Palmiers Puff Pastry Review

The Palmier pastry trend was difficult to miss this year if you have baking in your internet feed! Whether on Tik Tok, Youtube or Instagram it was a plethora of content creators making the two ingredient (maybe 3) Palmier pastry.

Admittedly, my neighborhood was incredibly fortunate to have an authentic French bakery so we have been spoiled! However, as a fan of puff pastry I had to give the Two ingredient version a try.

Two Ingredient

I decided to try the simplest recipe with frozen puff pastry and sugar. Parchment paper was also necessary. 

Defrost puff pastry.

Place a piece of parchment paper on counter.

Generously sprinkle sugar on a sheet of parchment paper.

Lay puff pastry dough on sugar. Press into sugar.

Sprinkle top of puff pastry with sugar.

Fold each side of puff pastry (short side) toward the middle. 

A log will form.

Cut log into pieces of pastry about 1 inch thick. 

Lay on parchment lined baking sheet about 2 inches apart.

A natural heart shape will appear or if needed, assist the pieces by shaping in a heart with a quick maneuver.

Bake at 350 degrees for 10-15 minutes, begin checking pastry at 10 minutes.

Cool.

So Many Recipes

There are quite a few variations of the Internet Palmier recipe. Each contains puff pastry and sugar, but the variations include making a sweet version, a savory version, cinnamon version, brush with butter version, flip midway through baking version and different baking times and temps. 

All are easy! Search two ingredient Palmier recipe and the various versions will appear. The roll puff pastry that is refrigerated will be slightly different than the frozen version regarding the ease of assembling and baking temp/time. Many Youtube videos are available to demonstrate rolling the pastry into heart shapes.

Palmiers date back to 19th century France as a way to use puff pastry leftovers. 

Recommendation

I believe this recipe has potential for a quick sweet or savory treat, if you are a puff pastry fan! Add cinnamon for a quick cinnamon flaky treat.  If you have ever had the pleasure of tasting authentic French palmiers then the Internet version is almost adequate! Both versions look flaky, enticing and very similar. However, besides the visual, the comparison of each pastry is in different lanes and difficult to make a direct comparison.

Chocolate Covered Apples Recipe and Review

Chocolate Covered Apples are Fun to Make and Delicious to Eat! 

I enjoy making fruit trays for parties and holidays.  Several years ago, I decided to add chocolate covered fruit to the tray as another option for guests.  Because the apples are easy to hold, they are the perfect finger food at a party.

Chocolate Covered Apples are more aptly described as Chocolate Dipped Apples since the entire apple slice is not covered with chocolate. Regardless of which name you prefer, they are still quite delicious and easy to make. They are so easy to make that in just a few minutes, you can be enjoying your own Chocolate Covered Apple Slice. The only remaining decision is whether you are willing to share your treat. 

If you love apples and you love chocolate, you are certain to enjoy Chocolate Covered Apples. 

Below, I share step by step instructions with photos for Chocolate Covered or Dipped Apples.

Supplies & Ingredients 

  • Apples 
  • Chocolate for Melting ~ I prefer Saco Dolci Frutta featured below 
  • Wax Paper

Easy Directions 

Step 1: Cover a cookie sheet with wax paper ~ The cookie sheet will make it easier to move your Chocolate Covered Apples. 

Step 2: Wash and Dry Your Apples 

Step 3: Melt Your Chocolate ~ If you use Saco Dolci Frutta, you can melt the chocolate in the microwave in their package container. Melt the chocolate in the microwave for 2 minutes on medium and stir the chocolate until it is completely melted. Other chocolates will need to be melted in a double boiler or a microwavable dish. 

Step 4: Cut Your Apple into Slices

Step 5: Dip the Apple Slices into the chocolate 

Step 6: Set on wax paper to cool 

Step 7: When you have dipped all of your Apple slices in chocolate, serve or eat. Best if not refrigerated

Chocolate Dipped or Covered Blackberries

Blackberries are one of my husband's favorite fruits. Recently, I was covering or dipping fruit in chocolate and he suggested we make Chocolate Covered Blackberries. I went along with his suggestion simply because I understand that we each have a different favorite fruit and I wanted everyone to have their favorite available. For contrast, I used White Chocolate on the Blackberries. The White Chocolate Covered Blackberries were lovely on the table and tasty addition to our variety of fruits. 

As it turned out, our daughter also loved the Chocolate Covered blackberries, as did several other guests. The Chocolate Covered Blackberries were a hit and they were completely gone in no time. It seems I did not make enough Chocolate Covered Blackberries for that gathering, but I will know the next time and I will prepare for the inevitable.

Supplies and Ingredients for Chocolate Covered Blackberries

  • Fresh Blackberries
  • Chocolate for Melting ~ I prefer Saco Dolci Frutta featured below
  • Wax Paper

 

Easy Directions for Chocolate Dipped Blackberries

Black-Eyed Peas Recipe for New Year's Day (or anytime!)

It is a tradition to eat black-eyed peas on New Year's Day.  The fun superstition surrounding black-eyed peas on New Years is that they will bring you good luck & prosperity throughout the coming year.

History tells us that tradition is founded in Southern folklore, yet it is clearly more widespread than just the Southern states of America.  

National Black-Eyed Pea Day is, of course, January 1.  

Does eating black-eyed peas on New Year's Day actually bring good luck?   As much as I would like to say "yes", in reality, a superstition is just that and has no real basis in truth.  But, it is still a fun tradition and a delicious side dish.

If you really want to embrace the tradition, aka superstition, according to my mother, you would couple the black-eyed peas with cornbread.  The cornbread symbolizes gold.  Somehow, I think we would all devour black-eyed peas and cornbread enthusiastically on New Years Day if it would ensure good luck and wealth throughout the year!

I can tell you from experience, black-eyed peas coupled with cornbread becomes a complete and filling meal, not just two separate side dishes. 

 

Black-Eyed Peas Recipe

The best way to flavor black-eyed peas is with a ham bone.  I save my Christmas ham bone each year just so I can use it in my New Year's Day black-eyed peas.  

If you don't have a spare ham bone laying around, you can season black-eyed peas with bacon grease or 3 pieces of uncooked bacon.  The bacon cooks along with the peas.

Growing up, we shelled our own black-eyed field peas.  Today, I prefer using a bag of Camellia brand blackeyes.  I still soak them in water overnight like I did freshly shelled peas to soften them.

 

Instructions for Cooking Black-Eyed Peas

  1. Rinse and Soak the black-eyed peas overnight or for 8 hrs
  2. Rinse the peas again after soaking 
  3. Place the ham bone (or bacon) in the center of the large (5 quart or larger) dutch oven pan and arrange the peas around it
  4. Add Salt & Pepper
  5. Cover the Peas with Water
  6. Bring to a boil, then turn down to a low boil, cover the pan with a tilted lid, allowing steam to escape
  7. Cook on low boil for 1½ hour

You will need to stir them often and check the water level.  Add water as needed to keep the peas covered.

Reviewing Del Destino Golden Pineapple Spears with Coconut Water

During the holidays, a friend was in charge of whipping up most of the meals. Lucky me, he enjoys grilling and prefers fresh, flavorful food. One of those meals included the Del Destino Golden Pineapple with coconut water that he was given as a gift.  We both took a bite of the pineapple to try at the same time and we were at a loss for words. The pineapples with just a hint of coconut were such a succulent, flavorful treat!

Grilled steak, buttered and toasted everything bagels, and Del Destino Golden Pineapple spears were served for the holiday brunch. The combination of the perfectly grilled, warm savory steaks and cold, sweet pineapple spears was perfect. 

We immediately began imagining what else these melt-in-your-mouth pineapples could be used for. Within seconds we listed:

  • decadent fruit smoothies
  • baked in muffins or cakes (imagine upside-down pineapple cake!)
  • side dishes or snacks
  • fresh fruit salad or ambrosia salad
  • served with cottage cheese
  • pineapple whip
  • grilled
  • Pina coladas and/or infused in alcohol 

Grilling. There are a variety of recipes for grilled pineapple, adding cinnamon, brown sugar or other ingredients. However, these Del Destino pineapple spears are so delicious that I don't believe I'd add any additional ingredients for the first time. I'm not sure the flavor needs any additions at all.

Pineapple Whip. There are a variety of recipes for pineapple whip but they all generally included pineapple, some sort of milk product, orange juice, and some small amount of sweetener (such as maple syrup) - blended then briefly placed in the freezer to firm it up.

Fruit Salad.  I had lived my entire life believe that my family's marshmallow fruit salad (also known as Ambrosia salad to some) was the very best. I would have never imagined an improvement. Until now. Using the Del Destino Golden Pineapple with coconut water would make a perfect Ambrosia even better. I'm sure of it. 

We both enjoy pineapple. Sadly, we have become accustomed to the sometimes fibrous and under-ripe pineapples (in prepared fruit plates as well as when purchasing whole pineapples) or the overly-syrupy sweet of canned pineapples. The Del Destino pineapple spears were shockingly good. 

As we were so glad to learn, a jar of Del Destino Golden Pineapple with coconut water makes a perfect gift! 


The Del Destino brand seems to be available at both Costco and Aldi and is highly recommended. 

If you prefer to shop Amazon, there are brands of Pineapple in coconut water available on Amazon that are highly rated. Orchard Natural Pineapple in light syrup and coconut water is an example and at the time of this writing is rated 4.3 out of 5 stars from over 1,000 reviews.

Instant Pot Mac and Cheese

 If there is one dish that is always a crowd pleaser with kids and adults alike, it has to be Mac and Cheese. And thanks to the Instant Pot, this classic comfort food is fast and easy to make. Did I mention creamy and delicious?

From start to finish, Instant Pot Mac and Cheese takes about 15 minutes. Everyone in our family just loves how delicious, rich, and creamy this dish is.

Ingredients:

For the Pasta:

  • 1 lb. elbow macaroni
  • 4 cups water (or use half water, half chicken broth for extra flavor).
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter

For the Cheese Sauce:

  • 1 cup whole milk or heavy cream (we use the heavy cream)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan

Directions:

  1. Add the pasta, water, salt, pepper, garlic powder, and butter into the Instant Pot.
  2. Set to manual or pressure cook for 4 minutes. When done, quick release the pressure.
  3. Open the lid and stir the pasta; do not drain any remaining liquid.
  4. Set the Instant Pot to Saute' (Low)
  5. Slowly stir in the milk and cheeses, then continue stirring until everything melts into a smooth, velvety sauce.
  6. If it's too thick, add a little more milk, and if it's too thin, stir a little longer.

This is a must-try recipe resulting in maximum flavor with minimal effort. It's perfect for busy weeknights or anyone craving comfort food. Try this Instant Pot Mac and cheese, and you may never go back to stovetop or boxed mac and cheese again.

Reviewing Protein Jelly or Protein Jello

 Before we review Protein Jelly we need to get our definitions sorted, as I refer to the picture below as jelly, but I know many of my friends refer to it as jello!

Whether you call it jelly or jello, there is a delicious recipe sometimes called protein jelly/jello, occasionally called 2 ingredient panna cotta and sometimes referred to as Jelly Whip/Jello Whip.

This is a low-calorie, high-protein snack/dessert that is really delicious and very reminiscent in flavour to what my late grandmother made, which she just called a quick mousse.

How to Make Protein Jelly

This recipe couldn't be easier. You need just three ingredients - boiling water, jelly crystals and Greek yogurt.

  1. Take one cup of boiling water and pour it into a jug
  2. Add one cup of Greek yogurt into the same jug
  3. Pour in one box of jelly crystals (85g)
  4. Use a whisk to beat all the ingredients together.
  5. Pour into your container (I use several small containers to make individual servings) and pop in the fridge to set. I leave mine in there overnight.

The result is a delicious and protein-packed snack or dessert that is also low-calorie.

Variations in cooking method


I know it's not really 'cooking', but anyway, when I first made this protein jelly I just stirred all of the ingredients together with a spoon and the result was really nice. However, I thoroughly recommend using a hand whisk as it makes it taste more airy and fluffier.

I have been told that using a hand beater is another way to make the Jelly Whip even fluffier, but I don't have a hand beater, so I haven't tried that.

Dairy Free Jello Pudding


I have also made this using coconut yogurt (thick set, Greek style) and it tasted delicious, especially with the lime-flavoured jelly. The only problem with using coconut yogurt is that the protein content isn't very high, unlike with Greek yogurt. It's still a nice, low-calorie snack to enjoy.

Which Jelly/Jello to Use?


I use the regular jelly crystals, but many people will choose the sugar-free option. I guess it depends on whether you prefer what they add in place of the sugar or not. Apparently, the flavour is the same and, of course, if you're using the Greek yogurt, you are still getting the protein.

My favourite flavours are raspberry and strawberry.

How to Serve Protein Jelly


I usually make individual servings and have it by itself, but I have also had it with a little vanilla protein pudding on top in the past which I enjoy as it evokes the idea of trifle (one of my favourtie desserts).

I will also add blueberries, raspberries or sliced strawberries on top of the protein jello sometimes as well.

Easy No-Bake Strawberry Shortcake Recipe Review

This is my favorite easy strawberry shortcake recipe. To call it a recipe is a bit of an exaggeration because it is really more of a compilation of ingredients stacked to create a lovely dessert presentation.  

Strawberry shortcake is a great dessert to enjoy during the holidays.  It is festively pretty and requires very little time to prepare.

It is also a fast, no-bake dessert to create on long, hot summer days.  There is no need to hassle with long complicated recipes when all you really want to do is spend your time outside enjoying the weather, family and friends.  Plus, you don't have to heat up the kitchen by turning on the oven to bake a tasty dessert.  Simply purchase vanilla dessert shells from your grocery store bakery when you purchase your strawberries.   I also buy a can of whipped cream topping.

Below are the instructions for compiling individual strawberry shortcakes that takes little effort to make.  Adults and kids alike, love this easy version of strawberry shortcake. 

 

Strawberry Shortcake Ingredients

  • 2 Pints Ripe Strawberries - Sliced
  • 2 Tablespoons Sugar  (reduce the sugar if you use less strawberries)
  • Vanilla Sponge Dessert Shells 
  • Whipped Creme Topping 

Directions 

Step 1: Place the strawberries into a glass bowl and sprinkle with sugar. 

Step 2: Stir together with a fork.

Step 3: Cover and refrigerate 30 minutes to 1 hour allowing the sugar to draw the water from the strawberries and create a watery syrup.

Step 4: Place each dessert shell/cup onto a plate.

Step 5: Evenly divide the strawberries and their juice among the shortcake cups. 

Step 6: Top with whipped cream & serve.

We could all use a moment of relaxation with a cup of spice tea, especially during the busiest time of the year. 

The holidays are often hectic and tiring, but in the end they are always filled with wonderful memories. Each year my family gathers together for the festivities. Since my siblings and their families live in different states of the US, there is a lot of travel involved, a lot of planning and a lot of cooking. My mother leads the pack and tries very hard to coordinate everyone and everything. Sometimes just finding a bed for everyone can be challenging. I am the only one of my parents' children who still lives in our hometown so I am frequently honored with guests. 

With so many people around and so much going on for days, my sister and I seek out moments to slip away from the crowd and sip tea, giggle and share the latest gossip. A pillow fight is definitely not out of the question. Occasionally our mother, my daughter or a sister-in-law will join us, but this little meeting always begins with me, my sister and a cup of tea. 

It is with this cherished time together in mind, that I wish to share our Spice Tea Recipe with you. I hope you find a few moments to slip away with a loved one and share a cup of tea. 

 

Award Winning Spice Tea Recipe

Prep Time    Ready In Yields
  10 min      10 min                           Approx. 50 ~ Depends on tea strength per cup


Ingredients
 

Hot Spice Tea Recipe Ingredients
  • 2 - 27 oz. Jars of Orange Drink (like Tang) 
  • 12 oz. Lemonade dry mix (like Countrytime) 
  • 1 cup Instant Tea 
  • 2 cups Sugar 
  • 1 teaspoon Cloves 
  •  2 teaspoon Cinnamon 

 

Instructions 

Simply mix everything together. Add 2 teaspoons of tea mix to 1 cup of hot water for one lovely cup of hot tea. 

Just remember, if you are using a mug, it will require approx. 3 teaspoons of tea to make a tantalizing cup of tea. 

Store in an air-tight container

Simply fill a canning jar, an empty jelly jar or any small container with Spice Tea. If you are using a canning jar, cut a square of material with pinking shears and cover the top of the jar.

Parting is Such Sweet Sorrow

After several days of company, we are all usually exhausted and in need of a long winters nap. I always like to send treats home with my guests and packing some of the remaining tea is just the right thing. When they get back home and have that moment to unwind, then they can fix a cup of Spice Tea and allow the fragrance of the tea to return them to the memory of our time together. 

The jar pictured on the right, is the container that held the original gift of Spice Tea given to me by my sister 35+ years ago. The tea is long since gone, but the refillable container and the memory remains.

Mom's Homemade Cornbread Recipe Shared & Reviewed

My Mom's cornbread recipe is still our family's traditional cornbread recipe.  It is very easy to mix together, yet consistently makes a delicious cornbread whether sliced or broken up for our holiday dressing.

Boxed cornbread mix, like cake mixes, has become popular because they are so convenient.  I would make the argument that once you add the oil, milk and egg into the box mix contents, you are already most of the way through the recipe to making a homemade cornbread.  We can definitely taste the difference.  Most boxed cornbread mixes have sugar in them.  We do not add sugar to our cornbread.

I am sharing my Mom's cornbread recipe below.  You can see for yourself that it really is just as easy to mix together as a box mix and a lot less expensive than many of the cornbread mixes on the market.

One note, Mom uses Pearl Milling brand and I use Martha White brand, but they taste the same to us.  If you want a sweeter taste, you can add a pinch of sugar to Mom's recipe.

 

Mom's Cornbread Recipe
Made in a 10.25" Cast Iron Skillet or 9" x 9" Baking Pan

Preheat the oven on 400° 

  • 2 Cups of Martha White or Pearl Milling White Corn Meal Mix - neither of these basic cornmeals have sugar added   
  • 2 Tablespoons Self-rising Flour
  • 1 Egg
  • 1 Cup of Milk

Stir all together to a cake batter consistency

Cover the bottom of the skillet with vegetable oil and heat it in the oven for about 3 minutes.  The oil will be very hot, so be careful 

Pour the oil into the mixture  (it may sizzle a bit as it touches the cold batter)

Stir the oil into the mixture, then pour the mixture into the hot skillet

Bake on 400° for 20 minutes

Make sure the cornbread is cooked completely by inserting a toothpick in the center.  If the toothpick comes out clean, it is done.  If not, cook for a few more minutes. 

 

I am sharing the Martha White Corn Meal Mix below for you to see, but it will be much cheaper in the grocery store than it is on Amazon. I do use my grandmother-in-law's cast iron skillet, but I purchased a Lodge cast iron dutch oven that is totally awesome. Therefore, I am comfortable recommending the Lodge cast iron skillet below if needed.

Christmas Oatmeal Raisin Cookies Recipe

Turning an Old Standard Cookie Recipe into Christmas Cookies

Oatmeal Raisin Cookies are my husband's favorite cookies so, of course, our Oatmeal Raisin Cookie recipe must be included in the holiday baking.

I use my mother's recipe for Oatmeal Raisin Cookies, but I have pulled out my treasure trove of cookie cutters to make the traditional, nondescript cookie into a pretty Christmas cookie.

I did not change the recipe, I just changed the presentation, making the traditionally plain, exceptionally beautiful. 

No only do children like the cute shapes, but adults do too.  They are perfect for Christmas parties and gatherings. 

 

Oatmeal Raisin Cookies Recipe

Ingredients

  • 1 1/4 cup Softened Butter
  • 3/4 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 1/2 cup All Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 3 cups Quaker 1-minute Oats - Uncooked
  • 1 cup Raisins

Instructions

  1. Pre-heat the Oven to 375° 
  2. Beat together Butter, Brown Sugar, Sugar and Egg until well blended 
  3. Stir in Vanilla 
  4. Add All Purpose Flour, Baking Soda, Cinnamon, Nutmeg and Quaker Oats. 
  5. Stir together until well mixed. 
  6. Stir in Raisins By hand
  7. Pat out part of the mixture onto a plate or onto wax paper 
  8. Using the cookie cutters, cut out cookies and lay on an ungreased cookie sheet 
  9. Bake for 8 or 9 minutes

Note: Do not overcook. Cookies will be soft when you first remove them from the oven and will harden as they cool.
