This is one of those recipes we had packed away and had not made for some time. This past Holiday season, Fran was going through some old recipes and found our spinach ball recipe.

We both thought wow we haven't made these in a long time. So, we decided to make them and we're so glad we did. 

Spinach Ball Ingredients:

  • 2 cups( 2-10 boxes) frozen chopped spinach
  • 3 large eggs
  • 2 cups seasoned bread crumbs
  • 1/2 cup grated Parmesan Cheese
  • 1/2 teaspoon garlic powder
  • 1/2 cup melted butter
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions:

  1. Thaw and pat dry the spinach.
  2. In a large mixing bowl, combine all ingredients and mix well.
  3. Scoop out portions of the mixture and roll into bite-sized balls.
  4. Place them on a greased cookie sheet or lined with parchment paper.
  5. Bake at 375 degrees for 15 to 20 minutes until they are golden brown and firm to the touch.
  6. Cool for a few minutes before serving.
These spinach balls are a great way to incorporate healthy greens into your diet without sacrificing flavor. Spinach balls are a perfect appetizer for any party or just as a snack. 

If we have any leftovers we freeze them. You can take them out of the freezer and pop them in the oven to warm them up for a snack. I like them plain, but you can experiment with different dipping sauces if you like.

Another perfectly sized gadget which is just my size! Actually I am not a fan of coffee, but cannot exclude the coffee drinkers in a home. This mini brew is not only mini sized per cup I love it requires a small footprint for the counter top.

As gadgets go this may be one of the most flexible and valuable! If you live in an area where the power grid can be sketchy, this is an item of interest. A mini oven whose first intent was a portable oven for camping by as the reviewer discovered became invaluable at home during a power outage. What a fabulous gift for a camping friend!

Liquid rubber in a can with so many darn uses! Who knew. I used this to repair a pesky little hole in a gutter that was being a problem child. I used the spray version of the flex seal to spray the area I knew the hole existed. Voila! Problem solved.

Whoa! The fun fun memories reading this review brought back of badminton in the yard. The sets have come along way and now portable badminton sets are available. What a great holiday gift this would be (hint hint!)

Stuffed Mushroom Day Review

Stuffed Mushroom Day is celebrated on February 4th each year.  As the name implies, it is a day set aside to enjoy this tasty treat by everyone who loves mushrooms.


Stuffed mushrooms can most likely be credited to the Italians, as mushroom recipes resemble the Italian stuffed zucchini.

A favorite recipe for stuffed mushrooms most often includes breadcrumbs, parsley, olive oil and garlic. Other favorite ingredients are crabmeat (my favorite) or sausage, and other vegetables to your liking. Smoking Meat for Beginners Book Review
Everyone knows that I have a passion for preserving old family recipes. These are recipes passed down from my grandmother, mother, and aunts. You can find these old family recipes along with some new ones on my blog, Sam's Places.

During grilling season here in Western NY I love cooking on my grill. I'm always looking for new ideas and recipes to try on the grill.

A few years ago I started to follow David Farrell's blog oldfatguy.ca. I quickly became a fan and very interested in David's recipes and methods of smoking meats.

At the time I didn't have a smoker, I had a gas grill. I really wanted to try one of David's methods. So I followed his method for his 3-2-1 Spareribs on my gas grill. I picked up some wood chips wrapped them in tinfoil then poked some holes in them. 

I followed his method for seasoning, temperature to maintain, and cooking time. They were delicious and I was hooked.

 

The Old Fat Guy's Guide To Smoking Meat For Beginners

When his book came out I couldn't wait to buy it. I knew that I wanted a smoker but had no idea what type of smoker to buy. After reading the very first section of the book where David explains the benefits and downsides of every type of smoker. I decided that I wanted an offset smoker.

 And, low and behold, for Father's Day my daughter bought me this Char-Griller offset smoker. Now I was all set. 
 I had the book and the smoker.

The next part of the book will explain all about accessories for your smoker. What you need from temperature control, cleaning your equipment, cooking utensils, types of wood for smoking, and much more.

Then, David tells us how to get your smoker ready no matter what smoker you have. There is a whole section dedicated to food safety. I found this to be very helpful with tips on cross-contamination, dangerous ingredients, and improper storage.

You will find classic recipes and methods along with appetizers, rubs, sauces, and marinades. Read about David's many successes and some of his failures along the way. 

This is my go-to book along with David's blog whenever I'm preparing to smoke something. You'll find this book easy to read and non-technical. This is a perfect gift idea for not only beginners, but even the most experienced smokers will find useful information in this book.

Site Review ~ Dinner, then Dessert, a Recipe Website

The other night I decided I wanted to fix Egg Foo Young for my dinner, as I had some leftover ham to put in it.  I almost always order Egg Foo Young at a Chinese restaurant, as it is my favorite. Since one doesn't often 'eat out', I sometimes fix restaurant favorites at home.  

I have made Egg Foo Young often over the years, but, while good, it just never tasted the same as my favorite at a Chinese restaurant or Chinese Take-out. And I never knew why. So I decided to look online for a new recipe to see if I could duplicate my favorite. Much to my surprise, I discovered that I have been 'cooking' my version incorrectly.  I would beat the eggs and add the ingredients (vegetables, and  sometimes meat or seafood) and cook it all at once like an omelet.  Aha ~ THAT was my mistake.  I discovered you cook individual helpings like a pancake! 

When I did a Google search for a new Egg Foo Young recipe, I accidentally came across a recipe blog called Dinner, then Dessert, and I am SO glad I did.  The author is a trained professional cook who worked as a Private Chef for 10 years, and all the recipes on her site are her own. Not only are her recipes delicious, but her presentation is attractive and easy to follow and her writing is delightful. Her name is Sabrina Snyder.

Sabrina Snyder is a professionally trained personal and private chef of over 10 years. 

She started Dinner, then Dessert as a business in her office as a lunch service for her coworkers who admired her lunches, before going to culinary school and becoming a full time personal chef and private chef. 

As a personal chef Sabrina would cook a family's entire week of dinners one day a week, including all grocery shopping, cooking and cleaning up, and leave them with instructions on reheating each meal.

As a private chef, she cooked for private parties in family homes in the evenings.

Sabrina enjoyed this lifestyle for 10 years, until her life and kids became her priority and  she stepped away from other people's kitchens to stay in her own kitchen.

In  2015, Dinner, then Dessert became an online recipe website where Sabrina began posting recipes she had shared with clients over the years. 

In addition, she still has private chef clients she cooks for.  Sabrina treasures her distinction of being a trained professional  chef.

Egg Foo Young is a Chinese egg omelet dish made with  vegetables with an easy gravy topping. I share her recipe here:

Course: Main Dish
Cuisine: Chinese

Prep Time: 5 minutes
Cook Time: 10 minutes
Total  Time: 15 minutes

Ingredients:

8 eggs
½ onion, chopped
½ cut carrots (chopped and steamed)
¼ cup green peas
½ cut green bell pepper, chopped
¼ cup bean sprouts, cut in half
½ cup mushrooms
1 tablespoon light soy sauce
3 tablespoons sesame oil, divided

Instructions:


  1. Add the eggs, onion, mushrooms, bell pepper,  bean sprouts and soy sauce together in a bowl and whisk to combine.
  2. In a large skillet, heat 1 teaspoon sesame oil at a time for each pancake you cook on medium heat.
  3. Add about 1/3 cup of mixture per pancake and cook for 3-4 minutes on the first side and 1-2 minutes on the second side.


Egg Foo Young Gravy

1 cup chicken stock
2 tablespoons light soy sauce
1 tablespoon dry sherry
1 tablespoon cornstarch

Add everything to a small sauce pan and whisk well before the liquid heats up.  Cook and whisk until thickened. 


Recipe Notes from Sabrina about this Egg Foo Young Dish:



Egg Foo Young is sort of the classic leftovers meal made into a restaurant favorite. At our local Chinese restaurant the classic egg version of the dish comes out with a different assortment of ingredients mixed in almost every time we go.
I’ve asked our favorite waiter (who puts up with our circus of a family) why the fillings change and he explained to me that Egg Foo Young is a leftovers recipe and that when they have more or less of certain vegetables they just adjust the filling to what they have.

Following what Sabrina learned  about this Egg Foo Young recipe filling being adjusted, I made my recent version using only fresh mushrooms, diced onions and ham diced up from a leftover ham slice. I briefly sauteed the ham, onions and mushrooms in butter prior to adding them to the egg mixture.

I used only 3 eggs and cooked my pancakes one at a time in a small pan, as I was only making enough for myself. I chose NOT to make the gravy, as I like my Egg Foo Young plain. 

I then served the Egg Foo Young pancakes on rice. The  image below is of my result. YUM!

PS: In addition to learning the proper way to COOK this dish as pancakes, I think the other secret to getting homemade Egg Foo Young to taste more like a Chinese restaurant version is using sesame oil to cook it in.

I recently purchased 3 Rubbermaid Food Storage Containers. I needed an airtight container for rolls & crescents so they would last longer. I selected the 9.6 cup size which was perfect for my needs. As it turns out, there are many more uses for these containers than just bread storage. 

During the recent holidays, I discovered these containers will hold liquid or dry food.  Since they are leak-proof due to their tight seal, they will even store leftover homemade soup.  Plus, they are microwavable when it is time to reheat the leftovers.  Therefore, there is no need to transfer leftovers from their storage container to heat.  Less clean-up is always appreciated.

I love my faithful Tupperware, but sadly, if I can't see it, I am likely to forget it.  So much fruit is discarded simply because it is forgotten once it has been stored away.  Because these containers are transparent, it is easy to see at a glance what is stored in which container.

Since we don't have to worry about the spilling, transporting food from one location to another is easy.  Of course, if you are dropping off food, you might not get these nifty containers back. The recipient will be tempted to forget where they came from originally.

Now that I have had experience with the larger containers, I will definitely be buying the smaller single serve size as well.  That will make lunchtime so much easier! 

To use in the microwave, simply lift the locks for venting.  

The only possible negative that I have found with these containers is that they seal so tightly.  It takes more effort to remove the lids than it does with a snap lid.  But, after a few uses, I knew what to expect.  Now I grip the container with one hand and remove the lid with my other hand.  In my opinion, that is a simple inconvenience to enjoy the airtight storage.

Oh, and did I mention, the price is right!  No wonder they named these containers "Brilliance".

Celebrate Your Unique Talent Day – Holiday Review

Definition of UNIQUE: being the only one of its kind; unlike anything else. 

While this definition of Unique does not totally agree with the following, I thought it would be fun to celebrate the 'individual', if  not totally unique, talents of my fellow Contributors here on Review This Reviews. And while some of us have similar talents, our special styles make us each 'unique' in our field.

November 24th is known as “Celebrate Your Unique Talent Day”. Therefore, we are going to point out some of the 'unique' and special talents of the RTR Contributors to show what they are best at. Some of the fine writers here have more than one special talent, as you shall see.


Yarn Talents

Several of those in our group are good at yarn crafts.


  • Dawn Rae's specialty is crochet. She features handmade hats and neck warmers and warm slippers in her Etsy Shop DawnRaeCrochet.


Her shop also carries a line of what she calls “Jenny Hats” which came to be after making a custom hat for a friend (Jenny). These soft, slightly slouchy, chemo hats are made from a cotton blend yarn.


  • Wednesday Elf also crochets. Her Etsy shop – Coastal Crochet Crafts – specializes in plush animals for children, plus a few assorted other items. 



Baking/Cooking Talent

  • For very unique cakes and cupcakes in particular, you will find some fascinating recipes and how-to instructions from Sylvestermouse on Cooking for the Holidays.   She also includes other recipes from appetizers to main dishes to desserts, but I LOVE her special cupcakes and cake creations.
