In our house, when the weather cools and football season starts, it's time to turn on the oven and make homemade pizza.
We made several homemade pizzas of different varieties last week. Fran wanted to make one with garden tomatoes and ricotta cheese.
It was so easy to make, using homemade pizza dough and fresh ingredients from the garden.
The measurements are approximate, as we really didn't measure. You can use less or more, whatever you like best.
Ingredients:
- Homemade pizza dough (My recipe)
- 3/4 cup of whole milk ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1 large tomato, sliced thin
- 1 clove garlic, minced
- Fresh basil leaves
- Italian seasoning
Instructions:
- Roll out the dough in a greased pizza pan.
- Spread a layer of ricotta cheese, about 1/4-inch thick. Add the minced garlic over top.
- Spread some shredded mozzarella over that.
- Place sliced tomatoes over the pizza.
- Garnish with fresh basil leaves.
- Sprinkle some Italian Seasoning, and add more mozzarella.
- Bake the pizza at 450 degrees for 15 minutes. The cheese will bubble, and the crust will be brown.

Clever of Fran to want to create this fresh vegetable pizza. Tomatoes are a favorite of mine; particularly fresh from the garden tomatoes. My sister-in-law is a vegetarian who will really enjoy having this recipe. Thank Fran for me, Sam, and thanks for sharing your homemade tomato and ricotta pizza recipe.
