National Oatmeal Muffin Day is celebrated on December 19th each year. It's one of those minor holidays with no known origin, but since it involves a delicious and healthy muffin, we are happy to celebrate this fun foodie day.

Ingredients for a quick & easy oatmeal muffin recipe I like that I found on Allrecipes include 1 cup of quick cooking oats, milk, an egg, vegetable oil, flour and salt. Baking powder is added as the raising ingredient.

Prep time is about 15 minutes and baking in a preheated oven (at 425 degrees) is 20-25 minutes. Not long at all for a dozen tasty breakfast muffins. A warm, delicious treat on a cold morning.

Muffins are a great way to start the day and especially oatmeal ones. My mother would always tout the benefits of eating oatmeal, but I didn't like porridge, so these muffins were a go to for me growing up! I love your easy to follow recipe and will try this one out as well. Thanks Pat!

DeleteI really appreciate this basic recipe - I prefer recipes with basic ingredients and with less than ten ingredients, and especially those that can be created in one bowl - the banana loaf recipe I use is exactly that. Thank you - I'll probably give these a try.

DeleteMuffins are definitely a great way to start the day! I haven't oatmeal muffins in a long time. I most often defer to some kind of berry muffin. It is hard to beat the basic oatmeal muffin though. Happy Muffin Day Elf!

ReplyDeleteNow that I no longer eat grains, I sometimes make grain-free oatmeal (AKA “noatmeal”) and bake “noatmeal” cookies, which are quite yummy, albeit not identical to the original. You have inspired me to look to see whether someone has already developed a “noatmeal” muffin recipe that I can try. If not, I might try developing one myself!
I had not heard of 'noatmeal' baking (like in cookies), but you should develop a muffin recipe that others who do not eat grains can enjoy too. Good idea, Margaret.
