Easy Air Fryer Corn on the Cob

 Air fryers are a wonderful tool to have in your kitchen. If you don't have an air fryer consider making room on your kitchen counter for one. From main dishes, and side dishes to desserts, there isn't anything you can't do with an air fryer.

Our daughter got us a Ninja Foodi Grill for Christmas a few years ago. It is a combination grill and air fryer, and we use it all of the time to make so many easy meals.

Summertime is corn season and grilled corn is a favorite of ours. If you don't feel like firing up the grill just for corn or boiling water to heat up the kitchen try the air fryer.

It's so easy to make in the air fryer, in just 15 minutes you will enjoy that delicious toasted corn flavor with your favorite garnish for added flavor.

How to Make Air Fryer Corn on the Cob:

I started with five fresh ears of corn and brushed them with olive oil on all sides, or you could use melted butter. 

Then, I coated them all around with Hidden Valley Ranch Seasoning. I preheated the air fryer to 375 degrees and set the time for 15 minutes. We added melted butter and salt for a delicious side dish. My air fryer basket easily fits five ears of corn.

This works well for fresh or frozen corn, but I prefer fresh corn on the cob. If you have an air fryer give this a try, your family is going to love it.

Other Topping Ideas for Corn on the Cob:
  • Sour cream
  • Parmesan cheese
  • Cheddar cheese
  • Crumbled bacon
  • Chili powder
  • Paprika 
  • Old Bay seasoning
  • Cajun seasoning
These are just a few more ideas for garnishing corn on the cob. I'm sure everybody has their favorite.

Microwave Egg Poacher Makes Perfect Eggs for Egg Muffins

I am delighted to be able to review and recommend the Nordic Ware 2 Cup Microwave Egg Poacher.  It exceeds initial expectations.

When my husband said he wanted to buy an egg poacher and make a copycat egg muffin like the popular fast food restaurant, I was willing to be his taste-tester.  He wanted something that would be fast and easy so we did a search for a microwavable egg poacher to start.  

I was concerned about how flimsy so many of them were, but when we came across the Nordic Ware poacher, the search was over.  I love Nordic Ware products.  

I had not previously used one of their microwave cookware pieces, but I have been using their shaped bakeware pans for decades so I know they are a reliable, trustworthy and well-made brand.  Their egg poacher is no exception!  

I am quite impressed with the sturdy cup design of the Nordic Ware Egg Poacher.  The hinges are my only concern, but only time and constant use will tell about them.  However, I'm not overly concerned since the price is low enough that replacing it after a few years should not be too difficult.

The poacher makes two poached eggs at one time.  

To make the poached eggs,  lightly butter each egg cup,  add an egg in each cup, break the yolk if desired, and add 1 teaspoon of water per egg.  

Snap the egg poacher shut and cook in the microwave for 80 seconds for firm, fully cooked eggs (microwave cooking time may vary).  Then, let them set and continue to steam cook for 30 seconds before opening the poacher. 

The cooked eggs easily slide out of the poacher cups.

I recommend handwashing the egg poacher to lengthen the life and maintain the quality of the microwavable dish.

 

Egg Muffin Recipe

My husband loves the Thomas English Muffins, so selecting the muffins was no problem for him.  He also purchased Canadian bacon and of course, eggs.  For my egg muffin, he added a slice of American cheese, but he prefers his without cheese.

He butters and toasts the muffins in the oven and heats the Canadian bacon in the microwave. 

Simply layer the cheese, the Canadian bacon, and the poached eggs in the muffin.  Add salt and pepper to season and you have created the perfect copycat egg muffin of the egg muffin served in your favorite fast food restaurant.

The Keurig K-Duo Plus Single Serve & Carafe Coffee Maker Reviewed

At first, I wasn't sure that I would like the auto shut-off after 5 minutes.  Of course, auto shut-off is extremely important to us, but I am accustom to it shutting off after an hour.  Turns out, I love the shut-off after 5 minutes!   Because it heats up fast, there is no reason to leave it on for an hour.  Plus, when we are leaving the house immediately, the coffee maker shuts-off before we have even left the driveway.  I no longer have to worry that the coffee pot was left on.

Because the thermal carafe holds heat, a warming element is not necessary with this coffee maker.  Therefore, your coffee doesn't start to burn on the bottom which ruins the flavor of coffee, plus makes clean-up harder.

My husband and I both agree that the Keurig K-Duo Plus™ Single Serve & Carafe Coffee Maker is the best coffee maker we have ever had.  Plus, we love how great it looks in our kitchen!

Air Fryer Fried Dough

You will find this sweet treat at your local County Fair or Church Bazaars. They go by many different names, fried dough, doughboys, or elephant ears. Whenever we visit a local fair the first thing I look for is the fried dough. Fried bread dough with sugar or sugar and cinnamon all over it.

These little sweet treats are just as easy to make at home with your air fryer. Over the weekend, I picked up some fresh dough at our local grocery store to make some pizza. I had some dough left over, but it wasn't enough to make another whole pizza so I decided to use my air fryer to make these little sweet treats.

How to make Air Fryer Fried Dough:

  1. Take a small portion of bread dough in your hand and begin to shape it into a 4 to 5 - inch disc. not too thick.
  2. Set them on a cookie sheet and lightly coat both sides with oil.
  3. Spray the air fryer basket with cooking spray or you can lightly brush it with oil.
  4. Preheat your air fryer to 350 degrees and set the timer to 9 minutes.
  5. Set them in the basket and turn them over after 5 minutes.
  6. While they are cooking melt about 1/2 stick of butter.
  7. Put 1/2 cup of white sugar in a flat dish. You can add cinnamon and mix it together if you like sugar and cinnamon.
  8. When they finish cooking brush with the butter and coat with the sugar mixture.
Make sure you flatten them before adding to the air fryer, as you can see from the picture I made mine a little too thick. They puffed up so much that I considered filling them with strawberry jam but didn't enough on hand. I had room for four at a time in my air fryer basket, I ate one one them before I took the picture.

Easy Homemade Calzone Recipe

 Easy homemade calzone recipe reviewed. Calzones are fun and easy to make. They are a great lunch, dinner, or anytime snack.

Our grandson Tyler, came over to spend Saturday with us and wanted to make calzones. A calzone is a pizza folded over and filled with anything you can put on top of a pizza.

I went to our local grocery store and picked up some pizza dough, pizza sauce, pepperoni, Italian sausage crumbles, and mozzarella cheese. If you prefer to make the pizza dough yourself you use my Easy All Purpose Dough Recipe.

What makes these calzones so easy to enjoy is that you can easily find all of the ingredients at your local grocery store. Pick up the dough and your favorite fillings and you're on the way to a delicious lunch, dinner, or snack.

The first thing we did was roll the dough out in a greased pizza pan.

Next, we added the sauce, pepperoni, sausage, romano, or parmesan cheese, and mozzarella cheese.

Then, we carefully folded our calzones over in half. Rolled and tucked the edges together and brushed the top with olive oil. Then, sprinkled some romano or parmesan cheese over top, and poke several places with a fork. The olive oil turns the top a nice brown and adds a little crunch. This one is all ready for the oven.

Preheat your oven to 400 degrees, and bake these on the middle rack for 20 to 25 minutes until they are golden brown. Let them sit for about 10 minutes and cut in half and enjoy.

Calzones are versatile, you can use just about anything you like as a filling. Following are some different ideas for calzones:
 

Typical Calzone Fillings:

  • Cheeses: Ricotta, mozzarella, cheddar, feta, and goat cheese.
  • Meats: Pepperoni, Italian sausage, ham, salami, Canadian bacon, bacon, steak strips, meatballs, chicken.
  • Veggies: Bell peppers, mushrooms, artichokes, spinach, onions, hot peppers.
  • Sauce: Pizza sauce, ranch dressing, or other dressings.
Mix and match any of these ingredients or some of your own to make a calzone to your liking and then enjoy.

I have recently been focused on getting my kitchen cabinets better organized.  I have a tall cabinet pantry with deep shelves.  Items or cans stored toward the back of the cabinet pantry are very hard to get out.  I am required to take everything out from in front of whatever I need and then put it back afterwards.  That process is time consuming and rather tiresome.  

I was thinking one day that what I really need are pull out shelves in that cabinet that would allow me to easily access things in the back, plus see what is there.  I went in search of a solution and found the SlidingSusan Pull Out Drawers for Cabinets.  I measured my cabinet and immediately ordered one drawer to try it.

I was very excited when it arrived and my husband offered to install the drawer for me.  I took everything off the shelf and he went to work.  According to him, it was easy to install.

Previously, I forgot what I had and would end up buying more as needed for a specific recipe.  Unfortunately, that meant I would end up with a few cans of food that passed their expiry date before I used them.

They are truly fabulous and save a lot of time when grabbing a can of something from the cabinet.  Plus, I will no longer discover unused cans that have expired because they got pushed toward the back.  The Sliding Susan pull out drawers are expensive, but when I consider how convenient they are, plus how much of a toll they spare on my back and shoulders, I believe they are well worth the cost.

The drawers have 3" sides which do a great job of holding cans in place so they won't slip off and hit the floor.

The slides allow the drawers to fully pull out, plus they have soft closure that helps keep the items secure.  I did put a liner on my drawers to help keep the cans and bottles from sliding around on the shelves.

The drawers arrive completely assembled. We only had to screw the base to the original shelf.  

I love being able to pull out the cabinet drawer and grab whatever I need quickly, without having to take everything out every time I need something.

Rubbermaid Folding 1-Step Steel Step Stool Reviewed

I recently purchased a Rubbermaid 1-step step stool because I need that extra 10 inches of height to easily reach the upper cabinets and shelves in my kitchen.  I especially need the extra height to access the cabinet over my oven where I store my baking pans.  It seems I need that extra step up somewhere in my kitchen on a daily basis.   

I have several step stools that range from two steps to four steps stored in various places throughout my home.  The more steps they have, the heavier they are to move.  While I love my 4-step foldable step stool, it really is too heavy for me to constantly be moving around or using on a daily basis.  While the 4-step ladder is still necessary to reach the top shelves of the cabinets, I rarely need the items I have stored on those shelves. Frankly, I am surprised I haven't previously bought the much lighter weight 1-step step stool. 

Because the Rubbermaid 1-step step stool is so thin (2") when folded for storage, I can slip it between the end of my counter and my refrigerator.  That keeps it close at hand when needed.

My KitchenAid 3.5 Cup food chopper review. There are so many tools for the kitchen, one of my favorites is my KitchenAid food chopper. 

We had a smaller food chopper for years, and it worked just fine. For cooking and baking, I wanted something larger.  After doing some research and reading reviews, I decided on this KitchenAid 3.5-cup chopper.

Food choppers are great and will save you time over using a knife to cut larger amounts of ingredients for a recipe.

 This is where I particularly find it handy when a recipe calls for ingredients to be chopped, diced, or minced. It saves me time. To be honest with you, I'm not that good with a knife.

I'm okay using a knife when a recipe calls for small amounts to be diced or chopped. Such as a couple cloves of diced garlic or a couple of chopped carrots.

When a recipe calls for larger amounts of diced or chopped ingredients for soups, stews, or other dishes it's time for me to use the chopper.

Collapsible Stackable Storage Bins with Doors & Removable Lids Review

I love my kitchen, but I wish it had a walk-in pantry.  I have never lived in a home that has a walk-in pantry, but my grandmother-in-law had a fabulous walk-in pantry.  I always thought if I ever built a house, the first thing I would require is a walk-in pantry.

I do have a cabinet pantry, which is pretty, but it simply is not big enough.  My husband's grandmother had room for all kinds of stuff in her walk-in pantry, including small appliances, which left her counter tops clear.  However, since I do not have that awesome walk-in pantry, I am always trying to find alternatives.  

Because we eat most of our meals at home, I need more storage space in my kitchen.  I have a whole shelf in my cabinet pantry dedicated just for the spices I use when cooking and another shelf for baking supplies.  

I hate to admit it, but I started putting surplus supplies behind our washroom door that normally stays open. That was certainly not an attractive solution, but it did provide space for things that I could not fit in the pantry. 

A few weeks ago, something wonderful happened!  I came across storage bins with doors and removable lids.  The fact that they are collapsible, is a huge bonus.  When I do not need them, I can fold them up and store them away.

These storage bins are a lot more attractive than stacked boxes or plastic tubs.  Plus, they fit perfectly behind the open door.

 Closet Organizers and StorageCheck Price There are 2 sizes available.  Based on the measurements of the space behind the door, I opted for a 3-pack of the 8.4 gallon size containers.  Since I know what is inside the containers, the dark, clear plastic sides allow me to see inside the boxes if I look closely, but would not be clear enough for guests to see the contents.  I can access the contents through the latching doors on the front of each container, or I can lift the lid.

The storage bins have little wheels on each bin for easy moving.  Since the bins stack on top of each other, the lids are made with indentations to accommodate the wheels on a second bin. That construction method gives the overall unit of 3 bins more stability.  They will not easily slide off of each other when moving.  I literally have to pick up the top container to move it from the stack.

These stackable storage bins are the perfect solution for my need for an additional kitchen pantry.  Now that I have them, and using them daily, I can easily think of a few other places in my home or vehicles where they would make a wonderful extra storage place.

I have two knife blocks that I constantly use in my kitchen and I love them.  However, I have several chef knifes that I have been given over the years that are not part of a set and do not have a "slot" in the blocks.  For 20+ years I have stored those chef knives in a kitchen drawer, under my cast iron trivets.  Since the trivets sit on little feet, this has worked beautifully for me for all of that time.  I keep those chef knives because we need them during the holidays when I share my kitchen with several family "chefs".

A few months ago, I purchased a Dexter-Russell 12" Scalloped Slicer.  I have been wanting one since fellow contributor, Dawn Rae, recommended the Dexter-Russell 8" Bread Knife.  I needed the 12" instead of the 8" simply because I need to be able to easily cut cake layers in half horizontally.  The Dexter-Russell 12" scalloped slicer is fabulous!  It can cut so much more than cakes or bread and has been a wonderful addition to my kitchen chef knife collection.  I join Dawn in highly recommending the Dexter-Russell knives. 

Unfortunately, there wasn't room for my awesome new Dexter-Russell scalloped slicer under the cast iron trivets so I set it, blade side down, against the side of the drawer.  I keep my hot pads laying on top of the cast iron trivets.  As you can imagine, things shift slightly when hot pads are removed and then put back up.  

By now, you can probably guess what happened.  2 weeks ago, I reached for a hot pad without looking and my finger barely landed on my scalloped slicer. It took over 30 minutes to stop the bleeding. It was the next day before I could touch my finger without the bleeding starting again.  As soon as I could type, I went in search of a knife guard!

One mishap with a knife was all it took for me to seek out knife guards for all of my unprotected chef knives in my kitchen drawer.


Recommended Chef Knife Guards

Fortunately, Dexter-Russell makes a knife guard for the 12" Scalloped Slicer.  It is just as wonderful as the knife itself and it is now protecting my scalloped slicer from my frolicking fingers and hands.

Recognizing the previously ignored need, I also purchased guards for my extra chef knives.

I also ordered a cover for my most beloved vegetable slicing knife, which was originally my mother's knife that she gave me.  Even though I keep that knife in the drawer with our flatware, I realized it really should have a cover too.  After all, I use it all of the time because it cuts so well.  It needs to be protected from frolicking fingers too!

Due to the length and width of the knives, I purchased different knife guard brands.  

 Mercer Culinary Knife GuardThe Chef Sac knife guards are the perfect size for my 8" chef knives, while the Mercer Culinary knife guard is the perfect size for my long vegetable knife.  The 12" Dexter-Russell knife guard was specially made for my Dexter-Russell scalloped slicer, so of course, it is perfect.  There are additional sizes available in the Dexter-Russell guards.

All of the guards are completely open on one long edge so knives slip in and out of the guard with intentional pulling pressure, but they do not slip out otherwise.  The Chef Sac knife guards have felt interiors which I am not crazy about, but they do the needed job of covering the knife blade and they fit the knives.  

Either the Dexter-Russell or the Mercer brand (shown on the right) would be my first choice in knife guards. Which one I would purchase, would be determined by which brand offers the size needed.

I washed all of the guards in dishwashing soap before I used them.  The felt lined guards took 2 days to air-dry on the inside, which is why I don't like them as well.  I doubt the felt will hold up to a lot of wear & tear, but it probably will reduce scratches on the knife blade as claimed.  Since I only use those chef knives during the holidays, the Chef Sac knife guards will probably last years for me.

Regardless of the chosen brand, I highly recommend covering all knife blades with knife guards if they are stored in drawers or anywhere other than a knife block. The guards are definitely cheaper than an emergency room visit and a lot less painful.
