We like to take advantage of the grilling season here in Western New York because around here the snow will be flying before you know it. Fran saw an advertisement for these shish kabob grilling baskets and she knew we had to have them.

Fran bought two sets of four of the grilling baskets. We had them for about three weeks, and I just couldn't wait any longer to give them a try.

I picked up two 10oz. steaks, one Rib Eye, and one Strip steak along with three boneless chicken breasts. For the vegetables, we used one green and one red bell pepper, one large onion, and fresh mushrooms.

I cut the steak and chicken breasts into cubes to fit the baskets, about 2-inch cubes. I marinated the steak and chicken overnight in Chiavetta's Barbeque Marinade. This is a perfect marinade for chicken and beef, we use this faithfully.  After marinating, I sprayed the kabob baskets with cooking spray and filled the baskets with the meat. We used six out of the eight baskets we bought.

 The cooking spray makes for easy clean up of the baskets.  Then, I seasoned them with Penzeys Chicago Steak Seasoning.  

Close the top of the basket slide the ring up to lock in place and you're ready to grill. I choose to load the baskets with all meat. But you can alternate meat and vegetables if you like.

 I cleaned the mushrooms and removed the stems, cut the peppers, and onion. I marinated the vegetables for about 30 minutes with an 8oz. bottle  Wegmans Basting Oil. Then, I grilled the vegetables in a separate grilling basket.

This is the end result right out of the kabob baskets. The steak grilled to an internal temperature of 125 degrees for a perfect medium-rare, and the chicken grilled to 165 degrees internal temperature. The vegetables were grilled until they were nice and tender but still a bit crispy.

In my opinion, the Kabob Baskets are amazing, I'll never use skewers again. As long as you spray them with cooking spray before grilling clean up is fairly easy.

Tip: The kabob baskets have wooden handles which makes it difficult to close the grill lid. I used a mini bread pan to stop the grill lid from touching the handles. This kept the grill lid about 3-inches from the handles and allowed me to keep some heat as they grilled.

Reviewing Grill Mat

I love to cook out on my deck using my gas grill.  For Christmas I received a pair of grill mats that have made grilling and cleanup so much easier.  These mats are sold in sets of two and can be cut to fit any size grill.  They are also good on any kind of grill.  So, whether you have a charcoal, propane, gas or electric grill you will  want to check out these handy mats.

As you can see in the photo above I put my entire meal on the grill mat.  In the photo above I have hamburgers and a variety of vegetables.  No extra pots or pans needed, just my easy to clean grill mat.

When we are finished eating and the grill has cooled down, I bring the grill mat inside and wash it off with sudsy water in the sink.  It cleans very easily and is quickly ready for use the next time I grill.

Reviewing McCormick Smokehouse Maple

McCormick's Smokehouse Maple has become one of my favorite spices. Living in the Baltimore area, I take it for granted that everyone is familiar with McCormick spices. Realizing that not everyone may be aware of this sweet, smokey blend I thought I should stop keeping this little secret to myself.

Smokehouse maple is an excellent spice that is recommended for pork and chicken. Some people use it on fish and I regularly use it on burgers. Just a small amount of this seasoning (dry rub) goes a long way in adding a sweet, smokey flavor to your meal.

Ingredients list: 
salt, cane sugar, brown sugar, molasses (refinery syrup, cane molasses, caramel color), garlic, onion, spices (including paprika, chili pepper), orange peel, red bell pepper, maple syrup & natural flavor (including smoke)

If you are looking for recipes, McCormick provides a selection of recipes and meal ideas that use Smokehouse Maple specifically. I hadn't thought of using it on grilled corn on the cob! What a great idea.


 Why I prefer the Smokehouse Maple


When I am camping at The Shack, all of my hot meals are prepared on the grill, in the smoker, or in hobo packs in the wood stove. My land is on what had previously been an apple orchard. So my wood stove and my smoker are fueled with apple wood from my yard and hard wood from my woods. 

I prefer grilled foods and smoked foods. That smoked flavor is my preference. When I return to the apartment, I do not have an access to a grill and am not able to smoke my foods.

I typically fry or bake a pork chop with a light sprinkle of this seasoning. Or I add a bit to my burgers. McCormick's Smokehouse Maple takes care of my grill cravings when I am unable to grill.

The Oster Griddle and Why I Love It - A Review

The biggest reason we have a Griddle in the house is to make pancakes.

For decades home-made pancakes have been a staple in our home and when we're in-between grills, pancake breakfasts usually hit the skids.

Well, we've been in the 'in-between' stage for about a year or more, so just recently I decided a new Griddle was in order.

What's nice about a Griddle is the convenience for breakfast! My fourth son is now 16, still in high-school, and I make it a habit to prepare him a decent breakfast before school. That breakfast usually ranges between:
  • Free-Range Eggs, Spinach & Kale fried in Coconut Oil and Sliced Oranges, or
  • A Grilled Cheese Sandwich with Sliced Oranges or Bananas
What Do I Love about The Oster Griddle?

We've had a Griddle in our home for decades, and I do have a good amount of experience determing whether a grill passes the 'pancake' making test.

When I tried the Oster Griddle for the first time, I knew instantly, by how the pancakes browned, whether I had a winner ... and yes, according to my pancake making judgement, this grill is a winner.

Here are the points about the Oster Griddle that I appreciate:
  • It's ceramic non-stick coating is fantastic for non-stick performance. For the first batch of pancakes, I always put a bit of butter on the grill (even with a non-stick griddle) just to be safe. But with this grill, although I haven't tried it, I believe the butter was unnecessary. However, for the other three batches of pancakes, I did not add any butter whatsoever and the pancakes didn't stick at all!
  • The size of the grill is nice - I was able to make six good sized pancakes at a time.
  • The surface is scratch resistant and less likely to peel or flake. I haven't had ours long enough to give it the scratch test, but based on the durability of the surface, I can believe it.
  • The ceramic coating is free of PTFE & PFOA chemicals.
  • Food cooks evenly
  • It does cook faster and thus I imagine that will save energy over time
  • It looks nice on my counter and it's a snap to clean
I plan to use it frequently for breakfasts and it's situated conveniently beside the Vitamax and Coffee Machine (the two other appliances that get the most use).

Enjoy My Pancake Recipe:

Well, it's not really mine, it was my Mom's and before Mom, Grandmothers :)
  • 1 Cup of Flour
  • 3 Teaspoons of Baking Powder
  • 2 Tablespoons of Sugar (Optional)
  • 3/4 Teaspoon of Salt (Optional)
  • 1 Egg
  • 1 Cup of Milk
  • 2 Tablespoons of Melted Butter or Oil
  • 1 Teaspoon of Vanilla Extract
Mix all of the ingredients together (manually). Don't over mix it of course. Let the Mixed Batter sit for five or ten minutes or even longer if needed. Then, using a ladle, scoop onto your grill ... greased with a little bit of butter if you like.

On the Oster Grill, the temperature between 265 and 300 degrees seemed to work fine for me.

The secret to good, fluffy pancakes is to only flip them once.

You'll know the first side is cooked when there are 'bubble-holes' peeking through the uncooked side. However, you can usually tell by the smell, or just take a little peek to be sure they're the color of golden brown that you like.

Flip them over, let the other side cook for a few minutes or less, and they're done.

Because we are so many in our family, and everyone has there own preference for the fixings they like inside their pancakes, I'll add the items to each pancake on the uncooked side one at a time, while the one side is cooking. Tip: When you add the food item to the uncooked side, gently spread some of the batter from that uncooked side over the food item - that way when you flip it over, you'll have batter cooking on the grill instead of the chocolate chips, blueberries or whatever you added hitting the grill directly (which could burn).

Popular flavor additions in our home are chocolate chips, fresh raspberries, strawberries or blueberries. This morning it was chocolate chip pancakes and blueberry pancakes.

So yes, I recommend this grill, we love it!

Grilling Vegan Style, Cookbook Review

With outdoor grilling season soon to be upon those of us in the colder climates, it's time to tell you about a new cookbook I found. Grilling Vegan Style, by John Schlimm, is way more than just another vegan cookbook. It turned out to be an eye-opener for me.

It's true I have had to turn to vegan eating for my own health, but I also discovered how exciting and delicious the foods can be. One thing I wanted to do was to grill vegetables. Haha - you think a vegan lifestyle is stuck with grilling veggies only? Then you are in for a treat with Grilling Vegan Style.

For the Novice Griller and Expert Alike


Now, I will have to admit that I was a complete novice when it comes to using an outdoor grill. I had just gotten my first grill. But how much charcoal do I put into it? How will I know when the coals are ready? My list of questions was long. And author John Schlimm came to my rescue. He starts off with a simple explanation of how to handle a charcoal grill. After reading his explanation, I made my first grilled dinner easily.

So maybe you have lots more experience than I do. Maybe you have a gas or electric grill. Don't worry. Schlimm has you covered there, too. He details what temperatures look like on your settings, how to prepare your grill for cooking, even how to work with direct and indirect heat.

Covering Recipes for All


Granted, my initial grilling attempts were simple things like veggie kabobs and veggie burgers, but I knew I would expand into all numbers of delicious dishes after looking through Grilling Vegan Style. Schlimm shows you how to grill any number of foods including fruit. Grilled pear halves is now a great favorite at my house.

Those of us who enjoy tailgating have a friend in Schlimm. He has a whole chapter full of great recipes just for tailgate parties. Take a look as his Halftime Pizza recipe for example.

More than just tailgating, he covers picnic options, summer salads topped with grilled goodies, even PB & J sandwiches for the kids in all of us. Personally, I can't wait for watermelon season. Yep, you heard that right. Grilling Vegan Style includes a recipe for a grilled watermelon salad.

Helpful Tips Make a World of Difference

John Schlimm is not just your average cookbook author. He adds many helpful tips to make grilling easier, better and more flavorful. My favorite trick, learned from Schlimm, is to soak potato fries in hot water before grilling them. That gives the fries that crispy outside.

He includes a whole chapter on marinade recipes. Not only are they delicious, but he offers timelines to help you. How long to marinate different veggies, fruits and other yummy treats, like tempeh and tofu.

As my world starts to gain warmer days, I'm grilling more and more outside. And my go to cookbook, not only for new recipes, but new ideas as well has become Grilling Vegan Style. Frankly, I'm not sure I would have been so successful from the beginning without it. May you have as much fun grilling as I do.
