Coconut-Pecan Frosting Recipe for German Chocolate Cake or Cupcakes

I've been making homemade German chocolate cake for decades and it is the most requested cake for any occasion in our home, probably because they are not commonly available.  If you try to eat a store-bought German chocolate cake you would probably swear off of ever eating them again.  Store-bought does not compare to homemade!

I personally make both my cake and my frosting from scratch.  This is one cake and frosting that you are not likely to find in a box or can.  As a matter of fact, the one time I tasted coconut-pecan frosting in a can, I hated the heavy lard taste.  The word "gross" comes to mind.

Unfortunately, store bought cakes or pre-made frosting in a can will make you think you don't like German chocolate cake.  But, if you have never tried a homemade German chocolate cake, then you have never tried a real German chocolate cake.

You actually make coconut pecan frosting by cooking it on the stove top, like candy.  The pan matters.  You need a heavy pan that will hold heat.  I still use my grandmother's 4 quart Wagner Ware Sydney-O Magnalite pan (4684-P).  Do not use a pan with non-stick coating

 

INGREDIENTS

  • 4 egg yolks
  • 1 can (12 oz.) evaporated milk (shake well before opening)
  • 1½ tsp. vanilla
  • 1½ cups sugar
  • 3/4 cup butter
  • 1 pkg. (7 oz.) Baker's Angel Flake Coconut (2-2/3 cups)
  • 1½ cups chopped pecans

 

DIRECTIONS 

1) Finely chop the pecans 

2) Beat egg yolks, milk and vanilla in heavy saucepan with whisk until blended 

3) Add sugar and butter; cook on medium heat 20 - 25 min. or until thickened and golden brown, stirring constantly 

Remove from heat 

4) Add coconut and pecans.  Mix well 

Cool to spreading consistency.

One note, please don't give up if the frosting is not perfect the first time you make it.  Like so many things in cooking, sometimes you need to make it a few times to perfect it with your cookware and stove.

I prefer to stick to specific brands, unless a company changes their recipe or goes out of business.  I still use the brands that my mother and grandmother used when baking.

If you want a Magnalite saucepan like mine, you will need to purchase it in an antique store or secondary market like Ebay. Current day Magnalite is not the same vintage Wagner Ware brand made in Sydney, Ohio. The current pans are made in China of a lighterweight material and is not the Magnalite I recommend. Magnalite Saucepan - 4 quart - 4684-M or 4684-P (-P or -M doesn't matter. They represent the mold used when making)

Sea Sponges for Painting Review

One of the early painting tools that I came across, when I first started persuing painting as more than a hobby, was the sea sponge.

They come in a variety of shapes and sizes, and make a variety of affects. Depending on the side of the sponge that one uses, at any specific time and place, the affect will be different.

A sea sponge can be used to paint the look of distant leaves, textures that resemble rust, and so much more.

Sea sponges can be used for more close up leaves and provide layers of varying shades of highlights. You can press them down onto wet paint for one look, and a different look if you press them onto paint that has already dried.

You can swipe them across the sky to help create wispy clouds. Or in front of waterfalls to resemble a spray and splash of water. Again, the look here will vary depending on whether you are swiping the sponge across wet or dry paint.

Just like the shapes of the sponges themselves, the creative options are endless.

For this design, I went for a tile look.

For any sea sponge that one paints with, I recommend that the sponge is first wet and squeezed out, to make the sponge more flexible, and also easier to rinse and or clean the paint out.

In between color changes is an opportune time to do a quick rinsing. At the end of a painting round, I will usually add a diluted laundry detergent. I save my almost empty laundry detergent bottles, add some water and shake it up. Then I have a quick and easy way to help clear the paint out.

However, as you can see from my sea sponges, pictured above, that all the paint doesn't necessarily always come out.

Anyway, the sea sponges are re-usable for numerous times. I still have all of my sea sponges from decades ago, however, all of any one sea sponge, may not still be present. As edges became worn and loose, it was more efficient to remove the dangling piece and just work with what was left.

I leave them out to air dry, and may drop them into a wide open container, so that they remain dry, in between uses.

One of my most recent recent ventures for using sea sponges, was using them on my Gel Press Plate. The look turned out awesome.

Speaking of the surface that one uses them on, will also affect how the look will turn out. For instance, paper is more absorbent than canvas. You can also make designs on wax paper or foil, which aren't so absorbent, and then make a press print from there. The opportunities are as endless as anyone's imagination.

Fresh Raspberry Lemonade Recipe

Serves 2

Ingredients

  • 1 cup organic fresh raspberries, rinsed and drained
  • ¼ cup ice-cold water (for blending)
  • 1 very large or 2 medium fresh lemons
  • 3 cups ice-cold water
  • Simple syrup (see recipe below) or either liquid allulose or monk fruit and allulose syrup for a sugar-free raspberry lemonade
  • Ice cubes
  • Sprigs of fresh mint for garnish (optional)

Instructions

  1. Purée the raspberries. In a high-speed blender, combine the fresh raspberries with ¼ cup of ice-cold water. Blend until smooth and the seeds have been finely ground.

    Optional: Strain the puréed raspberry liquid through a fine stainless steel mesh sieve, if desired, and discard the seed residue.
  2. Juice the lemon(s) and add. Squeeze the juice of one very large or two medium fresh lemons and add it to the raspberry purée in the blender.
  3. Dilute and sweeten. Stir in 3 cups of ice-cold water. Then sweeten to taste using either simple syrup or (for a sugar-free option) liquid allulose or monk fruit and allulose syrup. I used 1/4 cup of liquid allulose.
  4. Serve over ice. Fill two tall glasses (16-ounce highball glasses work beautifully) with ice cubes and pour the raspberry lemonade evenly into each glass.
  5. Garnish with mint, if desired. If you like, add a sprig of fresh mint (crush the leaves slightly between your fingers to release the aromatic oils) for a touch of green and a lovely hint of mint aroma.

Variations

  • Use frozen raspberries. While the taste won't be quite as good, it's a great option for when fresh raspberries aren't in season, and the freshly squeezed lemon juice keeps the taste vibrant.
  • Make it sparkling. Swap the 3 cups of ice-cold water with ice-cold sparkling mineral water for a fizzy twist.
  • Make it a cocktail. Add a splash of vodka or gin for an elegant adults-only refresher.

Classic Simple Syrup Recipe

If you ever watch videos online, I am sure you have been bombarded with ads for the Pink Salt Trick for losing weight.  If you click on the ad, it takes you to another video that drags on for at least 15 minutes and at the end, it has not told you what you wanted to know, but they will if you give them some money.  You end up angry that you wasted your time and that you still don't know the recipe.  

Well, I promise not to waste your time in this article and I will give you not only one, but two recipes for making the Pink Salt Trick, along with the TRUTH about what this drink can do and what it will not do.


What Is the Pink Salt Trick Recipe Used For?

Pink Himalayan Salt is rock salt mined from the Punjab region of modern Pakistan. The salt often has a pinkish tint due to mineral impurities.  Those minerals are what make it helpful to human physiology.  Pink Himalayan salt contains more than 80 essential minerals and is used for a few different things to aid in overall health.

  • Helps in replacing electrolytes that are lost through sweating.
  • Helps digestion and gut issues
  • Helps in ridding your body of toxins.
  • Aids in better hydration.
  • MAY help in weight loss because better hydration can help raise your metabolism.


Pink Salt Recipes

The first recipe is the simplest, it only consists of two ingredients:

Ingredients:

  •  1/2 tsp pink Himalayan salt (fine dissolves faster, but coarse can be used)
  •  1 glass of warm water.  

Instructions:

  1. Add 1/4 to 1/2 teaspoon of pink Himalayan salt into the glass of water.
  2. Stir the water for at least one minute until the bottom of the glass is clear.
  3. Drink the solution in the morning on an empty stomach for best results.
This recipe is fine, but it is not much on taste, so if you want something that has a bit more flavor, the second recipe may be a bit more to your liking.


Pink Salt



#2

Ingredients:

  • 1 glass room temp bottled water
  • 1/4 to 1/2 tsp finely ground Himalayan pink salt
  • 1 tsp lemon juice, can used bottled or half a fresh lemon squeezed.
  • 1 tsp honey - this is optional but it sure makes it taste better!

The lemon juice is added to this recipe because it supposedly stimulates digestive enzymes, which aids in gut health.  The honey will add some calories, about 21, but it's worth it, trust me!


Instructions:

  1. Add 1/4 tsp Himalayan pink salt to 8 to 10 ounces of water 
  2. Stir the water for at least one minute until the bottom of the glass is clear.
  3. Add lemon juice.
  4. Add honey (optional) and stir until well mixed
  5. Drink in the morning on an empty stomach

Other Ingredients That Can Be Added:

Coconut Water - for better hydration

Lemon Balm Extract - has calming properties and also supposedly aids in digestion.

Apple Cider Vinegar – Add 1 teaspoon for extra gut health support.

Ginger - gives an extra digestive boost


How Often to Drink the Pink Salt Trick 

For the first month you should take 1/4 a teaspoon of pink salt once a day, four times a week.  After the first month, you can up it to 1/4 teaspoon, daily, or 1/2 teaspoon daily if you work out or sweat every day.

Do not drink more than this, as too much salt intake can lead to health problems.  If you find yourself experiencing any of the symptoms below, cut the amount of salt you are using in half.

Dizziness
Swelling in extremities
Upset Stomach 
Daily headaches
Blood pressure that is higher than your normal blood pressure


Who Should Not Use the Pink Salt Trick

Sometimes your general health problems could make it dangerous for you to try the pink salt trick. If you have any of the conditions below, don't do the pink salt trick.

High Blood Pressure (Hypertension)
Heart Conditions
Edema (Swelling in the Body)
 A Low-Sodium Diet Restriction
Kidney Disease
Chronic Water Retention

You should always consult with your physician before trying the pink salt trick, even if you are in good health

What the Pink Salt Trick Will Not Do

  • It will not make you lose 6 pant sizes in a week
  • It will not make you lose 50 pounds in two weeks
  • It will not make excess skin or belly fat disappear 
  • It will not treat or cure any medical conditions.
  • It will not replace drinking a healthy amount of water throughout the day to maintain normal hydration.

What the Pink Salt Trick can do 

IN SOME CASES, it can:

  • Help with digestion, stomach and gut discomfort
  • Help to replace electrolytes
  • Aid in detoxifying your body
  • Hydrate your body
  • May help you lose some weight by raising your metabolism thought better hydration.

So as you can see, the Pink Salt Trick is not the miracle cure to lose weight, but as with all things, if it seems too good to be true, it probably is. 

However, after trying the second recipe for almost 2 weeks, I have found that I do have less upset stomachs and seem to have more energy, probably from being more hydrated.  I have also lost 2 pounds, but that could be from all the gardening I have been doing!  Who knows?  However, I am going to keep taking it, it is an easy thing to do, tastes good (#2) helps with my stomach issues and may help me lose weight......seems like a win/win to me!  If you try this, please comment and let me know how it goes!

LifePro Waver Whole Body Vibration Plate Review

Two months ago, I purchased the LifePro Waver Whole Body Vibration Plate with a great deal of skepticism. But I am struggling with my health and have been desperate to find some relief. Much to my surprise, it does provide relief.  I look forward to using my LifePro every night after work. I haven't found a cure for my pain and problems but I am sleeping better. I feel as though I've had a mini-massage in the comfort of my home each evening. That alone is worth the investment in the LifePro Waver.

I kept seeing ads for various types of  whole body vibration machines. They all make claims about helping lymphatic drainage, improving bone density and muscle strength. They make claims about reducing inflammation and body fat. I found it extremely hard to believe these claims. But I was intrigued by the claim of improving balance.

Over the decades, I have seen physical therapists help children with balance problems. Sometimes that includes standing on things that are soft or things that move. Somehow, that helps the children's bodies strengthen and learn to balance. I have become very concerned about my balance difficulties after recently falling and smashing my head on the arm of the sofa. When I saw that the LifePro Waver Vibration Plate moves up and down, alternating side-to-side, I decided to give this vibration plate a try.

The premise is that you sit or stand on the machine and run it for 15 minutes (or more).  You can change the vibration from very light to harder and the remote control makes this easy when you are standing on the machine.

I have read studies that reportedly prove some health benefits. I did not take the time to delve into the studies to look at the reliability of the study and/or whether the research was done by a neutral party. I do know that I have felt decreased stiffness and increased range of motion after 15 minutes of vibration.  I look forward to sitting or standing on the LifePro and I sleep better after those 15 minutes. I can't say whether or not my balance has improved but I am very aware that my balance hasn't worsened. 

I have an undiagnosed health problem that runs in my family that includes joint pain, balance problems, muscle weakness, muscle spasms, neuropathy, and proprioception problems. I am always looking for relief. Despite my skepticism about the claims made about this machine, it has been a very good investment.  I seems counter-intuitive to me that vibration would help relieve neuropathy. But it does. Just sleeping better at night is a pretty big deal and makes this machine worth it to me. One final thought. I don't think I would recommend a vibration plate that doesn't oscillate. I don't know how, but I think that oscillating movement is important.

Why YouTube Success Isn’t Just About Likes or Subscribers Anymore

Why I'm Writing This - YouTube's Algorithm Has Changed

I'm no YouTube expert, but I'm definitely a research addict. 

I've spent countless hours watching tutorials, reading articles, and just observing what works (and what doesn't) on my own channel, StumpedRiddles

What I've come to realize—and it might surprise you—is that the old metrics of YouTube success aren't the only thing that matter anymore. 

So, I thought I'd share some of what I've learned.


It's Not Just About Likes or Subscribers Anymore

We've all heard it before: get more subscribers, get more likes, and you'll grow. And yes, those metrics still matter—but they're no longer the whole picture. 

In fact, you can have a video blow up even if you have zero subscribers. I've seen it happen. The reason? Interest-based retention.


What Is Interest-Based Retention?

This is the real game-changer. 

YouTube's algorithm (which is constantly evolving) is getting smarter at feeding content based on a viewer's actual interests. 

It's examining search history, viewing behavior, and even the types of videos people finish and rewatch. The algorithm then pushes videos not just because they're popular, but because they match someone's interests

YouTube and much of social media are building their own version of TikTok's For You Page.

You might be thinking, "Well, if I subscribe to a channel, it's because I'm interested in what they have to say." Sounds logical, right? But surprisingly, that's not always how it plays out. Think about how many channels you've subscribed to, only to rarely—if ever—watch their videos again. We've all done it. Subscribing doesn't always equal ongoing interest or engagement.


How This Changes Everything

This shift means that the focus is less on building a massive following and more on creating content that resonates deeply with a specific audience. 

You don't need thousands of subscribers to make a splash. You just need the right video to reach the right people.

I've seen some of my own riddle videos gain more traction than I expected—not because they were perfectly edited or had fancy intros, but because the riddle struck a sweet spot in the interests of certain viewers. 

That's encouraging, especially for creators just starting out.


Niche Growth Is Slower (But Powerful)

Here's something else I've learned the hard way: niche content tends to grow more slowly. If you're not making videos in a massive trend space like gaming or beauty, growth takes time. 

I wrote more about this last week, but it's worth repeating—being in a niche like riddles means you're not trying to reach everyone. You're aiming for your people.

And that's actually a good thing. Your community becomes more engaged, and your content is more likely to be shared among people who genuinely care.


The First Three Seconds Matter (A Lot)

One of the most essential pieces of advice I've heard repeatedly (and am still trying to master myself) is this: the first three seconds of your video are everything. That's your hook. If someone doesn't connect with those first few moments, they scroll. Period.

So, I'm experimenting with ways to capture attention fast. Whether it's a powerful statement, a visual twist, or a bold question—I'm trying to start strong. Because if the algorithm notices people clicking away too fast, your video is basically toast.


New Ideas vs. Recycled Content

Now let's talk content. The internet is saturated with duplicate, recycled content. That's just the way it is. 

But here's something I remind myself of: even old ideas can feel fresh if you find the right angle.

That's what I try to do with StumpedRiddles. There are tons of riddles out there, sure—but I try to inject personality, humor, and a little twist. 

It's not about inventing a whole new concept every time. It's about presenting it in a way that feels new or different.

Final Thoughts (AKA What I'm Still Learning)


I'm still figuring all of this out, but I wanted to share these nuggets in case they help someone else. 

The biggest takeaway? You don't need a million likes or subscribers to be successful on YouTube. You just need a good idea, a solid hook, and a clear sense of who your video is for.

And honestly, I think that's kind of exciting.

National Play Catch Week - A Holiday Review

This interesting holiday is held each year in the third week of June. Begun in 2018, the week always includes Father’s Day. Perhaps this is because of the age-old activity of kids ‘having a catch’ with dad.

When one hears the term ‘let’s play catch’, one might immediately picture two people with gloves and a baseball. But playing catch isn’t just for baseball. People enjoy tossing around a football just as much. You can also use a softball, a tennis ball or a soft rubber ball. Playing catch builds relationships, especially true of a dad playing with his child.


The History of National Play Catch Week


The inspiration began with Rhett Grametbauer, filmmaker, writer and passionate sports fan, in 2013. Rhett made an epic road trip in an old VW Bus to visit every one of the NFL stadiums in the U.S. He captured his incredible adventure in a documentary and a book entitled 25,000 Miles to Glory: Football, Freedom, Friendship, And America


While on his trip, Grametbauer discovered the simple joy of playing catch, simply tossing a ball back and forth with someone. Strangers he met along the way all seemed to enjoy getting involved in a game of catch. 


The iconic movie “Field of Dreams” with Kevin Costner centers around baseball and ends with the famous scene of Costner’s movie character asking “Want to have a catch, dad?”


Summary


So, get outside, enjoy some fresh air with family and friends, or even complete strangers at a park during the June Holiday of National Play Catch Week which begins on Father’s Day each year. The delightful pastime of playing catch can be enjoyed all summer long.

Lap Desk or Serving Tray with Detachable Cushion
I prefer the comfort of my recliner to the straight back chairs at our dining tables or counter top, but I need a flat surface table top for paperwork and my smaller craft projects.  

Several years ago, I purchased a long, flat finished board that lays across the arms of my recliner to create a table top.  Unfortunately, it has no sides which limits its uses.  I recently went in search of a lap desk with sides and came across a serving tray that offers exactly what I need for paying bills, processing paperwork, and working on my small craft projects.  It even has an indention to keep a cup from sliding around on the table.  I use that recessed indentation in the top for holding pins and beads when crafting & my coffee cup when working on my paperwork.  It has proven to be perfect for my needs.

The lap tray I selected has a detachable cushion on the bottom of the tray which takes the full weight off my legs and serves to raise the height of the tray to a better position for writing.

The side handles allow me to easily pick up and carry the tray without disturbing whatever is laying on it.  Since it is so lightweight, I can grab the handles and stand straight up from a sitting position without straining under the weight to maintain balance.  

At 16.9 inches wide, it sits perfectly on my lap between the arms of my recliner.  Plus, the raised edges keep pens, craft supplies, silverware, plates, etc. from sliding off the tray.

I don't personally use it for "breakfast in bed", but I can see how it would be ideal for that use too.  Just as the cushion's fabric keeps the tray in place on my lap, I am sure it would keep the tray in place on top of sheets or bedspreads.

The cushion cover does have a zipper and the cover can be hand-washed.  I have not needed to wash my cover yet, but it is nice to know that I can when needed.

Of course, the cushion can be removed so the tray can be used for serving, if desired.  When we have company, I like being able to carry coffee and desserts to our guests without making several trips back and forth to the kitchen.
