzones recipe and variations for those of you who either don't follow a low carb or keto diet or who may be watching your calories and fat intake. And you can easily use regular pizza dough with wheat flour, if you aren't watching your carbs.

Low Carb & Keto-Friendly Sausage & Ricotta Calzones -- Quick & Easy
Using Scotty's Everyday Keto Pizza Crust Mix with 0 net carbs makes this low carb sausage and ricotta calzones recipe quick, easy and keto diet friendly!

The Best Quick & Easy Low Carb Sausage and Ricotta Calzones Recipe

Low carb sausage and ricotta calzone

Using my favorite 0 net carbs keto pizza crust mix makes this recipe quick and easy to prepare so you can get this yummy dinner on the table in less than 40 minutes. It's a real treat for carb lovers who are watching their carbs, and it's also easy to adapt to make it lower in calories and fat.

You can also substitute conventional store-bought pizza dough if you aren't counting carbs, so it's a great recipe for everyone at your table.

Prep Time: 20 minutes

Baking Time: 18–20 minutes

Tools, Supplies and Equipment

*When making low carb sausage and ricotta calzones, you can't use wheat or semolina flour (which is high in carbs and can spike insulin levels) to keep the dough from sticking as you roll it out. I have tried substituting almond flour or coconut flour, but it doesn't work well. A lightly oiled silicone pastry mat is the best rolling surface I have found for working with keto dough.

    Ingredients

    Filling:
    • 12 links Applegate Naturals Classic Pork Breakfast Sausage (or other sausage of your choice)
    • 1 cup whole milk (4% fat) ricotta cheese (I recommend Maplebrook Farms brand)
    • 1/2 cup freshly grated Parmigiano Reggiano cheese
    • 4 ounces finely shredded mozzarella cheese
    • Fresh or dried herbs to taste (I love Penzeys Greek or Italian Herbs for this recipe)
    • 16 pitted black Greek olives (I use Divina organic kalamata olives), coarsely chopped
    Crust:
    Assembly:
    • 2 tablespoons extra virgin olive oil
    • Water
    Dipping Sauce:
    • 1 cup Primal Kitchen unsweetened pizza sauce (Rao's and Yo Mama's are also good low carb, keto friendly brands of pizza sauce)

    Directions

    1. Place the pizza stone in the oven and preheat to 425 ℉. Line the rimless cookie sheet with parchment paper and set aside.
    2. To make the filling, pan fry the sausage links according to directions in a nonstick pan, then halve each link lengthwise and slice. (Alternatively, crumble and brown bulk Italian sausage.) Add to a mixing bowl along with the ricotta, Parmigiano Reggiano, finely shredded mozzarella, herbs and chopped olives and mix to combine. Cover and set aside.
    3. To make the dough, add the keto pizza crust mix, water and 1 tablespoon of the olive oil to the bowl of a stand mixer. Use the paddle attachment to mix at low speed until the dough comes together. Scrape the bowl and the paddle attachment, replace the latter with the dough hook attachment and let the mixer knead the dough for about 3 minutes until it is uniform and smooth.
    4. To assemble, use 1 tablespoon of the oil to grease the silicone pastry mat. Divide the large ball of dough into four pieces and roll each piece into a smooth ball. Roll out each ball thinly. Place 1/4 of the filling mixture along the center of one half of the dough, leaving a margin of dough around the rim. Moisten the rim with water, fold the dough over the filling and press the moistened edges together firmly. Use the extra-wide turner to help you carefully lift and transfer the calzone onto the parchment-lined cookie sheet. Repeat with the three remaining balls of dough and the rest of the filling. Use your fingers to spread the remaining tablespoon of olive oil over the tops of the calzones.
    5. Open the hot oven and, using potholders to protect your hands, carefully slide the parchment paper with the calzones onto the preheated pizza stone. Bake for 18–20 minutes, or until the bottoms are nicely browned and the tops are baked through.
    6. Put 1/4 cup pizza sauce in each ramekin and serve with baked calzones.

    Serving Suggestion

    I enjoy serving these low carb sausage and ricotta calzones with either a side salad of fresh greens or just some micro greens, as shown here.     Nutrition Information

    For those of you who are counting calories or carbs or tracking macros on a low carb or ketogenic diet, these generously-sized low carb sausage and ricotta calzones each have 691 calories, 54.3g of total carbs, 46.3g of fiber, 8g of net carbs, 35.1g of protein and 51.1g of fat.

    Variations for Conventional, Low Calorie or Low Fat Diets

    If you're not worried about calories, carbs or fat, you can easily substitute homemade or ready-to-use pizza dough, your favorite sausages (Italian would be great) and your favorite pizza sauce. You could also roll out your dough on a board sprinkled with semolina and bake on a semolina-sprinkled pizza stone. 

    To reduce fat and calories, you could try substituting low fat ricotta (although the filling might be a bit watery) and substitute Applegate Naturals Chicken & Sage Breakfast Sausage links.

    Terrific High Protein, Sugar-Free Rocky Road Cottage Cheese Ice Cream

    Cottage cheese ice cream is an increasingly popular trend, and for good reason. We're learning more and more about the importance of prioritizing protein in a healthy diet and for muscle building, fat loss and weight loss. After reading several popular recipes, I decided to develop my own delicious sugar-free, high protein cottage cheese ice cream recipe in one of my favorite flavors, Rocky Road.

    In addition to being a decadent, silky, rich chocolate ice cream, it's also low carb and sugar free. As a bonus, it has a silky smooth texture with a base that doesn't require cooking or churning in an ice cream machine. Just process the base ingredients in a food processor, freeze partially, stir in the add-ins and finish freezing.

    • Quick and easy to make. The ice cream base takes just minutes to whip up in the food processor. Other than stirring in the Rocky Road mix-ins (mini marshmallows, chocolate chips and nuts), the rest of the time is just waiting for it to freeze.
    • No ice cream machine required. The only equipment you need is a food processor.
    • Rich, silky-smooth, creamy, no churn ice cream. Even though this ice cream doesn't need to be churned, it's rich and creamy (thanks to the whole milk cottage cheese with 4% butterfat) and has a silky texture. Also, unlike most sugar-free ice cream (both commercial and homemade), it's soft enough to scoop straight from the freezer without setting it out on the counter for 10 minutes or so.
    • Rich chocolate flavor. The combination of my favorite unsweetened cocoa powder and chocolate whey protein, plus a bit of salt, provide the rich chocolate flavor in the base.

    You would never guess this delectable Rocky Road ice cream recipe is made with cottage cheese and sugar-free maple syrup, mini marshmallows and chocolate chips and packs 17.4g of protein!

    High Protein, Sugar-Free Rocky Road Cottage Cheese Ice Cream

    Serves: 8 generous portions

    Ingredients

    Ice Cream Base:

    16 ounces (2 cups) whole milk (4% milkfat) cottage cheese, large curd (preferably organic)

    3/4 cup sugar-free Wholesome Yum Keto Maple Syrup sweetened with monk fruit and allulose

    1 tsp. vodka (optional but recommended, to keep the sugar-free cottage cheese ice cream scoopable straight from the freezer)

    4 scoops Perfect Keto Chocolate Whey Protein Powder (can substitute another brand, but it will affect the amount of protein per serving and may affect taste and texture)

    3 Tbsp. Ghirardelli Majestic Premium unsweetened cocoa powder (can substitute another high-quality, Dutch processed unsweetened cocoa powder, but it will affect the taste)

    1/4 teaspoon salt

    Mix-Ins:

    2 ounces ChocZero Mini S'mallows sugar-free mini marshmallows (or use regular-sized ChocZero S'mallows sugar-free marshmallows and snip them into quarters with a pair of kitchen shears dipped in water)

    112 grams of Lily's No Sugar Added, Stevia-Sweetened 55% Cocoa Dark Chocolate Baking Chips or ChocZero Dark Chocolate Baking Chips

    2 ounces walnut halves or pieces, broken into small pieces

    Tools, Supplies and Equipment

    Food processor

    Silicone scraper spatula

    Approximately 5-cup freezer-safe airtight food storage container (my 4.7-cup Rubbermaid Brilliance Food Storage Container fit this ice cream recipe perfectly; the less air space above the ice cream, the less chance of freezer burn)

    Directions

    1. Place the ice cream base ingredients (cottage cheese, keto maple syrup, optional vodka, chocolate whey protein powder, unsweetened dark cocoa powder and salt) into a food processor. Process until silky smooth with no lumps, scraping the bottom and sides of the bowl once or twice.

    2. Scrape the ice cream base into the freezer-safe, airtight food storage container and freeze for 2–3 hours.

    3. While the mixture is in the freezer, weigh out the mix-in ingredients (sugar-free mini marshmallows, dark chocolate chips and walnuts). Break the walnuts into small pieces. Set aside the mix-ins.

    4. After 2–3 hours, remove the container from the freezer, open it and stir the mix-ins into the chocolate ice cream base thoroughly. (Take care not to spill any of the mixture over the sides, since there will be only a small amount of headroom between the mixture and the top of the container walls.)

    5. Re-seal the airtight container and return it to the freezer for at least 4 more hours.

    6. Divide into eight portions and serve.

    Don't Eat Sugar-Free But Still Want a Delicious Protein Boost?
