Delicious Sugar-Free Keto Cookies That OREO Fans Will Love

If you are following a sugar-free, low carb or ketogenic diet or just trying to cut down on sugar and empty carbs, either for overall health and wellness or for weight loss, there are certain comfort foods from childhood that you may crave but try to avoid in favor of healthier options. 

Fortunately, there are now several brands of low carb chocolate sandwich cookies available to OREO lovers who want to eat healthier. Today, I'll be reviewing HighKey Sugar-Free Sandwich Cookies, which have the best clean ingredients for someone on a low carb, gluten-free, sugar-free or keto diet.

My husband no longer misses his OREO cookies as much, now that I found these delicious low carb, gluten-free, sugar-free keto sandwich cookies for him. 

Who Loves OREO Cookies?

Before we switched to a low carb way of eating for health reasons, one of my husband's favorite treats were OREO cookies. In fact, "Double Stuf" OREO cookies (filled with twice the amount of vanilla creme filling) and mint Oreos were extra-special treats for him. But two Double Stuf OREOs have not only 140 calories but also 21g of carbohydrates (my entire daily carb allowance when I was following a keto diet for weight loss!), including 13g of added sugars. Even two classic OREO cookies have 110 calories and 16g of carbs, including 9g of added sugars. So, both Double Stufs and classic OREO cookies were no longer an option as a sweet treat for both my husband and me.

So the answer to "Who Loves OREO Cookies?" is our taste buds and our emotions but, sadly, not our bodies or our health.

What's a Health-Conscious OREO Cookie Lover to Do?

In order for our low carb lifestyle to be sustainable, we look for alternatives to our favorite treats that support our health and nutrition goals or, in the case of treats, at least don't sabotage them. That's why I got so excited when I started seeing low carb and sugar-free cookies similar to my husband's beloved OREOs. Then I started reading the ingredients and nutrition labels...and I got less excited. 

Thanks to the popularity of the keto diet, the term "keto" sells. Unfortunately, since there is no universally agreed-upon definition of a "keto diet" or a "keto" food (my post on Preparing to Succeed on the Keto Diet discusses this topic in more detail), marketers slap the "keto" label on anything that is low in net carbs, regardless of the quality or nutritional value of the ingredients. So, for those of us who are looking to make healthier food choices, it's up to us to educate ourselves about ingredients and nutrition and read packaged food labels carefully, and to experiment to find out which low-carb ingredients spike our insulin levels, cause gastric distress, etc., since each of us has a different metabolism and a different reaction to the same foods.

Three Low-Carb OREO Cookie Alternatives

I found three vanilla-filled chocolate sandwich cookies that looked similar to OREOs and claimed to be "keto" or "keto-friendly" and started reading and comparing the ingredients and nutrition labels. The three contenders were:

Why I Chose HighKey Sugar-Free Sandwich Cookies

Here are a few of the reasons I decided to order HighKey keto sandwich cookies as a healthier alternative to OREO cookies.

Only 2g of Net Carbs

As you can see, the HighKey Sugar-Free Sandwich Cookies have only 2g of net carbs, compared to 5g each for the Catalina Crunch Keto Friendly Chocolate Vanilla Sandwich Cookies and Rip Van LEOs Sandwich Creme Cookies.

Lower in Calories

Two of the HighKey Sugar-Free Sandwich Cookies have 60 calories, compared to 90 calories for two Catalina Crunch keto sandwich cookies and 100 for the Rip Van LEOs. 

No Added Sugars, Gluten-Free

The HighKey sandwich cookies use low glycemic sweeteners that don't spike blood glucose. Other than the white rice flour, which is gluten-free but can spike blood sugar levels, the ingredients are surprisingly clean for this type of low carb sweet treat.

By contrast, cane sugar is the fourth ingredient in the Catalina Crunch sandwich cookies. Since cane sugar spikes insulin and is something my husband and I try to avoid completely, that pretty much knocks these out of contention for us.

Similarly, the Rip Van LEOs sandwich cookies contain not only (cane) sugar but also wheat flour, neither of which ingredients are considered keto-friendly, although people who follow a "dirty keto" diet may not be bothered by this.

Not a Perfect OREOs Dupe, But a Good, Healthier Option

HighKey Sugar-Free Sandwich Cookies taste good, especially to those of us who have kicked our food addiction to cane sugar and wheat flour. However, they are by no means an exact dupe of classic, sugar-laden OREO cookies. 

The chocolate cookies are harder and don't soften as readily when dipped in regular or dairy-free milk. They are also more brittle and the filling is firmer, so you can't twist to separate the two chocolate cookies and lick off the creme filling, a favorite part of the experience of eating classic OREO cookies.

For us, and probably for many people who must eat gluten-free or sugar-free, the trade-offs are well worth it.

Cookbook Review - 5 Ingredients by Jamie Oliver

I recently purchased a cookbook that I'm very excited about. It is 5 Ingredients Quick and Easy Food by Jamie Oliver. 


Sometime during the past year I have seen Jamie Oliver on his cooking shows on television. He was a new name to me and I only had the show on as background noise. But he caught my attention during one episode when he ran tomatoes across the shredder leaving behind a seedless, skinless tomato pulp. He added his resulting tomato sauce to small pieces of crusty bread. I don't recall now what else he added to his tomatoes, perhaps cheese and herbs but I had to try it. I used the tomatoes as a dip for my bannock bread. It was so easy, fresh, and delicious that I looked forward to more new ideas from Mr. Oliver. 

5 Ingredients Quick and Easy Food Cookbook

5 Ingredients Quick and Easy Food is exactly that; a collection of recipes that require only 5 main ingredients. I am adding the word "main" because it ends up that you still need things like salt, pepper, cooking oil. But the shopping list truly consists of 5 ingredients. 

For example, I had the Sausage and Apple Bake this morning for brunch. The shopping list was apples, red onions, parsnips, small pork sausages, and honey. The prep was exceedingly easy, the aroma coming from my kitchen was wonderful, and I had a delicious one skillet meal.

I was unable to find parsnips. After a quick internet search I found the recommended parsnip substitutes and chose carrots. The recipe also used salt, pepper, olive oil, and a tablespoon of red wine vinegar (which I did have but in previously years I wouldn't have had on hand and I would have been irritated that this item wasn't listed more prominently in the ingredients list). Other than the parsnips (which are available here at certain times of the year), I can easily find all of the ingredients in the recipes that I've bookmarked for later.

Tomorrow I will make the Peachy Pork Chops which includes adding bourbon and lighting it. This will be my very first attempt at flambe. Wish me luck!  Fortunately, Mr. Oliver gives a super easy meal to try which includes only garlic, rosemary, porkchops, a can of peach halves, and bourbon which gives me the confidence to try.


The book itself is beautiful. The recipe is on one page and a photograph of the finished dish is on the facing page. It is full of recipes (approximately 300 pages of recipes) and a gorgeous photo for each dish. 

The introduction states:

"Quick & Easy Food focuses unapologetically on genius combinations of just five ingredients that work together to deliver an utterly delicious result, giving maximum flavor, with minimum fuss. These are dishes you can get on the table in 30 minutes or less; or that are ridiculously quick to put together with just 10 minutes hands-on time, while the oven or stove then does the rest of the work."

There is no false advertising in that statement. The meals are quick and easy. Just my style. Yet, flavorful enough to feel as though I am eating something completely new from my usual weekly menu.

I was fortunate to find my copy on deep discount at a discount store. But the book is widely available on Amazon and in book stores. Personally, I would not have spent the original $35. However, now that I own the book I believe it is worth every penny. If you are on a budget I think you can find it in your price range.

As I mentioned above, the "5 ingredients" seems to include the main ingredients. You will also need salt, pepper, oil, and other small items that seem to be in most pantries. This is addressed in the brief introduction. 

Are these meals as complex and flavorful as the multi-star, multi-course restaurants I've been to? No. And that's not the goal. But they are different and delicious flavors that are super easy for the most busy home cook.

I always like making things from scratch, but sometimes you just have to go with a box mix.

I wanted to make some banana bread but didn't have any ripe bananas. So I started looking through the cabinets and found this box of Krusteaz pumpkin spice bread.

Fran had picked this up at the store and thought it would be a good idea to make with the grandchildren.


Well, I guess I just couldn't wait so I went ahead and whipped this up. It was so easy to make and really moist and delicious. All you need is water, vegetable oil, and a couple of eggs. Stir everything together and bake in a 5-inch x 7-inch bread pan. Just follow the easy instructions on the box and you'll be enjoying this pumpkin spice bread in no time at all.

To be honest I've never heard of Krusteaz (Crust + Ease) before this. So I looked them up and found out that they have been around since 1932. Wow, where have I been?

The Krusteaz Story:

Times were tough during the great depression. A few women who always traded recipes together came up with a recipe for an easy-to-make pie crust and called it Krusteaz. They would go door to door and visit small cafes to sell their creation, and the rest is history. Today Krusteaz is still a family-owned business. 

They make a variety of easy-to-make bread and muffins, and I'm sure that they are all equally as delicious as this pumpkin spice bread. I will certainly be giving some of their others a try.

Dnsly Ultrasonic Toothbrush Set With Travel Case and Extra Brush Heads

I've been using top name brand ultrasonic toothbrushes with fancy features from Oral-B and Philips Sonicare for most of my life. A few months ago, however, I switched to this much more affordable and equally effective Dnsly ultrasonic toothbrush set with a choice of five brushing modes (White, Clean, Sensitive, Polish and Massage). It also has ultra soft bristles that protect my gums from erosion as well as compact brush heads and an interdental brush that make it easier to get into hard-to-reach spots.

My Top 3 Kitchen Product Reviews

I enjoy cooking and baking, but not washing dishes. Three of my favorite product purchases for 2022 were kitchen items that have made our time spent prepping, making good food and cleaning up more efficient and enjoyable.

The first was this fabulous three-tier 304 stainless steel dish drying rack that has gotten all our nonstick cookware, bakeware, oversized items (like the Vitamix blender jar and the large cake storage box in the photo) and other hand washable items off our countertops. (This large-capacity drying rack also comes in a smaller, two-tier version.)

We love the adjustable-height shelves and moveable accessories, such as the hanging hooks, utensil holder, cup hooks, soap/sponge tray and cutting board holder, that we can configure to our needs and preferences. With the limited counter space in our old galley kitchen, this over-the-sink dish drying rack has been a godsend! And the convenience of being able to simply hang items to drip dry after hand washing them means we save electricity by running our dishwasher less often.

This 15-piece set includes an acacia wood knife block fitted with a full set of the most useful kitchen knives, including an 8" chef knife, 8" slicing knife, 7" santoku knife, 8" serrated bread knife, 5" utility knife and a 3.5" paring knife; a set of six 4.5" serrated steak knives; a pair of kitchen shears with a handy built-in bottle opener; and a sturdy sharpening steel for honing the sharp, German stainless steel blades to keep them "in good nick."

Scotty's Everyday Keto Pizza Crust Mix With 0 Net Carbs Per Slice

My husband and I both love high-carbohydrate foods like breads, rolls, cookies, cakes and pizza. We have chosen to cut back substantially on both carbs and highly processed foods because of the health benefits we have both noticed when we eat a very low carb, largely whole food diet. Even though my husband is quite slim and has to make sure he eats enough calories to avoid losing weight, we both have experienced significant improvements in mental clarity and focus, reduction in joint pain and inflammation, and other health benefits by eating this way. However, neither of us is willing to give up our favorite foods, so I invest time and effort researching, trying out and evaluating healthy, low carb alternatives for foods like pizza crusts and burger buns.

I have tried several low carb pizza crust mix products and recipes, and one of my favorites so far is Scotty's Everyday Keto Pizza Crust Mix.

One of the reasons is convenience, since this mix calls for only olive oil and water, both of which we always have on hand. Others include speed (just mix, roll and bake), fairly clean, healthy ingredients), high in dietary fiber, low in calories and 0 net carbs per slice, and a surprisingly good taste and texture considering the nutritional profile.

This mix makes a pizza crust that, unlike some low carb options, is crisp on the outside, slightly chewy on the inside, and sturdy enough to pick up and eat with your hands. We love being able to eat pizza for dinner once a week again and have fun changing up the toppings to keep things interesting.

KetoBakes Best EVER Sandwich Buns Keto Bake Mix

Update July 2023: Sadly, KetoBakes has gone out of business. 

My husband makes the best burgers and, for many years, we have had a tradition of him making his special Friday night burgers (or, as we like to call them, Friday night "burglars") to celebrate the end of the work week and kick off the weekend. Although some people enjoy using lettuce as a burger wrap, we much prefer ours on a nice, soft, lightly toasted bun. Reviewing Popover Recipes - Easy and Delicious Baked Treats

Once I was served warm popovers at a brunch I was obsessed. I had to have more. I had to be able to bake my own. These small baked treats are great with soups, stews, quiches, roasts, and so much more. They are surprisingly easy to throw together and throw into the oven. And they only require 6 ingredients: flour, eggs, salt, butter, milk, and eggs. There is a good chance you've heard of popovers. But just in case you haven't I want to make sure to spread the word.

Earlier this year I was invited to a neighbors home for brunch. She served quiche and popovers. I had no idea what popovers were and when she shared what was on the menu I had a brief thought of "did she say PopTarts?".  It turns out that she did not say PopTarts. She was serving the most delicious quiche with these funny-looking biscuits called popovers. 

It is easiest for me to say that popovers are biscuits. They can be served in place of biscuits with breakfasts, roasts, soups, and stews. But for some reason, I want to call them a pastry. I don't know if baking experts would call them a pastry. But they are crispy on the outside while light and flaky on the inside. In fact, if you bake them on the shorter end of the recommended time, they are a bit like custard on the inside. 

The 6 Popover Ingredients

Popover recipes are all over the internet. They are basically equal (or almost equal) amounts of flour and milk. Added to 3 - 4 eggs, 2-3 tablespoons of butter, and a pinch of salt. The recipe I use is:

  • 1 c flour
  • 1 c milk
  • 3 eggs
  • 1/2 tsp salt
  • 2 Tbsp butter
Beat the ingredients until smooth. The batter is similar to pancake batter. You may think you've made a mistake and added too many wet ingredients. You haven't.

Martha Stewart uses 1 1/2 cup flour and 1 1/2 cup milk in her recipe. She also gives step-by-step instructions. Her recipe is here if you'd like to use that recipe. 

Popover Tips for Better Results


The same neighbor who served the popovers at the brunch also gave me a popovers pan. Popovers can be made in muffin tins but they do much better in a specific popover pan.

Spray just a small bit of cooking spray in the bottoms of the cups. 

Fill the popover pan cups only 1/2 full. They will rise and pop over the tops of the pans. If you are prone to overfill things, place the popover pan on a cookie sheet to catch any spillage. 

Hot oven. Popovers like 400 degrees or more. Some recipes call for a hotter over to begin with and lowering the temperature part way through. I don't mess with that. I do 400 degrees for 35-40 minutes. Remove the popovers from the pan as soon as they come out of the oven. 

The recipe I use makes almost 12 popovers. I tend to fill my popover cups slightly more than half. If I only filled them halfway the recipe would make 12 popovers. I also found that it makes it much easier to fill the cups using a glass measuring cup with a spout.

On the popover episode on America's Test Kitchen, they recommend bread flour and warming the milk and butter for better results.  I agree. When I remember to use bread flour and warm both the butter and milk (with the eggs at room temperature) I do have slightly better results. However, the recipe is forgiving. My neighbor sometimes uses almond milk and uses all purpose flour. I prefer whole milk and bread flour. 

Popovers are an excellent part of your daily menu and a wonderful item to serve to guests.

Happy Thanksgiving – A Holiday Menu Review

From the days of the Pilgrims Harvest Festival to today's modern celebrations, Thanksgiving Day is celebrated throughout America each year.

Thanksgiving became a National Holiday in 1863 when President Lincoln issued a proclamation. But actually, it wasn't until 1941 that Thanksgiving officially had the set date as the fourth Thursday in November. President Roosevelt officially changed the date of Thanksgiving in 1941 to be the second-to-last Thursday in November.

The First Thanksgiving was actually a Harvest festival held in Plymouth, Massachusetts in 1621. It was to celebrate a successful growing season and the menu included all the fresh vegetables harvested at that time.


History tells us that the menu included freshly killed deer, assorted wildfowl (including wild turkey), fish, and flint, a native variety of corn harvested by the Native Americans, which was eaten as corn bread and porridge. The harvest vegetables included onions,  peas, beans, squash, cabbage and carrots. 


*Note: Not served were potatoes, sweet potatoes, sweet corn or stuffing.

Today, our modern Thanksgiving menu traditionally consists of turkey, gravy, stuffing, potatoes, veggies, cranberry sauce, rolls, and pie. Although, many dishes are ever-changing because of current food trends and different dietary requirements.

A "Thanksgiving Dinner Menu," dated Nov. 26, 1942, included roast young turkey, chicken a la princess, cranberry sauce, oyster dressing, Russian salad, mixed candy, assorted nuts, pumpkin pie, cigars, cigarettes and café noir.


The menu even included a poem for inspiration:


"This is the table, lads, grab you a seat, 

Thanksgiving this year is Uncle Sam's treat;

The café noir

Is not rationed by far

And neither, my lads, is the meat!

So eat!"
