The recipe below makes five dozen cookies; you can cut it in half if you don't want to make that many.
Peppermint Oreo Cookies Ingredients:
- 1 cup butter (Cold and cut into cubes)
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 tablespoons cornstarch
- 3 cups all-purpose flour
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
- 1 cup crushed peppermint candy (We used peppermint candy canes crushed)
- 16 Oreo Cookies chopped
- Cream the butter and brown sugar together. We used our KitchenAid Stand Mixer for this, but you can also use a hand mixer on medium speed.
- Add the eggs and vanilla extract, and continue to mix until it's fluffy.
- Add the white sugar and continue mixing making sure all ingredients are combined.
- Add the baking powder, baking soda, cornstarch, and salt. Then, add the flour one cup at a time. Mix until all is combined.
- Add the white and semi-sweet chocolate chips, almost all crushed peppermint candy, and Oreo cookies. (Reserve some of both for garnish before baking).
- Scoop the dough and roll it into about 1-inch or larger balls. Place them 2 inches apart on a cookie sheet lined with parchment paper. Add additional Oreo, and peppermint pieces to the tops before baking.
- Bake at 350 degrees for 10-12 minutes, until the edges are set.
- Allow them to cool on the cookie sheet for a few minutes before moving them to a rack to completely cool.
This photo is the size that Jamie rolled the cookie dough. It may be closer to 2-inch balls. The larger you make them the fewer cookies you going to yield.
