Homemade German Chocolate Cake Recipe Reviewed

German chocolate cake is a unique and delicious cake.  A German chocolate cake is often easily recognized by the way it is frosted.  Traditionally, the sides of a German chocolate cake are not frosted.  The coconut-pecan frosting is only on the top and between layers.   However, when I make this cake for our family, I elect to put the frosting between layers, on the top and sides.  We like the extra frosting.  If I made the cake for a party, I would opt for the more traditional, recognizable method and leave the frosting off the sides.  

Baking any cake from scratch does take more time to prepare than a boxed cake mix.  Plus, you need more ingredients on hand.  Those ingredients often have a short expiration date and are likely to spoil before you use the full bottle, bag or can.  This alone may be why so many people choose to make cakes with a cake mix instead of from scratch.

When you have the time and inclination, a homemade cake from scratch truly is a gift, as well as a special treat.  My homemade German chocolate cake is the most requested cake out of all of my homemade cakes.

Set out your butter to soften about an hour before you are ready to start mixing the cake together.  I would also recommend lining your cake pans with parchment paper or pre-cut cake pan liners to keep your cake from sticking to the pan. 

Because there are several parts of this recipe made in separate bowls and later combined into one large mixing bowl, I use mixing bowls with spouts for easy pouring.   

I do use my stand mixer for this cake in order to free up both hands to hold bowls and/or spatulas when adding ingredients to the batter. 
  

Ingredients

  • 1 pkg. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate
  • ½ cup water
  • 4 eggs, separated
  • 2 cups & 4 Tablespoons cake flour or 2 cups of all purpose flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 1 tsp. vanilla
  • 1 cup Prairie Farms Bulgarian style buttermilk or whole buttermilk
 

Directions    

Cover bottoms of 3 (9-inch) round pans with parchment or pre-cut dry wax cake liners for pans; Coat bottom & sides with Crisco shortening. 

Heat oven to 350°F   (325°F – Convection) 

  1.  Microwave chocolate and water in large microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. 
  2.  Separate Eggs (Egg whites in the medium glass mixing bowl)
  3.  Combine flour, baking soda and salt in a separate bowl 
  4.  Beat butter and sugar in large mixing bowl with mixer until light and fluffy    
  5.  Add egg yolks, 1 at a time, beating well after each.    
  6.  Blend in melted chocolate and vanilla with the low setting on the mixer    
  7.  Add flour mixture alternately with buttermilk, beating until well blended after each addition 
  8.  Beat egg whites in glass bowl with a hand mixer on high speed until stiff peaks form 
  9.  Add egg whites to batter by gently stirring them in with a spatula until well blended 
  10.  Pour batter into prepared cake pans     
  11.  Bake 25 min. or until toothpick inserted in centers comes out clean 
  12.  Immediately run small spatula around cakes in pans and cool cakes in pans 15 min. 
  13.  Remove from pans to wire racks; cool completely.
  14.  Be sure to remove the pan liner parchment paper from the bottom of the cake layers before frosting.   
Prepare Coconut-Pecan Filling and Frosting; spread between cake layers and onto top of cake.

In my opinion, every day should be Pie Day, but let's review a few pie facts in honor of National Pie Day held each January 23rd.

Pie Day was begun in the 1970s in Colorado when Charlie Papazian declared his birthday to be National Pie Day.  Today 'Pie Day' is sponsored by the American Pie Council, which is an organization set up to preserve America's pie heritage and promote “America's love affair with pies”.

There are fruit pies and custard pies and cream pies, with apple pie leading the way.


A Few Pie Facts


You could go to Pie School to learn about pies, or you could learn a great deal by reading this Pie Post!


  • Nearly one out of five Americans prefer apple pie. Next favorite is pumpkin pie, followed by pecan, banana cream, and cherry pie.
  • Pumpkin pie was first introduced to the holiday table at the pilgrim’s second Thanksgiving in 1623.
  • When invited to a family or friend's house for a holiday dinner and asked what dessert we could bring, pie was the winner at 29%, followed by cake (17%) and cookies (15%). Surprisingly, ice cream wasn't in the top three spots.

SPECIAL PIE DAYS



In our own glad and fortunate country the seasons are known by their respective dominant pies—for each there is an appropriate pie, with apple pie for all the year round.... The perfect days of June welcome the lip-painting berry pies.... Then, as nature paints the forests with her magic brush, comes in the golden glory of the year, the royal pumpkin pie!

Besides National Pie Day celebrating all pies, we have individual days to recognize specific kinds of pies.

*There's Cherry Pie Day on February 20, naturally associated with President's Day due to the George Washington story of cutting down the cherry tree.  


Cherry Pie was my hubby's favorite and instead of a birthday cake for his birthday on February 23rd, we always had Cherry Pie!

*Apple Pie has it's own special day (Apple Pie Day) held on May 13.


Did you know that the first apple pie recipe was printed in England in 1381? 

*March 2 is National Banana Cream Pie Day

*May 8 is National Coconut Cream Pie Day.

My mother was not much of a cook (our dad did most of the cooking in our family), but she was a wonderful pie maker and coconut cream pie was my dad's favorite, so we had it often. Yum! 

*On July 12 we have National Pecan Pie Day, a true Southern favorite.

*National Lemon Meringue Day is held on August 15 and Peach Pie Day is August 24.

*September brings us National Strawberry Cream Pie Day on the 28th of the month.

*October 23rd is National Boston Cream Pie Day.

*November has two special 'pie' days: Bavarian Cream Pie Day  on the 27th and Lemon Cream Pie Day on the 29th.


National Pumpkin Pie Day



We tend to associate Thanksgiving with Pumpkin Pie, but the actual designated National special day for it is actually Christmas Day (December 25).   But pumpkin pie is also associated with Halloween as pumpkin is the symbol of Harvest Time.

Chocolate pie doesn't appear to have a designated day, but being MY favorite of all pies, it definitely SHOULD.  Any day is special to me when I can have chocolate pie! There IS a National Chocolate Pecan Pie Day on August 20.

There are also meat pies, especially popular in England and perhaps the forerunner of the original pie, and vegetable pies such as Sweet Potato Pie and Rhubarb Pie and Tomato Pie, but our focus today has been on favorite 'dessert' pies.

If you REALLY love pies, there is a special place for pie lovers.  It's called Pie Town, New Mexico, a small community that got its name from an early bakery for making dried-apple pies established by Clyde Norman in the early 1920s.   Located just north of the Gila National Forest, Pie Town has a population of 186 people.  A "Pie Festival" is held on the second Saturday of September which includes a pie-baking contest, games and races, music, food, and arts and crafts.

Photographer Russell Lee (working for the Farm Security Administration) photographed Pie Town and its people in 1940. In 2005, Lee's photos, and the local restaurant the Daily Pie Cafe were the subject of an article in Smithsonian magazine. CBS News Sunday Morning aired a story about the town in 2015.

Whichever pie is your favorite, you can find a whole lot of pie recipes (300)  in Pie: 300 Tried-and-True Recipes for Delicious Homemade Pie.

Rated near the top at #29 in pie cookbooks, this recipe book with the short title (PIE) is filled with 300 pie recipes for everything from fruit pies, berry pies, nut pies, custard pies, turnovers, and ice cream pies to the perfect pie crusts.  Author Richard Haedrich is a cooking teacher and cookbook author who compiled this Pie cookbook because of his lifelong passion--the making and baking of all manner of pies.


Besides January 23rd, we have December 1st also designated National Pie Day. With two national days and a host of days associated with individual kinds of pies, we will never be without an excuse to indulge this favorite dessert.

Plant Based Ice Cream Review

I had been trying to eat more plant based and began a journey of trying out different types of plant based ice cream. My first attempts on this journey left more to be desired. It just seemed like something was missing, but mostly, the types I tried were rather sweet to me.

I'll give you some background on that. I had been switching my preference for ice tea from sweet to fifty percent sweet, and then to three quarters unsweet and only 1/4 sweet. So I was becoming less inclined to go for anything overly sweet.

For the most part, dairy based ice cream did not seem overly sweet to me. Perhaps that was due to the ratio of fat to sweet. Since there wasn't much if any fat in the plant based ice creams, that might have been part of the reason for the extra taste of sweetness.

The types of the plant based ice creams that I tried, (ones I purchased from grocery stores), had a base of either soy milk, almond milk, coconut milk, and cashew milk. The first three plant based milks I tasted seemed very sweet, and they were from different brands. I was about to give up, and then I happened upon cashew milk based ice cream. It was the best. It had good ice cream flavor and wasn't overly sweet.

There weren't many flavors of the cashew milk based ice cream to choose from, but it did do in a pinch. I highly recommend the ones made with cashew milk. Perhaps the fat content in the cashews also helped with the flavor.

On with my ice cream journey:

I was also exploring various vegan type recipes on YouTube and found quite a few on making your own ice cream. I took the basics from what I learned from various recipes and decided just to give a go with the basics only. This is the recipe that I came up with.

Basic Plant Based Ice Cream Recipe

1 part frozen sliced bananas, 1 part fresh or frozen desired fruit, and 1/2 to 3/4 parts of plant based milk

Put all three ingredients in a good performance blender and blend.

It will come out more like soft serve ice cream. If you want it softer, add more of the plant based milk, and less if you want it firmer.

I used my Ninja Auto IQ Kitchen System blender when I am making enough ice cream for two or two plus. Sometimes the portions are larger, lol.

Here are some tips on using the Ninja Auto IQ Kitchen System:

+Plug the unit in once the base is secure on your counter, table. (It has suction feet.)
+Add the ingredients and attach the lid. +Push in the power button. The almost full circle with a vertical line at the top of the circle.
+Then selected the Smoothie button.
+The machine blends and pauses according to it's built in program. It will count down the seconds until it is completely done blending. (I love this part!)
+Almost done. Remove the lid then carefully lift out the blending blade unit. The blades are very sharp. Use a spatula to slide any ice cream into the blender and transport the blending blade to the sink.
+Rinse and then use a bottle brush, I use foam dishwashing liquid to spray it with, and proceed to clean using the bottle brush and the foam cleaner. Do Not Touch the Blades.
+I clean these blades off at this part so that everything comes off more easily. Then it's a breeze. The blender container and the blade assembly can also be washed in the dishwasher. I do it the way I previously described, so that water doesn't set in any of the insides. It's also pretty quick.
+Then, if the mixture is thick enough for ice cream, use a spatula to scrape out the goodness into your bowls or pour the liquid into your cups.

This particular batch turned out to be a milkshake batch! Yum!

The ice cream is fresh and tasty, and not overly sweet unless you add additional sweetener of some kind.

If you want to freeze this ice cream, it will come out really firm. You will need to let it defrost at room temperature for 20-30 minutes or more, depending on how much ice cream you are trying to thaw. I really do prefer enjoying it freshly made.

Does it matter which plant based milk to use?

I have used almond milk or oat milk. Those are my main go to's that I have on hand. I occasionally buy cashew milk if I know I am making mashed potatoes. There is only one store here that carries the cashew milk, so I make it with whatever I happen to have on hand. Any of the plant based milks that I have used have turned out well.

Biscotti are a nice change of pace for those who like sweets and snacks. The flavors are subtle so no need to be worried about being over powered by the flavors.

Holiday Cookbooks: Perfect for Mother's Day

Mother's Day is just around the corner, so now is the perfect time to pull out your favorite cookbook and plan a special treat for mom.  

If you or your mom love cooking for the holidays, or anytime, a holiday cookbook is also the perfect gift for Mother's Day.  I know I personally have a collection of specialty and holiday cookbooks that I absolutely love and frequently grab for reference.  I enjoy "pouring over a cookbook", as my own mother would say, reading recipes, making a grocery list and planning to try a new recipe.

Our very own pioneer woman, RenaissanceWoman2010, reviewed a fabulous cookbook for all of us recently in her article entitled, I'm Spending the Holidays with Ree.  I was so impressed by her review, that I simply had to purchase my own copy of The Pioneer Woman Cooks A Year of Holidays.

I have my own grandmother's Pecan Pie recipe that I use, but the recipe and featured photo were all I needed to see to know I had to have the cookbook!

The Pioneer Woman's Holiday cookbook is chock full of some great recipes and while I don't know Ree personally, I do know she will now be a part of my holidays too.

National Nut Day Review


We celebrate National Nut Day each year on October 22. This is NOT a story about squirrels, or about your nutty neighbor. It is a food holiday about a healthy and nutritious snack.

How Did This Holiday Begin?


National Nut Day was begun in 2015 by the UK-based Liberation Foods Company, a collective of small nut farmers around the world.  The company started this holiday as a way to encourage a healthy eating lifestyle.

Many kinds of nuts have been proven beneficial. It is nice to know that something that tastes so good, and comes in so many varieties, is also good FOR you.

A Few of the Best Mid-Atlantic Foods

Every region has their special foods and recipes.  When I think of shrimp, I immediately think of Louisiana. Cheese makes me think of Wisconsin.  Oranges come from Florida, of course.  I have known from early on that certain foods are special to certain areas. However, after moving to the mid-Atlantic region, I’ve realized just how passionate people are about their special foods.

One of my early Squidoo lenses was written as a result of strong craving for a regional food (Mary Sue's Pecan Nougat egg) and from the memory of seeing a thank you letter from a deployed person who had received Old Bay spice in their care package.  After seeing that letter, I had noticed others who bemoaned the difficulty of purchasing Old Boy, good crab meat, and other regional foods.  That prompted me to write an edible gifts lens consisting of Maryland treats.

When I move from Maryland someday, I can imagine myself begging friends and family (and perhaps strangers) to send me Mary Sue’s Pecan Nougat eggs every spring. My mouth waters every time I think of them.

While I do not consider myself a foodie, I do love trying new foods and adding new favorites to my list. I’m not a good cook but I love eating good food.  Have you ever heard the saying, “champagne taste on a beer budget”?  That describes me to some extent about food.  I love the taste of good food.

Blue crab is one of those “champagne taste” foods, in my opinion.  A properly cooked jumbo lump crab cake is divine. 

Crabbing in this area is almost considered an event.  Family members young and old enjoy crabbing.  People look at me with wonder when I tell them that I’ve never been crabbing.  Around here, it’s a bit like learning to walk.  Everyone does it.

There's More Than Crabs to Eat in the Mid-Atlantic.


While I could talk about crab cakes forever, there are other foods in the Mid-Atlantic region. Another food staple of this area are cheesesteak sub sandwiches.  They originated in Philadelphia and Joyful Pamela introduces us to the wonderful world of cheesesteak among other wonderful Philadelphia foods.  People here are passionate about their favorite place to get a cheesesteak sub and will debate for long periods of time about what makes theirs the best.  The Mister and I clearly have our favorite and eat cheesesteaks weekly. I guarantee it is something that one you have found your favorite, you will crave it frequently.

Now, if you will excuse me, I have to go. Since I’m finished photographing the Mary Sue egg, I can finally eat it.  I have waited for months for egg season and I can’t wait any longer.

A Review of Blue Bunny Ice Cream


I am not a big dessert eater, and am particular about the desserts I DO eat. Growing up, dessert was not a regular part of our meals, usually reserved for special occasions such as birthdays and holidays.

I am not fond of cake, except for falling in love with the recently discovered Chantilly Cake. My dessert preference is for pies (mostly cream pies such as chocolate), and ice cream.


When it comes to ice cream, I really only like vanilla ice cream plain, in a hot fudge sundae, or for the topping on warm apple pie. Plus, any ice cream with some type of nuts in it. 


My favorite ‘snack’ is an ice cream drumstick - vanilla ice cream in a sugar cone dipped in a chocolate coating and topped with peanuts.

Recently, I bought a brand I was not familiar with because it was on sale at my grocery store. It was the ‘best’ drumstick-style cone I have ever had. It is made by Blue Bunny, an ice cream brand I had seen in store freezers, but never tried.

This week I branched out and bought a tub of ice cream by Blue Bunny - the Caramel Butter Pecan Praline flavor. WOW! Unbelievably delicious! 


Blue Bunny has become my new favorite ice cream. It is SO creamy and rich tasting and far surpasses any other ice cream I have ever had.

Wells Jr.  and his sons and they delivered it to neighboring Iowa towns. In 1928, Fairmont Ice Cream purchased the ice cream distribution system in Sioux City, along with the Wells name.

In 1935, the Wells family decided to again sell their ice cream in Sioux City, but unable to sell their product under their own name, they decided to hold a “Name That Ice Cream” contest. The winning entry - Blue Bunny - was submitted by a Sioux City man who had noticed how much his son enjoyed the blue bunnies in a department store at Easter. 


By 1954, Fred Wells' sons, Harold, Mike, Roy and Fay, and their cousin Fred D. Wells, began running the family business as a partnership. It has become the largest family-owned ice cream company in the country.

According to what I learned in my research, I think the secret to the fantastic taste is the fact that Blue Bunny uses only high-quality ingredients, such as their locally-sourced fresh milk in their delicious ice cream. I must disclose that I have discovered that this ice cream is quite high in calories (200 calories per serving), which is a lot to devote to just dessert. But, oh, what a decadently delicious treat! Definitely worth tasting, even if only for special occasions. Pick up a pint at your favorite store and see if you agree. :)
