Extra Crispy Chicken Tenders

 These extra-crispy chicken tenders are so crispy on the outside and so tender and juicy on the inside. These are the perfect lunch, dinner or snack your family will love. What a great after-school snack for the kids.

With the busy schedules of everybody in the family, we have at least one meal together every week. A couple of weeks ago Fran made these delicious chicken tenders for dinner along with a salad. Everybody loved these chicken tenders, they were gone in no time at all. 

These are so easy to make in the oven, deep fryer, or in your air fryer. We used our air fryer, it's the healthier choice, and it's much faster. We used our Ninja Foodi Grill which is a combination grill and air fryer.

Extra Crispy Chicken Tenders - Ingredients

1 or 2 pounds of chicken strips

1 cup seasoned panko bread crumbs or 1 package extra crispy Shake N Bake

2 eggs beaten

Salt and Pepper to taste

Barbeque sauce or Ranch dressing for dipping

Beat the two eggs in a shallow bowl. Dip each chicken tender in the egg and then, coat the tenders with the bread crumbs. 

For the air fryer, spray the air fryer basket with cooking spray. Set the temperature to 400 degrees. Place the chicken tenders in the air fry basket at least 2 inches apart. If you overcrowd the basket, they won't be crispy. Cook the chicken tenders for 5 to 6 minutes per side until they are golden brown.

For the oven, Place the coated chicken tenders on a cookie sheet lined with tin foil. The tin foil will make it easy to clean up. Bake at 400 degrees for 30 minutes.

Make sure the internal temperature of the chicken reaches at least 165 degrees. I use my Thermo-Pro TP-18 instant-read thermometer. It's a good idea to have an instant-read thermometer handy for all of your cooking needs. 

Another thing that makes these so easy is that, you can buy the chicken tenders packaged and ready to cook at your local grocery store.

These chicken tenders are the perfect weeknight meal for the whole family. We enjoyed every single one of them.

By the way, the photo could have been better but everyone was sitting around the table waiting for me to take the picture.

Oven Baked Zucchini Sticks

 These oven-baked zucchini sticks are a great way to use the abundance of your zucchini crop. They make a perfect appetizer for any meal, or just have them as a snack.

These zucchini sticks or fries are so crispy on the outside and tender on the inside. Bobby and his girlfriend Abby made dinner the other night. They made these delicious zucchini sticks as an appetizer.

If you don't have a garden, just pick up a couple of medium-sized zucchini at the grocery store or your local farmers market. With a few more ingredients that most of us already have in the pantry, you'll be on your way to making this easy and tasty appetizer. 

Baked zucchini fries

First, peel and cut the zucchini in half. Then, slice them like french fries, about 3 to 4 inches long. This part was my job, Bobby and Abby did the rest.

Prepare zucchini fries

They set up a dredging station with flour, a beaten egg, and seasoned bread crumbs. First, the flour, then dip them into the egg, and then the bread crumbs. 

Baked Zucchini Sticks Ingredients:

2 medium size zucchini peeled and cut

1 teaspoon olive oil

1/2 cup all-purpose flour

1 large egg beaten

1 cup Panko Breadcrumbs

1 teaspoon paprika

1 tablespoon parmesan cheese

Salt and Pepper to your taste

Directions:

  1. Preheat oven to 425 degrees
  2. Peel and cut the zucchini into 3 to 4-inch pieces.
  3. In a flat dish add the flour, salt, and pepper.
  4. Beat the egg in a small bowl and mix with olive oil.
  5. In a flat dish mix the breadcrumbs, paprika, and parmesan cheese.
  6. Prepare a cookie sheet lined with parchment paper.
  7. Dip the cut zucchini into the flour, egg, and breadcrumbs and place on the prepared cookie sheet. Place them at least 2 inches apart.
  8. Bake for 20 to 25 minutes until they are golden brown.
Serve right out of the oven with your favorite pizza sauce or ranch dressing for a tasty appetizer or snack.

Fruit trays have been gracing event tables for many years. Whenever friends or family are planning a wedding shower, baby shower, tea, reception or party, I always volunteer to bring the fruit tray.

For decades, I have prepared Chocolate Covered Strawberries for my family. Purchasing chocolate covered strawberries from a candy store, can be very expensive. Making my own, is inexpensive and easy.

One day I was preparing a fruit tray for a gathering and I decided to take a side dish of chocolate covered strawberries as a special treat. I looked at the prepared fruit tray sitting next to the chocolate covered strawberries and I thought, "why not dip all of the fruit in chocolate?" That is how my chocolate covered fruit tray began. 

Over the next few days, I tested different fruits dipped in chocolate and allowed my family to be the judges. We have found that there are a lot of fruits that we love dipped or covered in chocolate.

This will probably be the first time you have seen some of these fruits covered or dipped in chocolate. After all, the day I prepared them, it was the first time I had seen most of them. 


Chocolate Dipped or Chocolate Covered Fruit Recipe


Preparation to cover any fruit in chocolate begins basically the same way.
  1. Wash and dry the fruit.
  2. Peel, if necessary.
  3. Melt the Chocolate

Some of these fruits have special instructions.

You may wish to visit the individual article for each one. Some articles have examples of large chunks fully covered in chocolate, as well as slices with dipped tips.


Virtually any fruit can be dipped or covered in chocolate. Let me know if you find one I haven't made or featured. I would love to try it!

Easy Snack - Ham Rolls on Celery

Healthy and delicious ham rolls on celery.
I haven't been eating as healthily as I should and I can feel it. This weekend I made a concerted effort to cut back on sugars, carbs, and caffeine. As a result, I ended up making this delicious, healthy, and EASY snack - ham rolls on celery sticks. I have always liked ham and cream cheese rolls, but this new twist on a favorite recipe was extra delicious and satisfied those cravings. 


4 Ingredient - Ham Rolls on Celery


This spicy, creamy snack is super easy to assemble and my version consisted of only 4 ingredients: celery, ham, cream cheese and sriracha

Ingredients:

  • 2 sticks of celery
  • 4 slices of ham 
  • cream cheese
  • sriracha


Assembly:

  1. spread cream cheese on a ham slice.
  2. roll the ham, jelly roll style
  3. wash the celery sticks, trimming the ends then cutting each remaining stick into 1/2. 
  4. place a couple of drops of sriracha in the celery stick 
  5. place the ham and cream cheese roll in the celery stick - on top of the sriracha 

add sriracha to your taste

I am not a nutritionist so I cannot instruct you on what includes healthy eating for you. But I do know with certainty, that overdoing it on carbs, sugars, and caffeine causes me problems. This snack helped me avoid the snacks that I wanted to avoid this weekend. And ended the cravings I was having for the sweets. 


Recipe Inspiration


My inspiration came from those cream cheese and ham rolls many of us have enjoyed at parties and celebrations. 

The Kraft version of the recipe is here. The Kraft version uses chives for the flavor kick, cuts the rolls into smaller sections, and places the pinwheel sections on crackers.

There are other variations of pinwheels, including rolling a pickle in the ham wrap with the cream cheese. I like the pickle version too and may pick up some pickle spears to give it a try on the celery sticks.
