Mom's Homemade Cornbread Recipe Shared & Reviewed

My Mom's cornbread recipe is still our family's traditional cornbread recipe.  It is very easy to mix together, yet consistently makes a delicious cornbread whether sliced or broken up for our holiday dressing.

Boxed cornbread mix, like cake mixes, has become popular because they are so convenient.  I would make the argument that once you add the oil, milk and egg into the box mix contents, you are already most of the way through the recipe to making a homemade cornbread.  We can definitely taste the difference.  Most boxed cornbread mixes have sugar in them.  We do not add sugar to our cornbread.

I am sharing my Mom's cornbread recipe below.  You can see for yourself that it really is just as easy to mix together as a box mix and a lot less expensive than many of the cornbread mixes on the market.

One note, Mom uses Pearl Milling brand and I use Martha White brand, but they taste the same to us.  If you want a sweeter taste, you can add a pinch of sugar to Mom's recipe.

 

Mom's Cornbread Recipe
Made in a 10.25" Cast Iron Skillet or 9" x 9" Baking Pan

Preheat the oven on 400° 

  • 2 Cups of Martha White or Pearl Milling White Corn Meal Mix - neither of these basic cornmeals have sugar added   
  • 2 Tablespoons Self-rising Flour
  • 1 Egg
  • 1 Cup of Milk

Stir all together to a cake batter consistency

Cover the bottom of the skillet with vegetable oil and heat it in the oven for about 3 minutes.  The oil will be very hot, so be careful 

Pour the oil into the mixture  (it may sizzle a bit as it touches the cold batter)

Stir the oil into the mixture, then pour the mixture into the hot skillet

Bake on 400° for 20 minutes

Make sure the cornbread is cooked completely by inserting a toothpick in the center.  If the toothpick comes out clean, it is done.  If not, cook for a few more minutes. 

 

I am sharing the Martha White Corn Meal Mix below for you to see, but it will be much cheaper in the grocery store than it is on Amazon. I do use my grandmother-in-law's cast iron skillet, but I purchased a Lodge cast iron dutch oven that is totally awesome. Therefore, I am comfortable recommending the Lodge cast iron skillet below if needed.

Our older dogs have always loved their Wubbas!  

When we recently decided to bring home a 10 week old puppy, my husband went shopping for puppy toys immediately.  Much to his delight, he discovered there are Kong Wubba toys made just for puppies.  Of course, he brought a small Wubba home for our puppy to celebrate his first day with us.  

We have now found that puppies love a small Wubba as much as older dogs love big Wubbas. 

Like human babies, puppies are precious, beautiful and easily lovable.  Puppies are also high energy and require a lot of playtime, which means a multitude of size/age appropriate toys.  If you don't provide the toys, they will find play pretties everywhere around your home.  Things like cords, socks, couch cushions, shoes, shoe laces, shirt buttons, or anything within their reach is too attractive for them to ignore.  

Keep in mind, puppies, like babies, are teething and they need to be chewing on something constantly.  Just looking around my kitchen, you might think I am spoiling our new puppy because he has at least 8 new toys suitable for puppy chewing on the floor.  When he tires of playing with one, he will grab a different one and chew until he tires of the feel of it in his mouth.  If he gets too bored, toes could easily become his next prey and those sharp, little teeth are truly like needles sticking you in 5 places at once.

His first toy turned out to be his favorite toy.  A brand new puppy-size Wubba!  It squeaks, it has flappy tails, and it makes the best catch toy.

 Kong Wubba Assorted Colors PuppyCheck PriceOne of the things I like best about the Kong Wubba is its strong, durable, washable fabric.  Puppies, and dogs, play hard.  Wubba often end up landing in water puddles or even mud.  Puppy toys must be washable. 

The small size shown on the right is the perfect size for a puppies mouth.  They would not be able to fit the larger Wubba (head) in their mouth for chewing or catching.

The flapper "legs" are shorter on the small Wubba too which allows the puppy more control over his toy and the Wubba is not oversized for him to easily carry.

One note of interest, Watson takes his Wubba to bed with him every night.  If he wakes up during the night, he has his favorite chew toy right next to him for night chewing as well as a comfortable companion.

An Autumn Visit to Veterans Tribute Park

Today is Thanksgiving Day in the USA and first of all I'd like to wish everyone a Happy Thanksgiving from the staff at Review This.  We thank each and every one of you for your support over the years.  Your support for Review This Blogs is what makes us successful.  Thank you!

Veterans Tribute Park

Last week I took a group that I mentor to take photographs at our local Veterans Tribute Park.  We had been there last May, and I wrote a review at that time.  I have listed a link to it at the end of this article.  We enjoyed the park so much that we decided we would like to go to it again in the autumn when all the fall colors would be out.  The week before we were to go, we had a hard freeze so many of the color was depleted and yet t
here were lots of beautiful scenes to photograph.  The day we went was a perfect day weatherwise and we enjoyed walking through the park and capturing the beauty of the season on our cameras.

 In this photo I was demonstrating to the group the use of natural framing of a subject by looking through the grasses to capture the lake in the background.

In this photo we zoomed in to capture the orange trees surrounding the lake.  You will note that many of the trees in the background had already lost their leaves, but it still gives a nice framing for the lake.

There was a bridge that went down toward the lake.  It provided a nice overlook to the lakes.  I showed everyone how when they turned around and showed the path going up to the lake it gave a leading line to the trees beyond.

Blessings for Thanksgiving~ From the Heart ~ A Reflection

 As we are moving to the end of the year faster than a speeding train, my thoughts and reflections seem to have taken a turn inwards.

Thanksgiving is just a day away and there is so much to be thankful for!

Here are just a few things that we should all be thankful for:

  • Family!  Yes even when they drive you crazy, you know that they are the ones that you can count on when you need an ear to listen, hands to help, and a loving response when times are troubled.
  • Friends! Sometimes friends are the family that we wish for and they will do everything in their powers to help you too!
  • Home!  It's that special place where you hang up your hat and coat, shake off the troubles of the day and relax.
  • Work!!  Sometimes we might not be thankful for this, but. really. we do like to be productive and accomplish things.  It helps us put clothes on our backs and food in our stomachs.
  • Children, they are the reason we do so many things!  They make us laugh and cry, puff out our chests in pride and sometimes challenge us.
  • Food!  So many sweet and savory dishes to tickle our palates.  
These are just a few things that we could focus on during our celebrations and I'm sure there are many many more!  I just focused on the immediate family, but we should also focus and our surroundings as well.

We are blessed to live in a country that gives us our freedom to do what our hearts desire.  We can travel, see things from around the world and experience many different customs and traditions.  We can speak our minds and dialogue with others even when we don't agree.  We can appreciate our differences and celebrate them!  

We are all different and yet we are all part of the human family.  How wonderful is that?

This Thanksgiving, let's all make it our goal to appreciate the wonderful things we have in this life and celebrate each other in our similarities and our differences.
