Luscious Low Carb Keto Triple Peppermint Cheesecake Brownies Recipe

Peppermint and chocolate are a flavor match made in heaven, especially around the holidays! These luscious, big, fudgy low carb peppermint cheesecake brownies feature a yummy a mint cheesecake swirl and are topped with a melted peppermint chocolate bar topping.

My new low carb peppermint cheesecake brownies recipe is so rich and decadent, no one will guess they are a keto friendly treat unless you tell them. You, your family and your holiday guests of all ages will love them! 

Here’s my review of this quick and easy low carb keto mint brownies recipe.

Triple Peppermint Cheesecake Brownies - Keto, Low Carb and Luscious

Although this image show them in an 8-inch square pan cut into 16 squares, which I did for the first batch, I now bake them in a 9-inch square pan and cut them into 20 rectangular bars (four "columns" and five "rows") for a larger serving, which is how I have written the recipe.

However, these are so rich that you can easily cut them into smaller portions and still have a very satisfying portion with fewer calories and carbs if you prefer.

How to Make Keto Triple Peppermint Cheesecake Brownies

Makes 20 brownies.

Tools, Supplies and Equipment

9" square pan (I love my heavy-duty USA Pan Bakeware 9-inch Square Cake Pan, Nonstick & Quick Release Coating)

If You Care unbleached baking parchment

Electric mixer with mixing bowl

A second mixing bowl (I used the 3-quart bowl from my OXO Good Grips 3 Piece Stainless Steel Mixing Bowl Set with non-skid bottoms, which I love)

Silicone spatula

Table knife (for swirling the cheesecake and brownie batters)

Cooling rack

Aluminum foil

Ingredients

Butter or coconut oil (to grease the corners of the pan and the baking parchment)

For the peppermint cheesecake batter: 

8 oz full fat cream cheese, softened 

1 egg, room temperature 

3/4 teaspoon Watkins pure peppermint extract 

3 tablespoons BochaSweet sugar replacement granulated sweetener (my favorite, but often out of stock) or Swerve granular sugar replacement 

For the chocolate fudge brownie batter: 

1 bag Good Dee's Soft Baked Keto Brownie Mix, Double Batch Bag 1 lb bag 

1 cup (2 sticks) Kerrygold salted butter (or other grass-fed butter), melted and cooled 

4 large eggs, room temperature 

1 teaspoon Watkins pure peppermint extract 

56g (132 chips) Lily’s peppermint white chocolate baking chips (no sugar added)

For the mint chocolate topping layer:

2.5 oz (70 g) bar of The Good Chocolate zero sugar 65% dark chocolate peppermint

Directions

Preheat the Oven and Prepare the Baking Pan.

  • Preheat the oven to 350 °F.
  • Cut two lengths of unbleached baking parchment to fit the 8-inch square baking pan, leaving at least one piece long enough for the ends to hang over the edges of the pan. (I like to cut both pieces long.) The overhanging ends will serve as handles to help you lift out the baked and cooled brownies.
  • Grease the corners of the pan and the baking parchment (excluding the overhanging flaps) with butter or coconut oil. Set the prepared pan aside.

Make the Peppermint Cheesecake Batter.

  • Put the softened cream cheese into the bowl of the electric mixer and beat until soft and smooth, scraping the bottom and sides often with the silicone spatula.
  • Add the egg, peppermint extract and BochaSweet sweetener. Beat on medium speed until well blended. Set the peppermint cheesecake batter aside.

Make the Peppermint Chocolate Chip Brownie Batter.

  • Empty the 1-lb. bag of Good Dee's Soft Baked Keto Brownie Mix, Double Batch into the second mixing bowl. Stir in the melted and cooled butter with the silicone spatula until well combined. 
  • Stir in the 4 eggs and peppermint extract until well blended. (Do not beat, whip or overmix the brownie batter.)
  • Stir in the peppermint white chocolate baking chips.

Layer and Marble the Brownie and Cheesecake Batters.

  • Spread half the chocolate brownie batter in an even layer in the prepared pan. Top with half the peppermint cheesecake batter, dropping it onto the brownie batter layer in large, evenly spaced dollops.

  • Scrape the remaining chocolate brownie batter into the pan, covering the peppermint cheesecake batter without disturbing it too much.

  • Then, drop dollops of the remaining peppermint cheesecake batter over the top. If possible, try to stagger the locations of these dollops to place them in between the previous cheesecake dollops. (If you can’t tell where the lower dollops are when they are covered by the brownie batter, no worries!)

  • Swirl a table knife through all four layers of batter so it’s loosely marbled, taking care not to mix the batters too much. You want the chocolate brownie batter to remain brown and the peppermint cheesecake batter to remain white as much as possible.

Bake the Brownies and Add the Mint Chocolate Topping.

  • Place the pan in the preheated oven and bake at 350 °F for 30–40 minutes, just until the center tests almost done with a toothpick. The brownies will continue to bake in the hot pan as they cool.
  • As soon as the brownies test done, move the pan to a cooling rack.
  • Immediately unwrap The Good Chocolate dark chocolate peppermint bar and break it along the score lines into six squares. Place the chocolate squares on top of the piping hot brownies, spacing them evenly about 1.5 inches away from the edges of the pan.

  • Carefully lay a sheet of aluminum foil over the top of the hot pan, tenting the foil loosely so it doesn’t touch the surface of the chocolate. Do not try to crimp/seal the edges of the foil to the edges of the pan.
  • Remove the foil after about 15 minutes and set it aside. Carefully spread the melted chocolate over the brownies in a thin, even layer.

Finish Cooling, Chill Briefly and Cut Into Squares.

  • Allow the brownies to continue cooling in the pan on the cooling rack for at least an hour.
  • Cover the cooled pan of brownies with the reserved foil and place it in the refrigerator for 60-90 minutes, just until the surface of the mint chocolate topping layer firms up.
  • Use a spatula to loosen the parchment from the edges of the pan, if necessary. Run a sharp knife under hot water and immediately wipe it dry, then use the warmed knife to slice through just the hardened mint chocolate coating layer to score it into 16 squares, as shown. Then score a line down the center of each square to make 32 rectangles (not shown).
Note: The photo shows the dark chocolate peppermint candy bar coating scored into 16 squares, which is how I had cut them before I photographed them. Once we tasted them and realized just how rich these brownies are, we subsequently decided to cut each big square in half to make narrower brownie bars.

  • Use the overhanging baking parchment paper handles to lift the uncut brownies out of the pan and onto a cutting board. 
  • Using the scored lines in the chocolate coating as a guide, cut the brownies into 32 pieces.
  • Place them in a covered food storage container, layered between waxed paper or parchment paper, if necessary, and refrigerate until ready to serve.

Reviewing Oats Overnight Flavor and Subscription

I am not a fan of subscription boxes. And I didn't think I was a fan of making oats in the fridge overnight for breakfast. Yet, here I am recommending Oats Over Night. Why? I am finding that the flavors are fantastic and having Oats Over Night brand meals at my fingertips has been very helpful. And I am very sure that the Oats Over Night meal is far healthier than the daily drive-thru choices I've been making. Did I mention that the Oats Over Night flavors are delicious?



My first few attempts at making overnight oats were failures. I made them with packets of my favorite brand of instant oats and I used milk. I also tried it with oats that are meant to be cooked when I was going on a camping trip and the oats would be soaking in a jar, in a cooler, for a longer period of time. All of my attempts produced slimy, pasty results. Yuck. Maybe it was the milk. Maybe it was the instant oats. I don't know. But it was just gross.

I was very hesitant to try the Oats Over Night brand. They seem a bit pricey and I didn't want to pay that much for yucky goo. But I have to do something. I've gotten to the point that I'm using a lot of drive-thru meals or joining my co-workers for the pick-up "gas station food".  Those options are too many calories and frankly, turn out to be more expensive than that Oats Over Night. I finally gave in and ordered a box and I'm so glad I did.

Oats Over Night Brand

The brains behind Oats Over Night thought that DIY oats were great but the flavor was inconsistent from serving to serving. Brian began experimenting to get consistent flavors, delicious flavors, and a short prep time. After many failures, and oats that didn't taste good, Brian landed on what they consider "The best oatmeal in the world". I can't say that I disagree.

On the site you will instantly notice the reduced price, free shipping, and free shaker bottle for the first subscription. The reduced price made it easier for me to convince myself to give it a try. You choose the number of oatmeal packets you want (16 for example) then choose the combination of flavors you want to order.  That will remain your monthly subscription (minus the "first order offers") but it is super easy to change the flavors that you want to arrive each month.

As a subscriber you are able to choose flavors that aren't yet offered to the non-subscribers. You also receive samples of products in development. Usually, that is a new flavor. This month, the sample of the product in development is a protein coffee. 

I have read reviews that it is super easy to cancel your subscription. And/or put your subscription on pause until a certain date. I cannot testify to that as I have had no desire to cancel or pause. 

Oats Over Night Flavors

The flavors of these oats are amazing. I expected the flavors to be similar to the flavored instant oatmeal varieties at the store (which - the apples and cinnamon is one that I liked very much by the way). The flavors of Oats Over Night are so much fresher and without that "artificial flavoring" taste that I dislike so much. Clearly, the bits of fruit are dehydrated or have been freeze dried. The Bananas Foster flavor is one of my favorites so far. And there are actually chunks of banana in it. Which is great in my opinion, not-so-great if you aren't a fan of bananas. 

Another of my favorites is the Banana Bread (do you see a theme here?). The flavor is very much as though I added a slice of Banana Bread to a bowl of milk. Speaking of milk... I have problems when I drink dairy. So I use unsweetened Almond Milk for my Oats Overnight. 

There are many flavors to choose from and I am excited to try them all. 

As far as nutritional values, I will let you do  your research. It will depend which flavor you choose and which milk you use. I will say that these packets reportedly have 20g of protein.

Preparing Oats Over Night

While you can make Oats Over Night in the microwave and eat it without the wait, the idea is to have a grab-and-go meal.  The prep is super easy. Add 8 oz. of your milk choice (mine is unsweetened Almond Milk) to the shaker bottle. There is a line indicating 8 ozs. so there is no need for measuring. Then you empty the packet of Oats Over Night, screw on the shake bottle lid (make sure the pour spout is closed), give it a shake and let it sit in the fridge until morning. 

I am finding that I still REALLY like sausage and egg sandwiches for breakfast. So I've been prepping the Oats Over Night in the morning and placing it in the fridge at work. No more missing lunches because I'm too busy. And no more having my really boring (good - but boring) apples and cinnamon instant oatmeal. 

I will say that the main complaint I see about the Oats Over Night grab-n-go meals are that they are chunky for straws and too runny for spoons. It's very easy to adjust the milk to oats ratio to get a consistency closer to what you like. While I do use regular straws when I forget mine, I find that the wider and washable "smoothie" straws are perfect.

Delicious Blackberry Muffin Recipe Reviewed

Blackberry Muffin Recipe
Fresh blackberries are always an invitation to bake something delicious!  When I recently purchased some blackberries at our local farmer's market, I made Blackberry Muffins as soon as I got home.  Today, I am sharing my personal blackberry muffin recipe here so you, too, can enjoy this delicious treat. 

My recipe makes 18 muffins which seems like a lot at first glance. However, it didn't take my family long to devour these delicious muffins.  

For either of us, when we pair these muffins with coffee, we are in a breakfast feast heaven.  While I would normally say that the serving size is one muffin, in our home, the serving size is two or more muffins.  They really are that good!
 

The Muffin Batter & Muffin Tins 

This is a muffin recipe, not to be confused with cupcakes.  The muffin batter is thicker and won't pour like a cake batter.  I "spoon" my muffin batter into muffin tins.  I bake them in non-stick muffin tins, therefore paper liners are not required.  I do grease the non-stick tins with Crisco shortening and these muffins turn out easily.

 

My Blackberry Muffin Recipe

Prep Time Cook Time Ready In Yields
20 min. 20-25 min. 45 min. 18 servings

Ingredients 

    blackberry muffin recipe
  • 1¼ cups of sugar (plus extra for sprinkling)
  • 1/2 cup butter, softened  (extra for brushing tops)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 2 cups fresh blackberries  
  •  

    Directions

    1. Preheat the oven to 375° 
    2. Grease non-stick muffin tins with Crisco shortening
    3. In a large mixing bowl, cream sugar and butter together.  Beat in one egg at a time (adding a total of 2 eggs)
    4. In a separate bowl, combine the flour, baking powder and salt
    5. Gradually mix flour mixture into butter mixture alternating with milk & beating well after each addition.  
    6. Fold in Blackberries (do not use the mixer & beaters here)
    7. Spoon batter into greased muffin tins, approximately 2/3 full in each muffin cup
    8. Sprinkle tops with sugar
    9. Bake at 375° for 20-25 minutes, until a toothpick inserted in the center comes out clean
    10. Using a small silicone pastry brush, brush muffins with melted butter as soon as they are out of the oven and put back in the oven for 2 minutes 
    11. Let Cool for 5 minutes, remove from muffin tins & serve

Thanksgiving is historically the time for a great feast and celebration. Therefore, we have joined together to offer a fantastic "feast" of side dish recipes today on Review This. I asked my co-workers, which just happen to be an awesome group of writers and online contributors, to share their personal side dish recipes for Thanksgiving. They have been most generous and I am certain we have something here for everyone.

The "first Thanksgiving" in America was celebrated in 1621 and lasted for 3 days. Some of us have family, friends and guests who drive or fly long distances to spend 3 or more days with us during the Thanksgiving holidays. Therefore, we have 3 day Thanksgiving celebrations too, which means we serve multiple meals and we need a variety of recipes to see us through the festivities. 

 

Fruits First


A holiday would simply not be complete without the fruit dishes. They always round out a meal with a healthy treat for all of us, but for the Vegans and Vegetarians in our mist, they are a absolute must.

Cranberry sauce is often found on a traditional Thanksgiving dinner table.  However, Mbgphoto shares a recipe for her very own creation of Cranberry Applesauce that sounds out of this world delicious. Plus, I give you my very own submission for a Quick & Easy Fruit Salad recipe that my own family requests for every holiday.


 

Green Vegetables

Green vegetables are essential to a healthy diet, but for some reason, they seem to be the hardest to get people to eat, especially children.  Perhaps, these delicious recipes will help.






Rice Recipes


Rice is a staple food for many of us and while we are most content to eat it by itself, it is truly an excellent additive to many recipes.  Merry offers a recipe that includes rice.  It would be perfect side dishes for this Thanksgiving. 
 

 

Potato & Yam Recipes


All of my life I have considered potatoes and yams to be as "traditional" as the turkey when preparing the Thanksgiving dinner. The only question was which sweet potato casserole recipe to use. It seems like every member of our family has a different personal favorite potato recipe. As a result, we have actually started preparing and serving several potato recipes so everyone can enjoy their preference on Thanksgiving.  After seeing these recipes, we may well be having a few more on the table this year.

Delicious Extras


I am going to quote Margaret directly here because I don't believe I could say it any better any other way.  "These healthier candied walnuts or pecans make a wonderful, healthy holiday nibble (or any other time), and if they're chopped up they're yummy sprinkled on or tossed with nearly any Thanksgiving vegetable or side dish."

That one quote was enough for me.  I will be serving Margaret's candied pecans this year on Thanksgiving.  My whole family loves nuts!

Chocolate Fondue Review

Instant happiness, just add chocolate. So adding chocolate fondue to your dessert world means not only happiness but fun, too. I dipped into the melting pot of Web pages to find you lots of suggestions for chocolate fondue recipes, tips and ideas.

Dark Chocolate Fondue Recipe


Plain old chocolate is always delicious, but adding in some sophisticated extras can make your own fondue extra special. MSchindel found the The Best Chocolate Fondue Recipe for Dark Chocolate Lovers. Alright, I will admit it. This is one I am in love with. So I'm letting the secret out. It's honey and Cognac that makes this recipe extra special.

She gives us plenty of suggestions for making this chocolate fondue recipe a different but still special treat. It's a wonderful recipe for a romantic dinner dessert. It's a wonderful recipe for serving to guests. But, this is a chocolate fondue that any sophisticated taste will enjoy.

Chocolate and Hazelnut 


I'm not limiting my chocolate fondue choices to just Cognac though. How about some hazelnut liqueur? That's a special ingredient in BlueObsidian's Chocolate Hazelnut Fondue.

It's a simple recipe with plenty of taste. One worth serving to family and friends. She adds a nice selection of goodies to dip into that Chocolate Hazelnut Fondue. My favorite suggestion is fudge. Talk about a double whammy of chocolate. I think I'm in heaven!

Memorial Day is historically the date we set aside each year to honor and remember those who gave their lives for our country while serving in the U.S. military.  It is always observed on the last Monday in May.  The entire weekend before Memorial Day, families & friends all across the US gather together for parties and picnics.  We celebrate our freedom, our nation, the beginning of summer and the end of the school year.   We decorate with red, white & blue, we sing patriotic songs, we laugh, we love, we remember, and we eat


In preparation for the weekend of festivities, the contributors of Review This sought out some great recipes for Memorial Day to share.  Today, we will start with the main course.  


Recipes for the Grill


The days that fall right between spring and summer make the perfect time for an outdoor party.  As a few of the grilling experts gather around the grill, the rest of us mingle, laugh and enjoy tasting the appetizers on the buffet table.

It is an afternoon full of fun and good food!

Memorial Day Recipes Cooked Inside to Be Served Outside


Picnics with family and friends are always great, but sometimes we want to be able to cook the main course ahead and serve it once the guests arrive.  That means no on has to actually man the grill during the party.

Here are a few Memorial Day recipes that you cook indoors, but can be served inside or out. These recipes are also very child friendly so you may want to include them even if you plan to grill too. 

 

A Fruit Treat for Our Vegan & Vegetarian Readers

We all have vegan or vegetarian family members or those who are on special health diets.  We certainly do not want them left out of the fun and food.  

You can create this beautiful fruit bowl by simply combining the red, white and blue fruits in a patriotic bowl. 

Blueberries, raspberries, strawberries and watermelon stars are the perfect combination!   They are also delicious added to lemonade, although you may prefer pineapple stars for the drink.  Either the fruit bowls or the patriotic punch served in a beautiful crystal pitcher would be a real crowd pleaser as well as a lovely presentation.

 Wilton Stars Nesting Metal Cutter Set

To Make the Pineapple or Watermelon Stars in the Patriotic Fruit Bowl or Lemonade

Simply cut them out with cookie cutters. 


I tend to prefer the metal cookie cutters when cutting fruit or cake simply because they have sharper edges.   With the Wilton metal cookie cutters, I get a nice sharp point at the tips of each of the stars.  Because this set comes with 4 cutters in the various sizes, it is really the perfect choice.  You can choose the actual size of the stars to fit the bowls or serving dishes you are using.  Because they nest, they are much easier to store.

One note:  If you are going to let little hands help you cut your fruit, opt for the plastic set of cookie cutters made by Wilton.  The edges of the cut may not be as precise, but the child's finger will be safe.
