How to Make the Best Chocolate Icing

My parents moved away from their home town in Manitoba, Canada when I was about five years old. We lived in many places throughout our country, but no matter where we lived, my dad would fly his mother out (our Memere) for visits. Oh wait a minute! She would take the train, she was terrified of flying!

I sure hope Memere knew how much I loved it when she would visit.

On one visit, while sitting in the kitchen doing homework, Memere had just finished making a cake. She was about to make the icing, when I decided I had to know how she made such delicious chocolate icing. So being an inquisitive 15 year old, I stood beside her while she explained her secrets.

"What this recipe is about, isn't the ingredients, it's in the mixing, texture and general understanding of what to add and not to add to get the best chocolate icing."

Lets start with the ingredients - They're fairly standard and well known:

Below 'Sylvestermouse Cynthia' asked what Icing Sugar was. In Canada we (most everyone I know) call Powdered Sugar, 'Icing Sugar'. The only brand I use is Redpath Icing Sugar.

Turns out, Redpath Sugar is a Canadian Company as well. According to it's website it's been a part of Canadian kitchens since 1854.

Being Canadian I admit I should have known that, however in my defense Redpath Sugar and Fry's Cocoa have been a part of my family's kitchen since before I was born. That's a long time ago!

Redpath Sugar carries many sugar products, including Icing Sugar. You can find Redpath Icing Sugar at Amazon.ca (not .com), and of course, learn about their products via their website.

What makes chocolate icing awesome:

To no surprise, Memere never measured any ingredients, and to this day, neither do I. 

I learned to make chocolate icing just the way she taught me; by understanding how to get the right texture.

Here's the most important tip from my Memere:
When you need to thin out the icing, do it by adding more softened butter, not more milk
She explained this further: "Because adding too much milk will quickly make the icing mixture too runny, then to fix it you'll have to add more icing sugar to recover the texture from liquid mud to icing. So to avoid this, add more butter first, not more milk"

Putting the Ingredients Together:

Although I never measure, I'll try to put some measurements to the above ingredients
  • In a deeper mixing bowl, put in about two cups of icing sugar
  • Add about half a cup of Fry's Cocoa (add more for a richer chocolate taste)
  • Butter .. hmmm.. I can't give you a measurement - maybe start with 1/4 cup of softened butter, that's 'softened', not melted, not runny, not too soft either. Ensure it maintains it's thick butter texture.
  • Add a teaspoon of pure Vanilla Extract
  • Add a teaspoon of milk, or two teaspoons if the icing is too thick to mix
  • How to know when you've nailed it - For me, I like it when the Icing is spreadable but can hold swirl peaks on the cake, in other words, not too hard, not too soft, just right. 
With a hand-mixer, mix the ingredients together. It won't be the right texture for spreading yet.

This is where the Grandma touch comes in:

If your mixture is too thin and runny, add more Icing Sugar to correct the texture. Keep mixing it with the hand mixer. If you've had to add more icing sugar, you'll need more Cocoa so add a couple of tablespoons at a time. More icing sugar dilutes the chocolate, that's the reason for adding more cocoa.

However, it's more likely the texture will be too thick.

To thin out the texture, add another heaping tablespoon of butter, a couple of drops of milk, a half teaspoon at the most! Then stop completely with adding milk.

At this point, it should be getting to the right texture. If it happens to become too runny again, then add more icing sugar. Sorry I can't give you a measurement for that, just add a tablespoon at a time.

However if it's too THICK, then keep adding softened butter, one tablespoon at a time.

Thanks to Memere, I've never used store bought icing. I always make it from scratch.

If I had to choose the key ingredient (other than butter) it would be Fry's Cocoa. That's also the cocoa we use to make the chocolate cake recipe passed down from my grandmother on my mother's side.

My kids have grown up on our homemade chocolate cake and homemade icing thanks to our grandmas on both sides - and it's the only birthday cake they want. Store bought is a no-no.

Added Tip: You CANNOT put icing on a cake until the cake is COMPLETELY cooled. I'll usually put the cake in the fridge to fully cool it off if time is an issue.

Stenciling cupcakes is a fun way to decorate cupcakes. Using stencils is a pretty easy way to decorate beautiful Halloween cupcakes that are certain to be a frightening fantastic addition to your party table.

By simply using stencils, confectioners sugar or sanding sugar, you too will be able to create tasty treats that double as great Halloween decorations.

If you can't find the cupcake stencil you want, why not use a small cookie cutter?

Let me show you exactly what I am talking about and what your guests will be talking about at your Halloween party when you make these creepy cupcakes!


Choose the Right Cupcake Recipe


Stenciling cupcakes is a fun and easy way to decorate a cupcake. I am sharing simple step by step in instructions for stenciling Halloween Cupcakes along with lots of photos and tips.
For convenience, I used boxed cake mixes to make my cupcakes. I baked 12 large Triple Chocolate Fudge with a Betty Crocker Super Moist cake mix and 12 large Lemon Supreme cupcakes with Duncan Hines Moist Deluxe cake mix. 

I selected these flavors because I knew I would not be icing all of them and I wanted cupcakes that would taste good without icing.

Delicious filled cupcakes would be ideal for these stenciled cupcakes for Halloween since they will not be frosted.

Here are a few recipes you might like for your frost-less cupcakes.

Recipes for Cupcakes that are Delicious Without Icing




Supplies You Will Need to Get Started Stenciling

Supplies for Stenciled Halloween Cupcakes
  • Baked Cupcakes ~ I baked Triple Chocolate Fudge and Lemon cupcakes
  • Stencils or Cookie Cutters
  • Confectioners Sugar
  • Sanding Sugar ~ your choice of colors
Decorators note:  An essential tool for decorating with Confectioner's sugar is a cup with a mesh top.


Recommended Powdered Sugar Shaker


With Stainless Steel Mesh Dome Lid 


This cup will allow you to literally sprinkle confectioners sugar onto your cupcake once the stencil is in place. It will cut down on the mess often associated with decorating with confectioner's sugar.


Directions for Stenciling Cupcakes


  1. Using Cupcake Stencils - Place the stencil on the cupcake
  2. Sprinkle Cupcake with Confectioners Sugar then Slowly
  3. Gently Lift Stencil Off of Cupcake

Easy Stenciled Cupcakes for Halloween

 

Use A Cookie Cutter to Stencil

If you don't have stencils on hand, you could also use a small cookie cutter.  Owls and ghosts were not included in my stencil pack, but I wanted cupcakes decorated with them.  Since I love owls and ghosts at Halloween, I used my cookie cutters.  It is the same process, you simply have to make sure you have a good hold on the cookie cutter and have it firmly pressed against the cupcake top so the powdered sugar doesn't escape the sides. 

Stenciling Iced Cupcakes


Stenciling cupcakes that have icing is a little messier and a bit more tricky, but can certainly be done!  

To stencil an image on icing or frosting, you would want to use sanding sugar instead of powdered sugar.  The sanding sugar does have an added "sparkle" benefit.

You do need to be extremely careful when you lift the stencil or cookie cutter off the icing to keep from dropping excess sugar outside of the image lines.  The icing tends to try to hold on to your stencil.  I recommend lifting it straight up and off the cupcake  without tilting the stencil.

  1. Using Cupcake Stencils - Place the stencil or cookie cutter on the frosted cupcake
  2. Sprinkle Sanding Sugar on the Cupcake,  then Slowly
  3. Gently Lift the Stencil Straight Up & Off of Cupcake

When you decorate your Halloween cupcakes with stencils or cookie cutters, your variety is limited only by your cookie cutters, stencils and supplies.   I have dozens of cookie cutters and several packs of Halloween stencils.  I enjoy playing around with them and seeing what unique cupcakes I can create.  Now, everybody knows you can't celebrate Halloween without the black cat.  Isn't he spectacular on his golden moon cupcake!

They are also great for cakes!

Supplies Used in This Article


Confectioners Sugar is available in most grocery stores.  A variety of sanding sugar colors is not as easily obtained.  I purchase mine online.  

I also purchase my cookie cutters and stencils online. 



The Stencils


The stencils used in this article are an older pack of Martha Stewart Halloween stencils - M230600 (UPC #015586743364). The pack includes the bat, 2 jack o' lantern faces, the witch, the spider, the web, the skull & crossbones and the raven. (Neither the raven nor the web are shown on the front of the package.)  The only place I could find them at the time of writing this article was on eBay.


Since eBay inventory changes constantly, I recommend checking here again soon if you don't see exactly what you want right now.

Halloween Desserts - Part II of Halloween Recipes on Review This!

Halloween party planning is in full swing. As part of our series for Halloween Recipes on Review This Reviews, I now feature dessert recipes for the fun of Halloween. And I found some for those amazingly creepy and ghoulish parties, as well as for those charming fun parties.

This one, I just couldn't resist. Snakes are the one animal that really creep me out. That means a snake cake is perfect for a Halloween party dessert. Not only does this look incredibly real, but it will delight you guests with how good it is when you can actually break down and cut the cake.

The snake cake tutorial is from Sylvestermouse, so we know the instructions are easy to follow and the tips are perfect to make sure we can duplicate the look. She is always so careful about that. But, she did more than just this scary and perfect-for-Halloween-desserts snake cake.

As long as you are preparing fun stuff for your Halloween buffet, try adding in some brain candies, skull and cross bones shapes or even a few chocolate spiders. Halloween candy molds are easy to use to create some extra little desserts for your party guests. 

My favorite trick is to tuck some of these chocolate candies around and under the dessert platters and cake stands on my buffet table. Yes, I can creep out my guests with the spiders, but that's part of the fun of a Halloween party.

These cupcakes would make a great addition to your Halloween buffet table. Set them up on a cake plate stand so they add visual appeal to your table. Then stand back and watch your guests enjoy themselves.
