Modified a Banana Loaf Recipe to Make a Pumpkin Loaf


Quarantine is bringing out the creative baker in me. Not really, but I'm trying.

I wanted to make a Banana Loaf using my favorite personal recipe. However, the boys ate all the bananas. Guess what? There are no bananas at the grocery store! Really ... bananas? I've seen the flour aisle cleaned out, but missing bananas was a first.

Apple Pie was planned for our Easter Sunday dinner, but guess what? The boys ate all the pie.

So I opened the cupboard to see how to modify my Banana Loaf recipe and found a can of Pumpkin Pie Filling - not expired, thank goodness.

My Revamped Banana Loaf Recipe Turned Into a Yummy Pumpkin Loaf Recipe

I've never made a Pumpkin Loaf, but how hard could it be right? Lol.

After searching online for a Pumpkin Loaf recipe, I decided I didn't like any of them - too complicated.

My Banana Loaf recipe is six freaking ingredients, all in one bowl! Easy peasy. Thus, I began experimenting to modify my favorite recipe to make my first Pumpkin Loaf.

The biggest challenge was determining how much Pumpkin Pie Filling to replace three medium to large bananas in a banana loaf.

After googling around, I determined that one-half plus a heaping tablespoon of a 540ml can of Pumpkin Pie Filling should work. Actually, I had no idea - it was a cross-your-fingers-and-toes guess.

My Pumpkin Loaf Recipe - Modified:

. 1/2 CAN plus 1 heaping Tablespoon of Pumpkin Pie Filling (Full can be 540ml, which is 2.28 Cups - so use about 1 and 1/8 Cups of Pumpkin Pie Filling)

Here's the Pumpkin Pie Filling
I used - Any kind should do

. 1 and 1/2 Cups of Flour

. 1 Cup of White Sugar

. 1 Teaspoon of Baking Soda

. 3 Heaping Tablespoons of Softened Butter (not melted)

. 1 Teaspoon of Vanilla Extract

For flavor, in the same bowl, I added:

. 1 Teaspoon of Ground Cinnamon
. 1 Teaspoon of Ground Cloves
. 1/4 Teaspoon of Allspice
. 1/4 Teaspoon of Nutmeg

Mix everything in one bowl. Put it in a regular-sized Loaf Pan. Bake in the oven at 325 degrees for 45 to 60 minutes, depending on your oven. Check it after 30 minutes (or before that if your oven is on steroids or something).

Since this was a trial variation of one of my recipes, I didn't add anything like raisins or nuts. However, it turned out beautifully, so I'll add raisins next time. I plan to boil the raisins in water to soften them first.

This plain pumpkin loaf is delicious with butter, cream cheese, jam, or peanut butter.

National Pecan Day Review

 National Pecan Day is a Food Holiday celebrated each year on April 14.  The pecan is a  member of the hickory family and is native to central and southern United States.  Pecans make great snacks eaten on their own, but they also make terrific garnishes to other foods such as desserts, salads or the main meal. 

"Pecan” is an Algonquian word, meaning a nut requiring a stone to crack. 

The pecan tree is the only nut tree native to North America.  These trees grow best in central and southern United States. Georgia, in particular, is known for it's Pecans. 

Here are two of my favorite recipes using pecans – Pecan Pie  and Sugar Coated Pecans. Either recipe ~ or both ~ would be a great way to celebrate National Pecan Day!

Directions for Pie Crust:


Mix 3 cups flour and 1/2 tsp. salt in a bowl. Add 3/4 cup vegetable shortening and 3/4 cup salted butter. Work the butter into the flour using a dough cutter until the mixture resembles tiny pebbles.
    Add one egg, 5 tablespoons cold water and mix until just combined. 

    *This recipe makes enough for two pie crusts.

    Directions for the Filling:

    1. Mix one cup sugar, 3 tablespoons brown sugar, 1/2 teaspoon salt, one cup corn syrup, 1/3 cup melted  butter, 1 teaspoon vanilla and 3 whole eggs (beaten) together. 
    2. Roll out one dough half to fit your pie pan. Pour one cup of chopped pecans in the bottom of the unbaked pie shell. Pour the syrup mixture over the top. Cover the top and crust with foil.
    3. Bake the pie for 30 minutes in a preheated oven at 350 degrees. Remove the foil, and then continue baking for 20 minutes, being careful not to burn the crust or pecans.
    4.  The pie should be set and not jiggly when you remove it from the oven. If it seems to shake a lot, recover with foil and bake longer, or until set. The required baking time varies from 50-75 minutes. 
    5. Cool for several hours or overnight. Serve in thin slivers.

    "These sweet pecans are wonderful snacks for any occasion."

    Ingredients:


      
    • 1 cup white sugar
    • 3/4 teaspoon salt
    • 1/2 teaspoon ground cinnamon


    Directions:


    1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
    2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
    3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
    4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

    In addition to sugar coated pecans, another absolutely delicious pecan sweet treat is pralines.  The best I've ever had are handmade at River Street Sweets candy shop in Savannah, Georgia.

    Jesus of Nazareth Movie Reviewed

    Jesus of Nazareth Movie Reviewed
    I remember when the movie "Jesus of Nazareth" was first released in 1977.  Even though that was over 40 years ago, it seems like yesterday.  It was the first time I had ever seen a visual depiction of the crucifixion of Jesus Christ.  

    Of course, I had seen still pictures, statues, and had the mental images my own mind created when reading the scripture.  But none of that was as impacting as watching our Lord being led down the Via Dolorosa.  Then seeing Him nailed to that cross while he was mocked and murdered.  

    One of my favorite passages in the Bible is when Jesus told the thief on the cross next to him, "today you will be with me in paradise" (Luke 23:43).  The realization that all that is required for salvation is accepting Jesus as the Son of God, your savior, is phenomenal.  It is recorded that the thief defended Jesus saying "He has done nothing wrong" and then the thief said “Jesus, remember me when You come into Your kingdom!”  

    What a glorious revelation to the world!  So much was required of Jesus, but so little is required of us.

    To this day, this is still my favorite movie about Jesus, and I have seen several.  There are some areas where the movie deviates from scripture.  Perhaps, that is for dramatic effect, or scripture interpretation.  It may well be nothing more than combining scripture passages into one event.  Regardless, it can be distracting.  I recommend reading the Gospels (Matthew, Mark, Luke and John) for the complete truth.

    In spite of the directors artistic liberties, I still recommend this movie.  The main reason I prefer "Jesus of Nazareth" over others is because it starts before Jesus was born.  Acknowledging the virgin birth and Joseph's obedience to God is unique and extremely important.

    It includes Mary visiting Elizabeth, mother of John the Baptist, when they were both with child.  The Bible says "When Elizabeth heard Mary's greeting, the baby leaped in her womb".  (Luke 1:41)  That is truly a significant moment when you know that as an adult, John was a prophet that proclaimed the coming of the Messiah.  

    The movie includes the baptism of Jesus, preformed by John the Baptist. (Matthew 3:13-17)  However, the movie takes some liberties here that I am not too thrilled about.  Scripture says:  "As soon as Jesus was baptized, he went up out of the water. At that moment heaven was opened, and he saw the Spirit of God descending like a dove and alighting on him.  And a voice from heaven said, “This is my Son, whom I love; with him I am well pleased.”   Instead of being scripturally accurate, the movie had John speak instead of God.  That is a major difference for me.  God did not speak through John. 

    For the most part, I liked the depiction of the disciples, as well as the choice of actors to play the parts.  I know of nothing in the Bible that depicts Judas as graciously as this movie does.  It is possible that Judas was tricked and deceived by people, but I haven't found that supported by scripture. 

    The last discrepancy that I would note about the movie, is with the discovery of the empty tomb.  Scripture tells us that John and Peter ran to the tomb when Mary Magdalene told them the tomb was empty.  (John 20:1-18)   Sadly, that verification by John & Peter was omitted in the movie. 

    Scripture also records in John 20:17, "Jesus saith unto her, Touch me not; for I am not yet ascended to my Father: but go to my brethren, and say unto them, I ascend unto my Father, and your Father; and to my God, and your God."  Only a portion of this scripture was quoted in the movie.

    I would also recommend reading about the multiple accounts of Jesus appearing and interacting with the disciples after his resurrection.  This is an example of how the movie combined several events into one.


    Why I Recommend Jesus of Nazareth 

    In spite of the discrepancies above, I would still recommend watching "Jesus of Nazareth".  The movie is a reminder of what happened on Good Friday and Easter.  It also serves as an introduction that will, hopefully, cause anyone to seek further knowledge of Truth through the scripture.

    Book Review: Missing Sister

    The Missing Sister is an exciting mystery that takes place in some out of the way places in Paris:  the catacombs, the brothels, and the underworld

    Characters

    • Shayna Darby is recovering from the death of her parents when she gets a startling call from Paris.  Her twin sister, who she has not been getting along with is missing and she has been called to identify a body that was pulled from the Seine, that is presumed to be her sister.  When she arrives at her sisters apartment and starts going through her sisters things she makes a startling discovery.  A message, written on a whiteboard in a code that the two sisters developed to talk to each other.  This message could only be meant for her and it said "Alive, Trust No One".  Shayna is excited that her sister is alive but now does not know who she can trust to help her.  She identifies the body as her sisters, even though she realizes it is not, so that she can keep the ruse going while she does her search.
    • Angela Darby, the wilder of the twins went to Paris to study and never returned home.  She loved Paris and was very involved in her life there.  She did not even return for her parents funerals, which became a sore spot between the twins. What was she studying and why did she disappear?  These are questions that Shayna needs to investigate.
    • Jean- Luc lives in the apartment above Angela's.  He introduces himself to Shayna as a representative of the embassy who is there to help her get accustomed to Paris. But can, Shayna trust  him or does he have something to do with Angela's disappearance.
    • Sebastian introduces himself as Angela's boyfriend, but Shayna has never heard of him before.  Of course, Angela has not told her many things the past few years.  At first she lets Seb show her around, but after seeing Angela's message she wonders.  Can she trust him?
    • Valentin- The Officer in charge of the case.  Is he someone Shayna can trust or should she take her sister's warning literally.
    • Chang-a neighbor of Angela's and the one person Shayna feels good about trusting.

    Rose's Christmas Cookies

    Yankee Candles for Easter 

    It is a different world that we live in as I write this post on March 30, 2020. Most of us are living 'physically distant' or practicing 'social distancing' from family and friends as together people throughout the world attempt to slow down the spread of this virus by reducing contact with others. I know that in my home Easter is going to look different than it has in the past. We are not very religious but we celebrate Easter as a way to come together with those who are important to us and, of course, close enough to visit. This will be the first Easter dinner we have eaten with just the two of us present in almost thirty years.

    We usually start the day with an Easter egg hunt or, given the fact that we are all adults, a look-under-your-bed chocolate Easter bunny hunt.

    The rest of the day is spent with a walk and a few board games. For supper we normally share a feast of scalloped potatoes, baked ham, fresh asparagus and some sort of yummy lemon dessert.

    My husband and I spoke briefly recently about what we would do this year given that we are in self isolation and it will be just the two of us. Arbitrarily, I decided we did not need a chocolate Easter bunny, which removes the necessity of my husband going to the grocery store. The deal in our household is that I will be the one person to go to the grocery store once every two weeks. This reduces our contact with other people and lowers our chances of catching the virus.

    However, I am hoping to make a smaller version of scalloped potatoes and some acceptable substitute (though I do not know what it looks like yet) for my ham recipe. In substitution for the chocolate bunny, we will make ourselves a special homemade treat, which will fill time as an activity and could well turn out to be better than a chocolate bunny. Yes, chocolate lovers that is possible!

    We will pull out a few of our Easter decorations. We do not have many but we do have a few and they will help make the day brighter.

    However you choose to mark the day remember to stay home, be safe and keep on smiling. We are all in this together and together we will flatten the curve and get through this. As they say in French Canada with the picture of a rainbow and a smile, "Ça va bien aller."
